Uova al cioccolato bianco con sorpresa al limone / White chocolate eggs with lemon surprise


Un'ultima idea prima di Pasqua: una ricetta facile e davvero carina...con sorpresa al profumo di limone!

One last idea for Easter: an easy and really lovely recipe...with a lemon scented surprise


Ingredienti
10/12 gusci d'uovo
100 gr farina 00
100 gr zucchero
100 gr burro
2 uova medie
1 baccello di vaniglia
scorza di 1 limone
1 pizzico di lievito per dolci

Prima di tutto fate un buco in ogni guscio d'uovo (in alto), svuotateli (tenete da parte due uova intere per la ricetta, le rimanenti potete usarle per altre preparazioni), lavateli bene con acqua e fateli asciugare.
Sbattete il burro (deve essere morbido) con le fruste elettriche e, sempre sbattendo, aggiungete poco alla volta lo zucchero, la scorza di limone, un uovo alla volta e i semi di vaniglia. Aggiungete infine la farina setacciata e un pizzico di lievito per dolci e amalgamate bene. Riempite i gusci (per 3/4 perché il composto gonfierà in cottura)aiutandovi con un cucchiaino (se avanza potete usarlo per fare dei cupcakes!). Arricciate la carta forno e mettetela in una teglia o negli stampi da muffins creando dei nidi dentro i quali vanno disposte le uova con il foro verso l'alto. Infornate a 180°C (preriscaldato statico sopra e sotto) per 20/25 minuti circa. Sfornate (se durante la cottura dovesse uscire del composto tagliatelo con un coltello dandogli una forma ovale), lasciate raffreddare e togliete delicatamente il guscio.
Le uova al limone sono carine già così (magari da servire con un po' di gelato) ma per creare l'effetto sorpresa le abbiamo ricoperte di cioccolato bianco.



Ingredients
10/12 empty egg shells
100 gr flour 00
100 gr sugar
100 gr butter
2 medium eggs
1 vanilla pod (seeds)
zest of 1 lemon
a pinch of baking powder

White chocolate

First of all make a hole on the top of each egg shells, empty them (set aside two Whole eggs for the recipe, you can use the left ones for other preparations), rins well with water and let them dry.
Beat the butter (must be soft) with the electric whisks and add little at a time (continuing beating) the sugar, lemon zest, one egg at a time and the vanilla seeds. Add finally the sifted flour and a pinch of baking powder and mix well. Pour the mixture into the egg shells using a teaspoon (fill them for 3/4 because the mixture will inflate). Curle the oven paper and place it in a baking pan or in muffins molds making nest and put the egg shell in it with the hole facing up (if you have some mixture left you can make cupcakes!). Bake at 180°C (preheated static top and bottom oven) for about 20/25 minutes. Remove the eggs and let them cool (if there is some mixture out of the shells cut it with a knife giving the oval shape).
The lemon eggs cake are already pretty well (you can serve them with ice-cream) but we have covered them with White chocolate to create the surprise effect.


Per la copertura (circa 300 gr di cioccolato per 10/12 uova)
Sciogliere il cioccolato (quello che più preferite) a bagno-maria con un pizzico di sale. Infilare degli stecchi di legno in ogni uovo e intingerli nel cioccolato fuso. Lasciateli raffreddare in un bicchiere (ben distanziati)e decorateli a piacere: con codette di zucchero, frutta secca, fiori edibili...noi abbiamo scelto pinoli tostati e semi di papavero (adoriamo i semi di papavero con il cioccolato bianco!). Conservateli in un luogo fresco e asciutto fino al momento di servire...magari con un po' di gelato o panna montata! Sono un'idea carina anche per un pic-nic (in borsa frigor!).

