Cremoso ai piselli con code di gambero piccanti al profumo di lime/Powered by Exquisa

Eccoci con un po' di Primavera nel piatto.
Quando arriva la Primavera con le Magnolie in fiore e poi i ciliegi, le rose e la voglia di finestre aperte su cieli azzurri e sole caldo, con gli orti che cominciano a germogliare e l'aria più leggera. La Primavera fatta di tempo bello e tempo brutto, di sole e di pioggia, di vento e profumi che raccontano di ricordi che ritornano a bussare ai nostri pensieri, di luci calde e nuovi sapori.  Oggi vi raccontiamo questa ricetta che ci piace molto perché è facile da realizzare, fresca e anche healthy: un cremoso ai piselli, con code di gambero piccanti cotte al sale, profumo di erbe aromatiche e lime, germogli e fleur de sel alla vaniglia.  Ma prima di farlo vi vogliamo svelare il tocco "segreto" che abbiamo aggiunto per rendere speciale il piatto, qualcosa che non manca mai nel nostro frigorifero, e che fa parte della Linea Biologica Exquisa (formaggio fresco biologico e fiocchi di latte biologici) eletta prodotto dell'anno 2017 nella categoria formaggi freschi spalmabili, una linea che propone due prodotti di alta qualità premiati per le caratteristiche di innovazione, perché biologici certificati, senza conservanti e senza glutine, buoni davvero, realizzati con latte freschissimo e decisamente molto più cremosi, perfetti per realizzare mille ricette (dal dolce al salato, dalla colazione al dessert) e per aggiungere quella nota in più che fa la differenza.

Spring, made of good wather and bad weather, of sun and rain , of wind and scents that come back to knock at our thoughts, of warm lights and new flavors.
Today we tell you about this recipe that we love 'cause it's simple to prepare, fresh and even healthy: a peas cream with spicy prawn tails lime scented, sprouts, with aromatic herbs and vanilla fleur de sel. But before doing it we want to reveal you the "secret" touch we add to make our recipe so special, something Always in our fridge and that is part of the Biological Line by Exquisa (fresh biological cream cheese and biological milk flakes) elected product of the year 2017 in the category fresh cream cheese, a line that offers two high quality award winning products for their innovation characteristics, 'cause biological certified,  preservatives and gluten free, made with really fresh milk, absolutely more creamy, perfect to make thousands recipes (sweet and salty,) and to give that plus note that makes the difference.

Ingredienti (per 4 antipasti o due primi)

per il brodo
1l acqua
sale q.b.
1 cipolla media
1 carota
2 gambe di sedano
1 pezzo di zenzero fresco
foglie di basilico

per il cremoso
450g piselli novelli (freschi o surgelati)
2 cucchiai di formaggio fresco biologico Exquisa
sale q.b.
pepe nero macinato  q.b.
2 cucchiaini di olio di cocco

per le code di gambero
8 code di gambero (o più se preferite)
2 lime
3 peperoncini secchi
fleur de sel alla vaniglia
sale grosso per cottura q.b.

per decorare
germogli
erbe aromatiche
formaggio fresco biologico o fiocchi di latte Exquisa
lime/limone

La ricetta prevede alcuni passaggi ma molto semplici da realizzare.



Preparare il brodo vegetale facendo bollire sedano, carota, cipolla, zenzero (sbucciato) e qualche foglia di basilico in acqua salata (abbiamo usato il sale di Pirano). Una volta pronto saltare i piselli in padella con poco olio di cocco (ma potete sostituirlo con l'olio evo), aggiungere il brodo filtrato e portare a bollore. Raffreddare i piselli in acqua e ghiaccio per sbianchirli (ossia per mantenere il loro colore verde acceso - tenere da parte qualche pisello croccante per la decorazione), versarli di nuovo nel brodo con un pizzico di sale e di pepe nero macinato fresco e bollire a fuoco medio finche teneri. Trasferire i piselli nel bicchiere del frullatore a immersione, aggiungere due cucchiai circa di formaggio fresco cremoso biologico Exquisa e poco brodo, frullare fino ad ottenere una crema liscia e vellutata  che mantiene intatto il sapore delicato dei piselli(se necessario aggiungere più brodo e aggiustare di sale e pepe).



Mentre i piselli stanno bollendo dedicatevi alle code di gambero. Preparare uno strato di sale grosso alto circa 1cm (in padella antiaderente), spruzzare la superficie con acqua e ripetere il procedimento altre due volte fino ad ottenere una base compatta e umida, cuocere a fuoco medio basso finche si sarà solidificato, disporre fette sottili di lime e del peperoncino secco tagliato a pezzi sul sale e cuocere le code di gambero (precedentemente private del carapace e dell'intestino - facendo un taglio lungo la schiena) per due minuti su entrambi i lati con coperchio per far assorbire tutti i profumi e sapori e condire con fleur de sel alla vaniglia (se lo avete) prima di servire. E' molto più semplice a farsi che a dirsi e con questo tipo di cottura otterrete dei gamberi morbidi, succosi e molto profumati. Nota: I vegetariani potrebbero sosituire le code di gambero per esempio con l'halloumi grigliato.


