Bagels


I bagels, piccoli panini ricoperti di semi di origine ebraica da farcire in mille modi, non potevano mancare nel nostro "Kitchen Corner"!
Questa è la nostra versione di una ricetta facile, che richiede un po' di pazienza a causa della lievitazione, ma molto golosa.

The bagels, little buns covered with seeds of Jewish origins to fill in thousand ways, could not fail in our "Kitchen Corner"!
This is our version of an easy recipe, that requires a bit of patience because of the rising, but really tasty.


Ingredienti (per circa 10 bagel)
500g farina manitoba
200ml latte
50ml acqua
35g lievito madre secco
1 uovo
1 cucchiaino di sale
2 cucchiaino di zucchero
20g burro morbido
1 cucchiaio di miele
semi

Setacciare la farina, aggiungere lo zucchero, il sale e il lievito e mescolare bene. Far intiepidire l'acqua e il latte e versarne (circa metà) poco alla volta nella farina amalgamando con una forchetta, aggiungere l'uovo sbattuto, continuando ad amalgamare e il resto di acqua e latte. Impastare con le mani fino ad ottenere un panetto liscio, aggiungere il burro morbido a pezzi e impastare ancora (se necessario aggiungere un po' di farina) fino ad ottenere un panetto liscio e morbido. Far lievitare coperto da un canovaccio umido (non a contatto) in un luogo caldo per almeno un'ora. Formare dei panini rotondi (circa 10) con un buco al centro (potete farlo con un piccolo tagliapasta) e lasciarli lievitare ben distanziati su carta forno per 20/30 minuti circa.
Nel frattempo scaldare il forno a 220/200°C (statico)e portare a bollore una pentola d'acqua con un cucchiaio di miele. Quando i bagel saranno lievitati tagliare la carta forno intorno ad ognuno e tuffarli nell'acqua per qualche secondo (devono bagnarsi su tutti i lati). Scolarli velocemente (la carta forno si staccherà da sola), posizionarli su una teglia con carta forno ben distanziati, cospargere di semi (noi abbiamo usato i semi di papavero e di sesamo) e infornare per circa 18 minuti o finche ben dorati (ogni forno funziona in modo diverso perciò la prima volta controllateli durante la cottura).
Il procedimento (dalla bollitura al forno) deve essere velocissimo!
Lasciateli intiepidire e farciteli a piacere. Noi li abbiamo farciti con: insalata, uovo al tegamino, due gocce di aceto balsamico, pepe e tartufo (attenzione al tuorlo che cola!) e con: crème fraiche, prosciutto di Praga, insalata con olio, aceto balsamico e miele e un filo di senape. E voi, come farcirete i vostri bagel? Enjoy!
P.S. Sono perfetti per un brunch, un pranzo veloce o magari per un pic-nic nel parco con i bellissimi colori dell'Autunno!


Ingredients (for about 10 bagels)
500g Manitoba flour
200ml milk
50ml water
1 egg
35g dry Yeats
1 tespoon salt
2 teaspoons sugar
20g  soft butter
1 tablespoon honey
seeds

Sift flour, add sugar, salt and dry Yeats and mix well. Heat water and milk (they have to be warm) and pour in the flour (about half) little at a time, mixing with a fork. Add a beaten egg, contuining to mix and then add the remaing half of water and milk. Knead with hands until obtaining a soft dough, then add the soft butter into small pieces and knead again (if necessary add some more flour) until you get a smooth and soft dough. Let rise covered with a damp cloth (not touching) in a warm place for at least an hour. Form round buns with a hole in the center (you can use a little round cutter)and let them rise well spaced on oven paper for at least 20/30 minutes. Meanwhile preheat the oven at 220°/200°C (static) and boil a pot of water with a tablespoon of honey.
When the bagles are rised cut the oven paper around each buns and plug into boiling water for a few seconds (they have to get wet on all sides). Drain quickly (oven paper will come off by itself), arrange on a baking sheet covered with oven paper and sprinkle them with seeds (we used the sesame and poppy seeds) and bake for about 18 minutes or until Golden brown (each oven works differently so for the first time check them while baking). The process (from boiling to the oven) must be very fast!
Let cool and fill them as you like. We have enjoyed them with: salad, fried egg, few drops of Balsamic vinegar, pepper and truffle (attention to the yolk runny!) and with: crème fraiche, Praga ham, salad with olive oil, Balsamic vinegar and honey and a wire of mustard. Tarte Flambèe or Flamme Kueche


Oggi vi proponiamo una ricetta che ci piace tantissimo! Tempo fa, tornando da un viaggio al Nord (rigorosamente in moto!) abbiamo deciso di cuoriosare qualche città dell'Alsazia (regione a nord-est della Francia)...e una sera (eravamo ad Obernai) abbiamo assaggiato la Tarte Flambèe o Flamme Kueche, una ricetta tipica davvero buona!!! Questa è la nostra versione con un'unica variante dall'originale: la cipolla rossa di Tropea, per dare un tocco italiano al piatto (perdonateci).