For the topping (about 300 gr White chocolate for 10/12 eggs)
Melt the chocolate (the one you prefer) in a bain-marie with a pinch of salt. Insert a wooden stick in each egg and dip them into the chocolate. Let them dry in glass (well spaced) and decorate as you like: with sugar sprinkles, nuts, edibile flowers...we chose toasted pinuts and poppy seeds (we love poppy seeds with White chocolate!). Store them in a dry and cool place until serve...maybe with ice-cream or whipped cream: They are a really lovely idea also for a pic-nic (keep them in a frigor bag!). Uova di Pasqua / Easter eggs


Pasqua è ormai alle porte e se non avete ancora pensato alle uova dipinte ecco il nostro consiglio veloce: bollite le uova in acqua con tè nero (una bustina per uovo) e (se lo avete) una manciata di sale nero. Lasciatele bollire per qualche minuto e poi riposare a fuoco spento nell'acqua di cottura per qualche ora (anche tutta notte). Avrete delle uova color cioccolato davvero carine se usate per esempio su una tavola allestita con porcellana bianca. Disponetele in un cestino, o nei portauova e aggiungete qualche tocco con fiori, nastri o scrivendo (con un pennarello bianco) i nomi dei vostri ospiti, saranno perfetti come segnaposto.
L'idea in più, prima di cuocerli tagliate la calotta superiore, svuotateli e lavateli, potrete usarli per presentare il vostro dessert...enjoy!


Easter is almost upon us and if you have not yet thought about the Painted eggs here is our quick tip: boil them in water with black tea (a bag for egg) and (if you have it) a handful of black salt. Let them boil for few minutes and rest (out of fire) them in their cooking water for a few hours (even all night). You'll get eggs with chocolate color really nice if you use for example on a table set with White china! You can arrange them in a basket, or in the eggholders and give few more touches with flowers, ribbons or even writing with a pen blank your guests name, they will be perfect as place holders.
One more idea: before cooking them, cut the top cap, empty and wash them, you can use the shell to serve your dessert...enjoy!

Gelato alla vaniglia
Il nostro preferito...no, è meglio dire uno dei nostri preferiti!
Molti lo preparano con il tuorlo, noi vi suggeriamo una ricetta veloce e golosa con gli albumi da fare anche senza gelatiera.
Una raccomandazione: usate il baccello di vaniglia, ha un sapore completamente diverso dagli aromi in commercio!!!

Vanilla ice-cream
Our favourite...no, it's better to say one of our favourites!
Many prepared it with egg yolks, we suggest a fast and tasty recipe with egg whites to do even without ice-crem maker.
One recommendation: use the vanilla bean, has a completely different flavour than the aromatizations in the market!!!


Ingredienti
250 ml panna (ben fredda)
150 ml latte
120 gr zucchero
2 albumi
1 baccello di vaniglia (semi)

Con la gelatiera
Montare gli albumi a neve, a parte montare leggermente (non deve essere troppo densa) la panna, con lo zucchero e i semi di vaniglia (incidete il baccello, apritelo a libro e con il coltello prelevate i semi). Mescolate tutti gli ingredienti delicatamente con una spatola (dal basso verso l'alto) aggiungendo il latte poco alla volta. Versate il composto nella gelatiera (precedentemente refrigerata) e fatela lavorare per circa 25 minuti o finche ben cremoso. Servire subito o conservare in freezer.

Senza gelatiera
I passaggi sono gli stessi, l'unica differenza è che la panna deve essere ben montata. Mettere il composto nel freezer e mescolarlo bene con una frusta ogni 20 minuti circa per almeno 3 volte. Tiratelo fuori dal freezer qualche minuto prima di servire.


Il gelato alla vaniglia è buonissimo gustato da solo, con cialde o con un po' di caffè, servito con una fetta di torta, una macedonia e molto altro...!
Un'idea in più: fate dei biscotti (o compratene di buoni), farciteli di gelato (magari spalmando un po' di salsa al caramello salato fra il biscotto e il gelato) e avrete dei golosissimi biscotti-gelato pronti per merenda(conservateli in freezer nei sacchetti per surgelati). Enjoy!