Ancora un brevissimo passaggio prima di servire: emulsionare il formaggio cremoso biologico con qualche goccia di limone fino ad ottenere una crema leggera, versare il cremoso di piselli caldo nel piatto (o tiepido se preferite, buono anche freddo in vista dell'Estate), aggiungere la crema di formaggio biologico profumata al limone (buonissimo anche con i fiocchi di latte), le code di gambero, i piselli croccanti tenuti da parte, i germogli (abbiamo usato quelli di ravanello prodotti da noi, leggermente piccanti, ma potete sostituirli con quelli che trovate in commercio), erbe aromatiche (abbiamo usato erba pepe, santoreggia e menta del Marocco ma potete sostituirle con il basilico se preferite), infine un pizzico di fleur de sel alla vaniglia, pepe nero macinato fresco se piace e qualche fetta di lime da spremere appena prima di affondare il cucchiaio (potete anche aggiungere semi misti per un tocco crunchy).



L'idea in più: prendete dei noodles di soia con una pinza e passateli sopra il calore generato dal fuoco del fornello (mantenete una certa distanza e fate molta attenzione a non scottarvi e a non bruciarvi le maniche!), i noodles si gonfieranno leggermente ( preparateli appena prima di servire ricordando di rimuovere le parti non soffiate come in foto), salateli e serviteli a parte per aggiungere una nota croccante.



E' un piatto leggero ma pieno di sapori da servire magari in terrazza con l'arrivo delle giornate più calde, perfetto per un antipasto o un primo piatto (con dosi più abbondanti) da rifare in mille modi secondo i vostri gusti, le vostre ispirazioni e i prodotti di stagione.

E ancora, Exquisa bio da spalmare su un avocado toasts (con olio, lime, fleur de sel alla vaniglia, pepe e aromatiche), semplice e leggero...e davvero buono (oppure emulsionate questi ingredienti con il mixer ad immersione per ottenere una crema golosa, perfetta per l'aperitivo). Ingredients (for 4 starters or 2 main courses)

for the broth
1l water
salt as enough
1 medium onion
1 carrot
2 legs og celery
1 piece of fresh ginger
basil Leaves

for the cream peas
450g of peas (fresh or frozen)
2 tablespoons of fresh biological cream cheese by Exquisa
2 teaspoons of coconut oil
salt as enough
ground black pepper as enough

for the prawn tails
8 prawn tails (or more if you prefer)
2 lime
3 dried chilli (the little ones)
vanilla fleur de sel
coarse salt for the cooking as enough

for the decorations
shoots
herbs
fresh biological cream cheese or biological milk flakes
lime/lemon


First prepare the vegetable broth with celery, onion, carrot, fresh ginger (peeled), a few Leaves of basil and salted water (we used the Piran salt). When broth is ready stir-fry the peas in a pan with a bit of coconut oil (or evo oil if you prefer), add the strained broth and bring to a boil, cool the peas in  cold water and ice (to keep the bright green color - keep some crunchy peas aside for the decoration) pour the peas into the broth again with a pinch of salt and of fresh ground black pepper and boil over medium heat until tender. Put the peas in the blender, add about 2 tablespoons of biological cream cheese and a bit of broth and blend until you get a smooth and velvety cream that keeps intact the delicate peas flavor (if necessary add more broth and season with salt and pepper to taste).
While the peas are boiling you can concentrate on the prawn tails. Make a layer on a nonstick pan of coarse salt (about 1cm high) wet with water, repeat two more times until you get a  wet salt base (about 3cm high) and cook over medium-low heat until it will be compact. Place some thin slices of lime and dried chilli (cut into pieces) and cook the prawn tails over them (previously privated of their shells and intenstines - by making a cut along the back of the prawn) for two minutes on both sides covered with a lid to absorb all flavors and scents and season with vanilla fleur de sel (if you have it) just before serving.
It's easier to do than to say and with this cooking you'll get scented, soft and juicy prawns. Note: vegerians should use grilled halloumi instead of the prawn tails.
One more short passage before serving: emulsionate the fresh biological cream cheese with a frew drops of lemon to get a soft cream. Pour the hot cream peas into the dish (warm if you prefer, or even cold thinking about Summer) add the cream made with the biological cream cheese scented with lemon (very good even with the biological milk flakes), the prawn tails, the crispy peas kept aside, the shoots (we add the radish one produced by us, slightly spicy, but you can use the one you find on the market if your prefer), herbs (we choose moroccan mint, savory and herbpepper but basil will go to replace them), finally a pinch of vanilla fleur de sel, freshly ground black pepper to taste, and some slices of lime to squeeze in just before sinking the spoon (you can also add mixed seeds to give a crunchy touch).
One more idea: take some soy noodles with a kitchen clump and keep over the heat of the stove (keep a distance of about 20cm and attention, be careful not to burn yourself or your sleeves!) they will swell slightly , add salt and serve aside to give a crunchy touch (do it just before serving and remeber to remove the not swelled part of the noodles - like in photo).
It's a light dish but full of flavors, perfect to be served on a terrace in the upcoming warm sunny days as a starter or main course, to be redone in a thousands ways according to your tastes, your inspirations and to all the products of the new Season.