Today we propose you a recipe that we love so much! Time ago, returning from a trip to the North (strictly on our motorbike!) we also wanted to look around some cities in Alsace (region in North-eastern France)...and one evening (we were in Obernai) we tasted the Tarte Flambèe or Flamme Kueche, a really delicious typical recipe!This is our version with a unique variant form the original: the red Tropea onion, to give an Italian touch to the dish (forgive us).


Ingredienti
50g farina (meglio se manitoba)
6g lievito di birra
50cl acqua
30g burro morbido
un pizzico di sale

200g crème fraiche
250g fromage blanc
1 cipolla
250g pancetta affumicata
sale pepe e noce moscata q.b.

Setacciare la farina e scaldare l'acqua (deve essere tiepida). Sciogliere il lievito nell'acqua (potete aggiungere anche un cucchiaino di zucchero). Aggiungere un bel pizzico di sale alla farina, mescolare, formare una fontana al centro e aggiungere acqua e lievito (ben sciolto). Impastare fino ad ottenere un panetto, aggiungere il burro morbido e continuare a impastare finche ben incorporato. Lasciare lievitare l'impasto coperto con un canovaccio umido in un luogo caldo per almeno un'ora.
Nel frattempo tagliare la cipolla (mezza può essere sufficiente) a fettine sottili e farle appassire con un filo d'olio in padella finche non diventeranno trasparenti (abbiamo scelto la cipolla rossa perché e più dolce e meno invadente).Mescolare crème fraiche e fromage blanc (può andare bene anche il classico formaggio bianco spalmabile) con sale, pepe e noce moscata.
Dividere l'impasto in quattro parti e stendere ogni parte con il mattarello (deve essere sottilissima) , spalmare con il mix di crème e fromage e aggiungere cipolla e pancetta.
Cuocere in forno preriscaldato (grill+ventilato) a 250°C per circa 8/9 minuti o finche ben dorata (perfetta se cotta in forno a legna). Servitela calda, e come la tradizione vuole, tagliata in quattro fette da mangiare rigorosamente con le mani. E' un antipasto davvero goloso, per noi perfetto anche come piatto unico per una cena con amici (accompagnato da qualche altro stuzzichino)...magari con il fuoco che scoppietta e tiene compagnia. Ovviamente, se gustata seduti al tavolino di un ristorante in Francia mentre si è in vacanza...ha un sapore indimenticabile! Bon appetit!!!


Ingredients
500g flour (better Manitoba)
6g Yeats
50cl water
30g soft butter
a pinch of salt

200g crème fraiche
250g fromage blanc
1 onion
250g bacon
salt, pepper and nutmeg as enough

Sift the flour, meanwhile heat the water (should be warm) and melt the Yeats in water (you can add also a teaspoon of sugar). Add a good pinch of salt to the flour and mix. Create a fountain in the center, add the water with the dissolved yaets and knead well until obtaining a dough. Add the softened butter and knead again until is completely blended. Leave the dough grow covered with a damp towel in a warm place for at least one hour.
Meanwhile cut the onion (half coul be enough) in thin slices and cook them in a pan with a bit of oil until they will be transparent (we choose the red one because is sweeter and less strong).
Mix the crème fraiche with the fromage blanc (you can also use the classic spreadable White cheese) and salt, pepper and nutmeg to taste.
Divide the dough into 4 parts and roll out each part very thin, spread the mixture of crème and fromage and add onion and bacon. Bake in preheated oven (grill+ventilated) at 250°C for about 8/9 minutes or until Golden brown (perfect if cooked in a wooden oven).
Serve it hot, as the tradition wants, cutted in 4 slices to eat rigorously with the hands! It's a relly tasty appetizer for us also perfect as a main dish (served with some Others snacks) for an easy dinner with friends...maybe with the fire crackling and holding company. Of course, if enjoyed sitting at a table in a restaurant in France while you are on vacation...the taste is really unforgettable! Bon appetit!!!