Ricetta salsa al caramello salato


Ingredients
250 ml cream (very cold)
150 ml milk
120 gr sugar
2 egg whites
1 vanilla pod (seeds)

With the ice-cream maker
Beat the egg whites until stiff, aside whip lightly the cream (it has not be so thick) with the sugar and vanilla seeds (engrave the pod, open like a book and drawn the seeds with the knife). Mix gently stirring whit a spatula (from the bottom to the top) all the ingredients adding milk little at a time. Put the mixture into the ice-cream maker (previously chilled) and make it work for about 25 minutes or until well creamy. Serve immediately or store in the freezer.

Without ice-cream maker
The steps are the same, the only difference is that the cream must be whipped vey well. Put the mixture in the freezer and stir well with a whisk every 20 minutes at least 3 times. Take it out of the freezer a few minutes before serving.


The vanilla ice-cream is so good enjoyed alone, with waffles, a little bit of coffee, served with a slice of cake, a fruit salad and much more...!!!
One more idea: make cookies (or buy good ones), fill them with ice-cream (maybe smeare a bit of salted caramel sauce between the cookies and ice-cream) and you will have delicious ice-cream-cookies ready for snack (keep them in in the freezer in freezer bags). Enjoy!

Gelato allo zabaione con granella di Amaretto / Zabaione ice-cream with Amaretto crumbs



Gelato allo zabaione con granella di Amaretto
Beh...il gelato non ha bisogno di descrizioni...per noi una passione perfetta in ogni stagione!

Zabaione ice-cream with Amaretto crumbs
Well...the ice-cream needs no descriptions...for us a real passion perfect in every season!


Ingredienti
150 ml panna
200 ml latte
130 gr zucchero
3 tuorli
1 cucchiaio di Marsala
qualche Amaretto secco (sbriciolati)

Portare a bollore il latte con la panna, nel frattempo montare con le fruste elettriche i tuorli e lo zucchero, quando il composto è denso aggiungere un cucchiaio di Marsala e mescolare bene. Quando panna e latte raggiungono il bollore toglierli dal fuoco e aggiungerli poco alla volta al composto di tuorli, zucchero e Marsala e mescolare bene con una frusta. Rimettere sul fuoco continuando a mescolare. Togliere dal fuoco appena il composto comincia a bollire. Lasciare raffreddare. Versare il composto nella gelatiera e farlo lavorare per circa 30 minuti (o finche ben cremoso). Servire subito o conservare in freezer. Vi consigliamo di servirlo con granella di Amaretto secco.
Continuate a seguirci perché posteremo tante ricette di gusti diversi e golosi...da fare anche senza gelatiera! Enjoy!


Ingredients
150 ml cream
200 ml milk
130 gr sugar

1 tablespoon Marsala
some Dry Amaretto biscuits (crumbled)

Boil milk and cream, meanwhile whip the egg yolks and sugar with electric whisks, when the mixture is thick add a tablespoon of Marsala (a fortified wine produced in Sicily-Italy) and stir well. When milk and cream boils remove from the heat and add to the yolks, sugar and Marsala mix stirring with a whisk. Put on low heat again and remove as soon as it begins to boil and let it cool. Put the mixture in the ice-cream maker and let it work for about 30 minutes or until well creamy. Serve immediately or store it in the freezer. We suggest you to serve with dry Amaretto crumbs ( Italian typical biscuit made with sweet and bitter almonds).

éclairs al cioccolato bianco / white chocolate èclairs


Oggi ricetta golosissima! Gli èclairs sono dolci francesi fatti con la pasta choux. Non amiamo molto le regole, ma questa volta abbiamo fatto come la cucina francese vuole, farcitura e copertura con lo stesso aroma: cioccolato bianco! La ricetta richiede un po' di pazienza e attenzione ai passaggi ma vi assicuriamo grandi soddisfazioni!