And even Exquisa bio  on an avocado toast (with lime, evo oil,  vanilla fleur de sel and pepper and herbs), easy, light and so good (or mix all these ingredients to obtain a gorgues avocado cream, perfect for an aperitive). Style Post It / Week 17/23 Law of attraction, the Universe and some thoughts

Si dice che ci sia una legge d'attrazione, una legge di natura, secondo la quale niente può entrare nel nostro vissuto se non lo attiriamo pensandolo. Funziona così: chiedo, credo, ricevo. Poi c'è qualcosa più grande di noi che porta i pensieri all'universo il quale agisce dandoci ciò che desideriamo. "Once you make a decision, the universe conspires to make it happen" diceva Ralph Waldo Emerson. Ci sono alcune regole da seguire perché ciò avvenga come: avere un'alta dose di positività nel corpo, nella mente e in qualsiasi meandro nascosto del nostro io pensante. "Good vibes only" Ora, noi abbiamo inviato diverse richieste all'Universo, qualcuna dev'essersi persa fra lo smog cittadino e il buco dell'Ozono, qualcuna forse deviata da simpatiche meteore che quel giorno e a quell'ora viaggiavano sulla stessa lunghezza d'onda dei nostri pensieri, qualcosa è anche arrivato, chissà se grazie all'Universo, al nostro impegno o alla fortuna... Comunque con questa legge si può attrarre qualsiasi cosa, anche quelle più materiali, e...concedeteci di tralasciare i pensieri più profondi (il mondo ce ne offre già tanti sui quali riflettere)e di giocare un po'...con un piccolo, piccolo desiderio: le Superga con suola in corda da aggiungere all'ormai endless wishlist (edizione Primavera/Estate) bellissime, uno di quei pezzi che più ci pensi più ti sembra di poterle abbinare ad ogni cosa, anche con quei vestiti chiusi nell'armadio da anni e mai indossati (il potere dei desideri). Le chiedo, ci credo e cercando di spostare il baricentro a tutta dritta lancio il mio pensiero nel vento (che magari va anche più veloce) e il mio partner in crimes (nonché marito, migliore amico e co-blogger, se ci seguite ormai lo sapete) gli da anche una spintarella (che se ci pensa l'Universo...).
Così oggi vi proponiamo un look ispirato alla Collezione Primavera/Estate 2017 di Dior, disegnata da Maria Grazia Chiuri (primissima stilista donna della Maison) che adoriamo, per l'appunto "j'adior".


Un lavoro che racconta di una nuova femminilità, rivista e corretta, una fiaba moderna fatta di abiti meravigliosi con magici ricami da indossare con giubbotti biker, gonne lunghe di stelle e cuori e lune da indossare con t-shirt stampate "we should all be feminists". Una collezione che racconta di leggerezza e forza, di romantica sfrontatezza. Una donna nuova, diversa ma molto Dior.
Ed eccole, le Superga con suola in corda abbinate a una splendida layer skirt lunga di Valentino (che con un paio di sandali diventa un pezzo elegantissimo da sfruttare anche per inviti speciali - e cerimonie di stagione - uno di quei capi che ti restano nell'armadio per sempre), con la printed t-shirt in edizione limitata di Dior e una mini shoulder bag di Saint Laurent (niente). Un look che ci piace tantissimo, perfetto per accompagnarci verso l'Estate con un mood un po' Gipsy/Chic un po' Folk/Rock...(e anche un po' Coachella/UpperEastSide). 


Ora, facendo un breve calcolo matematico, per questo look ci vorrebbero più di 2800.00 euro (che se ci pensasse l'Universo...) ma se preferite prezzi più "nice" ecco un look completo per poco più di 180.00 euro (spedizioni dall'Universo non comprese)...perciò, stesse scarpe con gonna lunga ricamata (i ricami ci piacciono tantissimo e saranno un must di stagione su abiti, top, persino sul denim...) di Zara, una mini bag di Mango e una t-shirt bianca di H&M (di cui fare scorta, costa solo 7,99 euro!) da customizzare con colori per stoffa o ago e filo..."we should all be creatives" (o da personalizzare e stampare su spreadshirt.com).



E a proposito di stelle, lune...e borse che fanno brillare gli occhi...



Where to go: dal 22 al 25 Aprile "Next Vintage" a Belgioioso (Pavia) una ricca esposizione di abiti e accessori vintage (ma non solo) situata in un bellissimo castello dove trovare pezzi must have come i foulard di Hermes, occhiali Ray Ban o trench Burberry.


What to buy: i classici di Chanel, magari una 2.55 o un Kimono (si, vorrei un Kimono da indossare con i jeans used).



Beauty: talassoscrub per rigenerare la pelle prima dell'esposizione al sole.

Recipe of the week: non food ma beauty, un modo semplicissimo di preparare lo scrub homemade. Per lo scrub corpo mescolare due parti di latte corpo con una parte di miele e aggiungere sale grosso (quello di Pirano è perfetto), massaggiare delicatamente, rimuovere con acqua e massaggiare le parti interessate con un olio corpo (buonissimo l'olio secco corpo e capelli Nuxe). Per lo scrub viso mescolare due parti di struccante in crema a una parte di miele, aggiungere lo zucchero semolato e massaggiare delicatamente il viso (struccato), rimuovere con acqua, tamponare la pelle con il tonico e massaggiare con poche gocce di olio di Karitè (rende la pelle luminosissima).



Song of the week: un rock forte ma femminile e un po' vintage sul quale ballare (perché con un paio di scarpe basse e una gonna lunga non si può non ballare magari sotto un cielo di stelle fra i profumi d'Estate): "I Love Rock "N" Roll" di Joan Jett & The Blackhearts.

Weekend mood: beauty care, music, relax & sun.

Of course to do this there are a few rules to follow like having a high dosage of posity in your body, in your mind and in each hidden mean of our thinking self. "Good vibes only". Well, we have sent several requests to the universe, maybe some must got lost n the city smog or in the ozone hole, or diverted by some nice meteors that that day and hour travelled on the same wavelenghts of our thoughts...something has also come, perhaps thanks to the universe, to our commitment or fortune. Anyway, with this law you can attract anything, even the most material thing , and let us skip the deep thoughts (the world give us enough to think about) and to play just a bit with a little, little desire: the Superga shoes with the rope sole (love them) to add to the now endless wishlist (Spring/Summer edition) one of those pieces that more you think about it more you think they go well with everything even with those dresses in the closet you've never worn. Recipe of the week: not food but beauty, the easiest way to prepare an homemade scrub. For the body: two parts of body milk, one of honey mixed with salt (the Piran salt is perfect for this). Massage gently the skin, clean with water and massage with a dry body oil (the dry oil for body and hair by Nuxe is very good). For face: mix two parts of makeup cream remover with one part honey and sugar. Massage gently the skin, clean with water, tampon with toner and massage the skin with a Karitè oil (it makes your skin shine).
Song of the week: a strong rock but feminine and a bit vintage to dance on (because with flat shoes and a long skirt you have to dance maybe under a starry sky with the Summer scents all around) "I love rock "n" roll" by Joan Jett and The Blackhearts.

Metti una pizza a Primavera...


Con questo post abbiamo vinto il FoodBlogAward/Pizza 2017

Alziamo le mani perché sarà un po' scontato (o forse perché siamo Italiani) ma la pizza è uno dei nostri piatti preferiti, una semplice ma geniale invenzione che amiamo e che è amore...perché (almeno per noi) è un insieme di pezzi di vita, di momenti e ricordi...come un viaggio in macchina con le canzoni da cantare stonati, gli occhi persi nel mare blu profondo, le risate di quando le cose sembravano più giuste e vere, come un bacio inaspettato o i tuoi cani che ti corrono incontro felici, restare svegli fino all'alba o immersi in un bellissimo tramonto, il vento nei capelli e i profumi delle Stagioni che volano via veloci, noi, che ci aspettiamo per raccontarci e stare insieme. Quando si mangia pizza si mangia amore, si mangia gioia, si mangia vita. Sbagliamo pensando che la pizza ci ha visto vivere, fare errori, andare lontano e poi tornare, ci ha visti felici e delusi e giovani e poi cresciuti e che ancora continuerà ad accompagnarci nelle cose semplicemente complicate della vita?.
E oggi vi raccontiamo di profumi di Primavera, di germogli e erbe aromatiche del nostro orto, di olio, di giornate di sole e fiori, del forno caldo che profuma di buono, di mani infarinate e del lievito madre che sa fare magie.

Oggi pizzette con filetto di scorfano alle erbe, crumble di pelle croccante, stracciatella, germogli di spinaci e crescione, caviale di limone e lime, fiori di rosmarino, un pizzico di fleur del sel alla vaniglia e un goccio di olio d'oliva extravergine Pugliese a finire il piatto.

Hands up 'cause it can be a little trivial (or maybe 'cause we are Italian) but pizza is one of our fave dishes, a simple but ingenious invention that we love and that is love...because (almost for us) it's like a set of pieces of life, moments and memories, like a car trip with songs to sing out of tune, like the eyes lost in the deep blue of the sea, the laughter of when things seemed most right and true, like an unespected kiss, or your dogs that run happy towards you, staying awake until dawn or deeped in a beautiful sunset, the wind in the hair and the smell of the Seasons that fast fly away, us, that we wait for each Others to tell and stay together. When you eat pizza you eat love, you eat joy, you eat life. Are we wrong if we say that pizza has seen us living, making mistakes, going far and then coming back, happy and disappointed, Young and then grown up, and that it will be with us in the simply complicated things of life?
And Today we tell you about Spring scents, aromatic herbs and shoots that grow in our garden, about oil, sunny days and flowers and the oven that smells of good, about floured hands and the mother yeasts that can do magic.

Today mini pizzas with redfish fillet with herbs (with crispy skin), stracciatella (certain things can't be absolutely translated!), spinach and watercress shoots, lemon and lime caviar, rosmary flowers, vanilla fleur de sel, and a bit of Pugliese extravergin olive oil to finish the dish.

Premettiamo che la nostra pizza preferita (quella che prepariamo in casa tutte le settimane) è con pomodoro (buono) mozzarella (buona) e tanto basilico ma qualche volta ci piace provare nuove ricette usando i prodotti di stagione, le verdure e le erbe del nostro orto, un (buon) olio evo e un po' di creatività (gli ingredienti di qualità fanno sempre la differenza).