Today luscious recipe! The èclairs are French pastries made with choux pastry. We don't love so much follow rules but this time we did as the French cuisine wants, filling and cover with the same arome: White chocolate! The recipe requires a little patience and attention to steps but we assure you great satisfactions!

Per la pasta choux / For the choux pastry


Ingredienti
200 ml acqua
130 gr farina 00
100 gr burro
4 uova medie
2 cucchiaini zucchero
1 pizzico di sale

Mettere in una pentola burro, zucchero, acqua e sale e portare a bollore mescolando con una frusta. Togliere dal fuoco e aggiungere la farina setacciata poco alla volta, rimettere sul fuoco e continuare a cuocere mescolando con un cucchiaio di legno. Togliere dal fuoco quando il composto è compatto e si stacca completamente dalle pareti della padella. Lasciare raffreddare bene su di un piatto. Quando il composto è ben raffreddato aggiungere un uovo alla volta, mescolando con un cucchiaio di legno (ogni uovo deve essere ben incorporato prima di aggiungere il successivo). Mettere il composto in un sac-à-poche con bocchetta liscia e formare (su placca con carta forno) dei bastoncini ben distanziati (lunghi circa 10 cm e larghi 3 cm), appiattite l'impasto con un cucchiaino bagnato in acqua se si formano dei "riccioli". Cuocere in forno preriscaldato a 170°C (ventilato) per circa 30 minuti o finche ben dorati (ogni forno lavora in modo diverso, perciò per la prima volta vi consigliamo di fare qualche prova prima di cuocere tutti gli èclairs). Sfornate e lasciateli raffreddare a temperatura ambiente.


Ingredients
200 ml water
130 gr flour 00
100 gr butter
4 medium eggs
2 teaspoons sugar
a pinch of salt

Put in a pan butter, sugar, water and salt and bring to a boil stirring with a whisk. Remove from heat and add the sifted flour little at a time. Put on the heat again and continue cooking stirring with a wooden spoon. Remove from the heat when the mixture is compact and completely detach from the pan. Allow to cool on a plate, when the mixture is well chilled add an egg at a time stirring with a wooden spoon ( each egg has to be well mixed before adding the next). Put the dough in a sac-à-poche with smooth nezzle and make well distanciated sticks (about 10 cm long and 3 cm wide) on a baking pan (with parchment paper),flatten the dough with a teaspoon dipped in water if there are "curls". Bake in preheated convention oven at 170°C for about 30 minutes or until Golden brown (every oven works differently, so for the first time we advise you to do some tests before cooking all èclairs). Remove from the oven and let them cool.


Per la crema pasticcera al cioccolato bianco / For the White chocolate custard


Ingredienti
250 ml latte
2 tuorli
200 gr cioccolato bianco
2 cucchiai farina 00
40 gr zucchero
100 ml panna da montare

Tagliare il cioccolato in scaglie, scaldare il latte a fuoco basso finche diventa tiepido. Sbattere con le fruste elettriche i tuorli con lo zucchero fino ad ottenere un composto schiumoso, aggiungere poco alla volta la farina setacciata e il latte a filo (fare attenzione che non ci siano grumi). Cuocere a fuoco basso mescolando continuamente con un cucchiaio di legno. Quando la crema è densa aggiungere il cioccolato in scaglie e mescolare finche è ben incorporato. Togliere dal fuoco e lasciare raffreddare in un contenitore di ceramica. Quando è ben raffreddato riporre in frigorifero. Prima di farcire gli èclairs montare la panna e amalgamarla bene e delicatamente alla crema pasticcera, metterla in un sac-à-poche con una bocchetta lunga e liscia, fare due buchi alle estremità del dolce e riempire di crema (se non avete il necessario tagliateli a "panino" e farcite, saranno buonissimi lo stesso!)