Ingredienti per 4 pizzette
250g farina tipo1
2g lievito madre secco
1 cucchiaino di sale
1 cucchiaino di zucchero
2g criscito (o malto diastasico)
90/100ml acqua

2 filetti di scorfano
1 cucchiaio di olio di cocco vergine
150g stracciatella (o una mozzarella di bufala pugliese)
60g di robiola fresca
foglie di spinaci-germogli di crescione-insalata riccia
sale e pepe
caviale di limone e lime
fleur de sel alla vaniglia
succo di limone
salvia all'ananas-origano fresco-dragoncello-fiori di rosmarino
olio evo Pugliese

Per preparare l'impasto: setacciare la farina e aggiungere gli ingredienti secchi (il lievito madre disidratato, il criscito - o il malto diastasico - il sale e lo zucchero) e mescolare bene per qualche minuto per aerare la farina. Aggiungere acqua calda (non bollente) poco alla volta mescolandola alla farina con l'impastatrice, lasciare lavorare 10 minuti circa o finche l'impasto comincia a incordare. Impastare quindi con i palmi delle mani su un piano da lavoro infarinato fino ad ottenere un panetto liscio, compatto e morbido al tatto. Lasciare lievitare in una terrina capiente (dove possa raddoppiare di volume) coperto con pellicola (non a contatto) per almeno due ore (in forno spento). Quindi lavorare di nuovo l'impasto con delicatezza e brevemente su un piano da lavoro infarinato, ripiegarlo su stesso e lasciare lievitare (come sopra) per almeno 2/3 ore. (Amiamo usare il lievito madre secco perché permette di ottenere un ottimo risultato senza complicazioni e amiamo la farina Tipo1 perché è perfetta per le lunghe lievitazioni e rende l'impasto davvero profumato e fragrante ma potete sostituirla secondo i vostri gusti ed esigenze per esempio con la farina senza glutine o con una multicereali per una pizza ancora più croccante).



Dividere l'impasto in quattro palline uguali e con le mani infarinate premere dal centro verso l'esterno per spostare l'aria verso il bordo conferendo una forma arrotondata. Noi amiamo la pizza sottile con il cornicione gonfio, soffice e pieno di alveolature (quanto amiamo le alveolature?! potremmo dedicare loro un post) con il quale fare scarpetta (quando si mangia la pizza le regole del bon ton non valgono!)...potete ovviamente scegliere lo spessore e la forma che più preferite, la pizza è molto democratica!
Lasciate riposare le pizze per 1 ora almeno e poi siamo pronti per condire e infornare (e gustare ovviamente!).

Spalmare la pizza con un po' di robiola fresca e cremosa (ne abbiamo usata una prodotta nella campagna del nostro territorio) e infornare a 250° preriscaldato con funzione pizza o 250°C con pietra refrattaria (perché la pizza dovrebbe cuocere a 300°C, se avete il forno a legna meglio ancora, ci piacerebbe molto averne uno in giardino) per 8 minuti circa o finche ben cotte e dorate (la cottura dipende molto dal tipo di forno che usate).



Mentre le pizze cuociono in forno dedicatevi alla preparazione degli ingredienti: spennellare (dalla parte della carne del pesce) il filetto di scorfano (che ha un sapore delicato e molto buono) con il succo di limone e le erbe aromatiche (tritate con lama in ceramica per evitare l'ossidazione) tagliarlo in rettangoli regolari, rosolarlo in padella (dalla parte della pelle) con olio di cocco (ha un punto di fumo molto alto che permette di ottenere una pelle croccante evitando di bruciare l'olio) finche la carne del pesce non sarà ben cotta. Salare (e aggiungere pepe nero macinato fresco se vi piace), disporli sulla pizza calda, aggiungere la stracciatella o la mozzarella di bufala se preferite, i germogli di crescione e spinaci, l'insalata riccia, i fiori di rosmarino (se avete il rosmarino fiorito raccoglieteli appena prima di servire così manterranno il loro splendido profumo), il caviale di  lime e limone (o fette di limone e lime da spremere appena prima di addentare), un pizzico di fleur de sel alla vaniglia, un filo di olio evo Pugliese, finire cospargendo la pelle croccante del pesce sbriciolata e un po' di trito di erbe aromatiche e...buon appetito.

L'idea -Street food- in più: chiudete le vostre pizzette e mangetele come fossero dei tacos, saranno perfette per una cena o un pranzo in compagnia magari all'aperto e magari con qualche cappero che profuma già d'Estate (buonissime anche con un filo di colatura d'alici).






Come sempre potete modificare gli ingredienti o creare combinazioni secondo i vostri gusti e le vostre ispirazioni. Prepariamo la pizza fatta in casa almeno una volta alla settimana, è una vera passione (l'avrete capito), la lievitazione ci affascina, guardare l'impasto che lievita in forno mentre cuoce è più catartico di un'intera nuova stagione dei nostri serial preferiti, abbiamo provato moltissimi impasti e tantissime farine diverse finche siamo giunti a questa ricetta che non sarà  oggettivamente perfetta (la pizza perfetta la lasciamo ai pizzaioli quelli veri) ma che è perfettamente imperfetta per noi, quella che sa di casa, che ti fa sorridere ed essere davvero soddisfatto perché assolutamente e sorprendentemente buona (la magia di un impasto ben lievitato). E' il nostro vero comfort food, il nostro momento insieme dopo essere stati lontani. Un po' come tenersi per mano e sentire il sole caldo anche se fuori piove.

P.S. E se volete preparare il caviale di limone e lime è davvero semplice, bastano 100ml di succo di limone e lime e 2g di agar agar. Preparate un bicchiere con 200ml circa di olio di semi e conservatelo in freezer per 15 minuti circa, portate a ebollizione il succo ben amalgamato all'agar agar, prelevatelo con una siringa e fate cadere piccole gocce nell'olio. Appena prima di servire scolatele in un colino e sciacquatele velocemente ma delicatamente con acqua fredda.

We premise that our fave pizza is the simplest one, the one we homemade at least once a week with tomato (a good one), mozzarella (a good one) and a lot of basil but sometimes we like to try new recipes using Seasonal products, veggies and herbs from our garden, a (good) evo oil and a bit of creativity (quality ingredients make Always the difference).

Ingredients for 4 mini pizzas
250g flour Type1
2g dry mother yeast
1 teaspoon salt
1 teaspoon sugar
2g criscito (or diastatic malt)
90/100ml water

2 redfish fillets
a tbspoon of vergin coconut oil
150g stracciatella (or a mozzarella di bufala)
spinach Leaves-watercrash shoots-curly salad
pineapple sage- fresh origano-tarragon-Rosemary flowers
salt and pepper
60g fresh robiola
lime and lemon caviar
vanilla fleur del sel
a good evo oil


To prepare the dough: sift the flour, add the dry ingredients (dry mother yeast, criscito - or the diastatic malt - salt and sugar)and stir well for a few minutes to aerete the flour. Add warm water (not boiling) gradually mixing to the flour with the dough maker. Make it work for about ten minutes or until the dough begin to string. Then knead quickly the dough on a floured worktop with the palms of your hands to obtain a smooth dough, compact and soft to the touch. Let it rise in a large bowl (where it can double the volume) for at least 2 hours covered with film (not in contact) in the oven off. Then gently and quickly knead the dough on a floured worktop, fold the dough on itself and let it rise again (as above) for about 2/3 hours.
(We love to use the dehydrated yeast because it allows to obtain an excellent result without complications and we love the flour Type1, which is suitable for long leavining and it makes the dough very fragrant but you can replace it according to your taste or needs, for example with the gluten free flour, or a multicerals one to get a more crunchy pizza).
Make 4 balls with the dough and press each ones with floured hands from the center outwards to push the air towards the board giving a round shape. We love a thin pizza with a swollen soft crust full of "holes inside" (how do you say "alveolatura"??) with which pick up the sauce (no bon ton rules when you eat pizza!) but you can choose the shape or thickness you prefer, pizza is very democratic!. Let it rest for 1 hour more and we are ready for seasoning and bake (and to taste of course!).
Spread the dough with a fresh and creamy robiola (we used ones produced in the countryside where we live) and bake in preheated oven at 250°C with pizza function, or at 250°C with the refractory stone (because pizza has to cook at 300°C, even better if you have a wooden oven! We would really love to have one in the garden) for about 8 minutes or until well done (cooking depends on your oven).
While the little pizzas are baking dedicate to the preparations of the ingredients: brush the redfish fillet (on the flesh side, this fish has a delicate taste, very good) with lemon juice and the herbs (chopped with a ceramic blade to prevent oxidation), cut it in regular rectangles, sautè them in a nonstick pan (on the skin side) with coconut oil (it has a very high smoke point that allows to get a crispy skin without burning the oil) until the fish meat is well cooked. Add salt (add fresh ground black pepper if you like), place them on the hot pizzas, add the stracciatella (mozzarella + cream) or mozzarella di bufala if you prefer, the watercrash shoots and the spinach Leaves, the curly salad, the flowers of Rosemary (if you have the Rosemary in bloom pick up the flowers just before serving to keep their wonderful flavour), the lemon and lime caviar (or some slices of lemon and lime to squeeze on just before biting), a pinch of vanilla fleur de sel, a drop of Pugliese evo oil, sprinkle with the skin crumble, some chopped aromatic herbs and...buon appetito!
One more -Street food- idea: fold up pizzas and eat them like tacos, perfect for a lunch or a dinner with friends maybe outdoor and maybe with some capers that smell of Summer (so good even with a drop of plumage of alice).
As we Always say you can replace the ingredients or make new combinations to your taste and inspirations. We prepare homemade pizza at least once a week, is a real passion (as you can see), the rising fascinates us, watching the dough rising in the oven while it bakes is more cathartic than a Whole new Season of our fave serials. We tried a lot of proceeds and so many flours, until we get  this dough recipe that it won't be perfect (we leave the perfect pizza to the real "pizzaioli") but it is the "perfectly imperfect" one to us, the one that smells of home and makes you smile and feel so satisfied because it's absolutely and sourprinsigly good (the magic of a well rised dough). It's our real comfort food, our time together after being far. A bit like holding hand in hand feeling the warm sun even if it's raining outside.



P.S. And if you want to prepare the lemon and lime caviar you just need 100ml of lemon and lime juice and 2g of agar agar. Prepare 200ml of seed oil in a glass in keep it in the freezer for about 15 min. Take to a boil the juice and the agar agar well mixed together, pick the liquid with a sirynge and let little drops fall down into the oil, just before serving drain in a colander and rinse quickly but gently with cold water.