2 yolks
200 gr White chocolate
2 tablespoons flour 00
40 gr sugar
100 ml whipping cream

Cut the chocolate in chips, heat the milk over low heat until it becomes warm. Beat the egg yolks and sugar with electric whisk until frothy, slowly add the sifted flour and milk little by little (make sure there are no lumps). Cook over low heat stirring constantly with a wooden spoon. When the cream is thick add the chocolate chips and mix. When the chocolate is well blended remove from heat and let cool in a ceramic bowl. When it's cooled store in refrigerator. Before stuffing the èclairs whip the cream and mix well and gently with the custard. Put the cream in a sac-à-poche with long thin nozzle, make two holes at the ends of the sweets and fill them (if you don't have the need, cut like "sandwich" and fill them with the custard, they will be gorgeus anyway!)


Per la copertura / For the topping

150 gr cioccolato bianco
semi di papavero

L'unica "trasgressione" che ci siamo concessi è per la copertura che dovrebbe essere di zucchero fondente, noi abbiamo sciolto il cioccolato a bagno-maria, ricoperto la superficie degli èclairs e decorato con semi di papavero. Conservateli in frigorifero fino al momento di servire (il giorno dopo sono ancora più buoni!)...fateli del gusto che preferite...enjoy et vive la France!

The only "transgression" we grant is with the coverage that should be "fondent sugar", we melt the chocolate in a baine-marie, covered the èclairs surface and decorated with poppy seeds. Keep them in the refrigerator until ready to serve (the day after are even good!), make them the flavour you prefer...enjoy et vive la France!




Potete farli in tanti modi e magari servirli con frutta fresca.
You can do them in different ways and maybe serve with fresh fruit.

Pancakes


I pancakes proprio non potevano mancare nelle nostre ricette...quanto ci piaceva quando nei vecchi serials americani ne servivano montagne per colazione! Ovviamente si possono fare in tanti modi, e ci piace provarne sempre di nuovi, oggi vi suggeriamo questa ricetta davvero semplice e golosa...provatela!


The pancakes just have to be in our recipes...what we liked when in old American serials used to serve "mountains" of them for breakfast! Obviously you can do in many ways, and we Always like to try new ones, now we suggest this really simple and delicious recipe...try it!


Ingredienti (per circa 8/10 pancakes)
1/2 tazza di panna
1/2 tazza di latte
1 tazza di farina autolievitante con 3 cucchiai di zucchero a velo
2 uova medie

Ingredients (for about 8/10 pancakes)
1/2 cup of cream
1/2 cup of milk
1 cup of self raising flour with 3 tablespoons icing sugar
2 medium eggs


Setacciare la farina e lo zucchero a velo, aggiungervi poco alla volta il latte e la panna mescolando con una frusta per evitare che si formino grumi. Aggiungere le uova e mescolare sempre con la frusta amalgamando bene. Scaldare una padella antiaderente e versarvi un mestolo di composto, cuocere a fuoco basso e girare il pancake quando compaiono delle bolle in superficie. Far cuocere qualche minuto anche sull'altro lato e disporre su un piatto. Preparare tutti i pancakes e guarnire a piacere. Noi abbiamo scelto yogurt al naturale, miele di acacia, fragole e una spruzzata di zucchero a velo, ma le combinazioni sono tantissime!!! Vi consigliamo di provarli anche salati (vi suggeriremo qualche ricetta!). Sono perfetti per una colazione abbondante, un brunch o quando preferite voi! Enjoy!


Sift the flour with the icing sugar, add the milk and cream in it little at a time stirring with a whisk to prevent lumps. Add the eggs and stir well Always with the whisk. Heat a non-stick pan and pour a ladle of the mixture in it, cook over low heat and turn your pancake when begins to bubble on the surface. Cook for a few minutes and place in a plate. Prepare all the pancakes and garnish to taste. We chose natural yogurt, honey, strawberries and a sprinkle of icing sugar but there are so many combinations! We suggest you to try them salty too (we will post some recipes!). They are perfect for a hearty breakfast, a brunch or whenever you like! Enjoy!