Mini pies al pistacchio e fleur de sel alla vaniglia con crema pasticcera al cioccolato bianco profumata al limone con lamponi

Cucinare è una medicina, una chimica karmica che appiccica il sorriso sulle labbra e che fa brillare gli occhi ogni volta che si sforna qualcosa di buono, ogni volta che si scorge negli occhi di chi assaggia l'amore, l'impegno e la passione che trasformano gli ingredienti in sapori che fanno vivere nuove emozioni o che riportano a vecchi ricordi che se ne stavano nascosti da qualche parte nel cuore. Cucinare (e mangiare) è una magia che fa stare bene. Ne siamo sempre più convinti. E oggi vi raccontiamo di frolla fragrante, di lamponi e cioccolato bianco, di aroma di limone e burro, di pistacchi e fleur de sel alla vaniglia, di teglie e mattarelli e del forno caldo che profuma i pensieri di cose buone.

Mini pies al pistacchio e fleur de sel alla vaniglia con: coulis di lamponi, crema pasticcera al cioccolato bianco profumata al limone, lamponi e decorazioni al cioccolato bianco...una ricetta semplice, con qualche passaggio da seguire ma davvero molto golosa, perfetta per le vacanze di Pasqua (ma non solo) e con la quale abbiamo vinto il contest indetto da American Pistachio Growers e A Gipsy in the Kitchen (yes!)

Ingredienti

Per la frolla (per 6 mini pies)
100g farina00 (Farina Caputo, il Mulino di Napoli)
100g polvere di pistacchi (prendete 200g circa di pistacchi non salati,serviranno per decorare)
1 uovo
60g zucchero
6g lievito per dolci
80g burro
fleur de sel alla vaniglia

Per il coulis
100g lamponi (comprate 250g di lamponi circa, serviranno per decorare)
succo di limone q.b.
zucchero a velo q.b.

Per la crema pasticcera
150ml latte intero
2 tuorli
2 cucchiai di farina00
20g zucchero
100g cioccolato bianco
scorza di 1 limone

Per decorare
100g cioccolato bianco
pistacchi q.b.
fleur de sel
polvere di pistacchi
lamponi q.b.



Cominciamo con le decorazioni di cioccolato (perché necessitano di tempo per solidificare): sciogliere il cioccolato a bagno maria fino a raggiungere la temperatura di 45°C, quando il cioccolato è pronto prelevarlo con un cucchiaio e lasciarlo scivolare delicatamente ma velocemente su carta forno creando degli schizzi (potete rivestire una bottiglia piccola con carta forno, stabilizzarla sul piano da lavoro e procedere con il cioccolato come sopra per arrotondare come nelle nostre foto). Decorare con alcuni pistacchi tritati grossolanamente e fleur de sel alla vaniglia. Lasciate raffreddare per almeno due ore o finche ben solidi (potete velocizzare i tempi mettendo le decorazioni in frigorifero).


Per preparare la frolla: frullare i pistacchi fino ad ottenere una polvere (preparatene un po' più di 100g e tenetene da parte un po' per la decorazione del piatto). Setacciare la farina00 e mescolarla alla polvere di pistacchio (100g), al lievito e al fleur de sel alla vaniglia (+ qualche pistacchio tritato grossolanamente). Montare l'uovo con lo zucchero e aggiungerlo al mix preparato e infine unire il burro freddo a pezzi e impastare velocemente con i palmi delle mani (o con l'impastatrice) fino ad ottenere un panetto liscio e compatto che deve riposare (coperto con pellicola) in frigorifero per almeno 1 ora (meglio se preparato il giorno prima). La frolla ha un profumo buonissimo e un bel color pistacchio che però si perderà durante la cottura (noi preferiamo non aggiungere coloranti). 


Per preparare la crema pasticcera: scaldare su fuoco medio basso il latte con la scorza di limone non trattato e (se le avete) due foglie di limone, portare a bollore e lasciare riposare . A parte montare i tuorli e lo zucchero con le fruste , aggiungere a filo prima la farina setacciata poi il latte tiepido (non bollente e filtrato per eliminare le scorze e le foglie) e riportare sul fuoco (medio basso) continuando a mescolare con un cucchiaio di legno fino a raggiungere la consistenza della crema pasticcera. Spegnere il fuoco e aggiungere il cioccolato bianco a pezzetti e mescolare finche ben amalgamato. Lasciare raffreddare (con pellicola a contatto) e conservare in frigorifero fino al momento di servire (un assaggio è doveroso, noi non sappiamo resistere).


Per la cottura della frolla: stendere l'impasto con il mattarello e disporlo negli stampi per tartellette (precedentemente imburrati e infarinati o foderati di carta forno) e cuocere in forno preriscaldato a 200°C statico per 15 minuti circa o finche ben dorate (la cottura dipende dal forno - per evitare che l'impasto si gonfi cuocete le mini pies coperte con carta forno e con un peso in centro, per esempio della pasta vecchia). Sfornare e lasciare raffreddare prima di rimuovere gli stampi.


E mentre le tartellette cuociono in forno non ci resta che preparare il coulis: lavare i lamponi, disporli in una padella antiaderente con qualche goccia di limone e un cucchiaio scarso di zucchero a velo. Cuocere a fuoco medio basso per qualche minuto, frullare fino ad ottenere una salsa liscia e lucida, filtrare e riportate su fuoco medio basso fino a raggiungere il primo bollore (se necessario aggiungere più limone o più zucchero). Lasciare raffreddare.


E finalmente siamo pronti per servire (e assaggiare): disporre un cucchiaio di coulis nel centro delle mini pies, aggiungere la crema pasticcera (insieme creeranno un bellissimo gioco di colore), finire con i lamponi, le decorazioni di cioccolato bianco e la polvere di pistacchio (un'idea in più, potete aggiungere delle piccole uova di cioccolato bianco invece delle decorazioni se pensate di servirle durante le vacanze di Pasqua).

E' una ricetta che richiede un po' di tempo, e attenzione ai dettagli (potete semplificare preparando la frolla e la crema il giorno prima) ma ne vale davvero la pena perché sono buonissime...la frolla al pistacchio è una fragrante sorpresa (perfetta anche per fare i biscotti), il coulis è profumato, la crema pasticcera al cioccolato bianco un vero peccato di gola, il fleur de sel alla vaniglia da un tocco speciale e il tutto...è davvero goloso, provatele a fateci sapere cosa ne pensate e...buona Pasqua!

Cooking (and eating) is a magic that makes you feel good. We are Always increasingly convinced. Today we tell you about a fragrant pastry, pistachios and raspberries, about White chocolate, lemon and butter scents and vanilla fleur de sel, about baking molds and rolling pins and about the warm oven that makes your thoughts smell of good.

Mini pies with pistachio and vanilla fleur de sel and: raspberry coulis, White chocolate custard cream lemon scented + raspberries and White chocolate decorations...a simple recipe, but really tasty, perfect for the Easter Holidays (but not only) and with which we won the contest organized by American Pistachio Growers and A Gipsy in the Kitchen (yes!)

Ingredients
For the pastry
100g flour00 (Flour Caputo, il Mulino di Napoli)
100g pistachio powder (buy about 200g not salted pistachios, even for the decorations)
1 egg
60g sugar
vanilla fleur de sel
80g butter
6g baking powder

For the coulis
100g raspberries (buy about 250g raspberries, even for the decoration)
lemon juice as enough
icing sugar as enough

For the custard cream
150ml Whole milk
2 egg yolks
100g White chocolate
2 tbspoons sugar
20g sugar
zests of 1 lemon

To decorate
100g White chocolate
chopped pistachios
raspberries
vanilla fleur de sel

Let's start with the chocolate decorations ('cause they have to rest): melt in a double boiler the White chocolate until it reaches a temperature of 45°C, when ready pick the chocolate with a spoon and slide it gently but quickly on ovenpaper creating some sketching (you can cover a little bottle with oven paper, stabilize it on the worktop and procede with the chocolate as above to obtain a rounded shape as in our pics). Decorate with some chopped pistachios and vanilla fleur de sel. They have to rest for at least 2 hours or until they will be well solified. (You can speed up by keep the decorations in the refrigerator).
To prepare the pastry: blend the pistachios until you get a powder (prepare more than 100g, and keep a bit of it aside for the decoration). Sift the flour00, mix it with the pistachio powder (100g), the baking powder, a pinch of vanilla fleur de sel and some chopped pistachios. Whisk the egg with sugar, mix it with the flour and add cold butter cutted into small pieces. Knead quickly with the palms of the hands (or with the pastry maker) until you get a smooth and compact dough that has to stand in the refrigerator (covered with film) for at least 1 hour (even better if prepared the day before). The pastry has a delicious aroma and a nice pistachio color that will slow down during cooking but we prefer not to add dye.
To prepare the custard cream: heat milk with the lemon zests and 2 lemon Leaves (if you have them) over medium low heat and take to a boil and let rest. Aside whisk the egg yolks with sugar, pour (little at a time) first the sifted flour and the warm milk (not boiling and filtered to remove the zests and Leaves) and cook again over medium low heat stirring constantly with a wooden spoon until it has reached the custard cream consistency. Turn off the heat and add the White chocolate cutted into pieces and mix until completely blended. Allow to cool (with film to contact) and keep in the refrigerator until ready to serve (a taste is a must, we can't really resist).
For the cooking of the pastry: roll out the dough with the rolling pin and place it in the mini pies molds (previoulsy buttered and floured or covered with ovenpaper) and bake in preheated oven at 200°C for about 15 minutes or until Golden brown (cooking depends on the oven, place oven paper on each pie with a weight, for ex. old pasta, to avoid that dough swollen while baking). Take off from the oven and allow to cool before removing the molds.
And while the pies bake in the oven we just have to prepare the coulis: wash the raspberries, place in a nonstick pan with a bit of lemon juice and about a tbspoon of icing sugar and cook over medium heat for a few minutes, blend until you get a smooth and glossy sauce, filter to remove the seeds and cook again until boiling (if necessary add more lemon juice or sugar). Allow to cool. 
And finally we are ready to serve and taste: place a spoon of coulis in the center of each pies, add the custard cream (they will create nice games of color together), finish with raspberries, the chocolate decorations and a bit of pistachio powder (one more idea:you can add some white chocolate eggs instead of the decorations if you plan to serve them during the Easter Holidays).
A recipe that requires a bit of time and attention to details (you can simplify by preparing the pastry and the cream the day before) but well Worth because they are delicious...the pistachio pastry is so fragrant, a surprise (perfect even to make cookies), the coulis is so scented, the White chocolate custard cream is super, the vanilla fleur de sel gives a special touch and all together...is so tasty, try them and give us your opinion and...Happy Easter!
