Frolla con pesche more limone e amaretti / Pie with peaches blackberries lemon and amaretti


Niente può addolcire il rientro dalle vacanze più di una frolla che invade la casa di profumo...una fragranza piena di bei ricordi ed emozioni, e se avete trascorso le ferie a casa...due fette sono doverose.
Questa è la ricetta di una torta golosissima, che si sbriciola mentre la si taglia a fette, burrosa e profumata, con un ripieno di golose e succose pesche, dolcissime more e amaretti (di Saronno, perfetti per questo dolce). Chi l'ha assaggiata ha detto che era buonissima (dovreste provarla)...peccato sia già finita, ma nel weekend facciamo il bis!
E dato che non abbiamo visto le stelle cadenti le abbiamo lasciate cadere sulla torta...


Nothing can soften the return from vacation more than a pie that invades the home with its perfume...a fragrance full of sweet memories and emotions, and if you have spent the holidays at home, well two slices are dutiful.
This is the recipe for a delicious pie, that crumble when you cut the slices, buttery and scented with a filling of luscious juicy peaches, sweet blackberries and amaretti (the one from Saronno, typical Italian dry cookies made with sweet and bitter almonds, perfect for this sweet). Those who have tasted it said it was wonderful (you should try)...too bad it's over now, but we will prepare it again for the weekend!
And since we have not seen the shooting stars we have dropped them on the cake...


Ingredienti
500g farina per dolci
4 tuorli
250g burro freddo
130g zucchero
6g lievito in polvere
scorza di 1 limone
un pizzico di sale

4/5 pesche
more
125g amaretti (di Saronno)
zucchero alla vaniglia
succo di limone

zucchero a velo

Setacciare la farina con il lievito e montare con le fruste elettriche i tuorli con lo zucchero e un pizzico di sale per qualche minuto. Versare i tuorli nella farina, aggiungere il burro freddo a pezzetti e la scorza di limone grattugiata e impastare fino ad ottenere un panetto liscio e compatto. Avvolgere l'impasto nella pellicola e lasciare riposare in frigorifero per almeno 30 minuti.


Nel frattempo, sbucciare le pesche, privarle del nocciolo e tagliarle a fette. Condire le pesche con succo di limone e zucchero alla vaniglia ( circa due cucchiai di zucchero e il succo di mezzo limone, dipende dalla dolcezza delle pesche)e lasciare riposare mescolando di tanto in tanto.
Foderare la teglia con carta forno (o imburrare e infarinare), stendere la pasta con il mattarello (spessore di circa 4mm) e tagliare un disco più largo di circa 3/4cm della teglia che userete per cuocere la torta (abbiamo usato una teglia a cerniera di 28cm), disporlo nella teglia e bucherellarlo con la forchetta.


Sbriciolare finemente gli amaretti e cospargere la base della frolla (tenendone da parte un pugno). Disporre le fette di pesca (senza il loro succo) creando due o più strati, aggiungere le more e cospargere con gli amaretti sbriciolati rimasti.
Tagliare un disco di pasta grande come la teglia, disporlo sulla frutta e ripiegare il bordo (della frolla di base) verso l'interno per sigillare la torta. Se avanzate della frolla potete creare delle decorazioni...noi l'abbiamo ricoperta di stelle cadenti!



 Cuocere in forno preriscaldato a 180°C statico sopra e sotto per circa 60 minuti o finche ben cotta. Sfornare, lasciare riposare, cospargere di zucchero a velo (se piace) e servire da sola o con un po' di gelato alla vaniglia.
Perfetta per ogni occasione (la frolla è la frolla) e assolutamente da rifare con pere e cannella quando l'autunno busserà alla porta e in mille altri modi!
E se i Guns n Roses cantano "Sweet Child O Mine" non ci resta che dire "Sweet Pie Oh Mine"...enjoy!

500g cake flour
4 egg yolks
250g cold butter
130g sugar
6g baking powder
a pinch of salt
zest of one lemon

4/5 peaches
blackberries
125g amaretti (from Saronno)
lemon juice
vanilla sugar

icing sugar

Sift flour with baking powder, whisk the egg yolks with sugar and a pinch of salt for a few minutes (with the electric whisk). Pour the egg yolks in the flour, add the cold butter cutted into small pieces and grated zest of one lemon and knead until obtaining a smooth and compact dough. Wrap the dough in the film and let rest in the refrigerator for at least 30 minutes.


Meanwhile peal the peaches, remove the stone and cut into slices. Drizzle the peaches with lemon juice and vanilla sugar (approximately two tbspoons of sugar and the juice of half a lemon, it depends on the sweetness of the peaches) and let stand stirring occasionally. Line the pan with oven paper (or butter and flour), roll out the dough with the rollin pin (thickness of about 4mm) and cut a disc of about 3/4cm larger than the pan you will use to bake the pie (we used a 28cm springform pan), arrange the disc in the pan and make some holes with the fork on the pastry.


Crumble thinly the amaretti from Saronno (if you have not replace them with dry cookies made with bitter and sweet almonds) and distribute evenly over the base of the pastry (keep aside a punch). Arrange the sliced peaches (without their juice) creating two or more layers, add the blackberries and sprinkle with the amaretti crumbs left. Cut a disk of pastry of the size of the pan, place it on the fruit and fold the edge (of the base dough) inwards to seal the cake. If you have some pastry left you can create decorations...we hold our cake of shooting stars!


Bake in preheated oven at 180°C static top and bottom for about 60 minutes or until well done. Take out of the oven, let rest, sprinkle with icing sugar (if you like) and serve it alone or with a bit of vanilla ice-cream. Perfect for any occasion (the pastry is the pastry) and absolutely to be redone with pears and cinnamon when Autumn will knock on the door and in a thousands way!
And if the Guns N Roses sing "Sweet Child O Mine" we have just to say "Sweet Pie Oh Mine"...enjoy!

Toast con robiola di capra e fichi caramellati al miele / Toasts with goat robiola and honey caramelled figs


Se la ricetta precedente profumava di bosco, questa profuma di campagna. Nella nostra zona ci sono tante piante di fichi nei giardini, questa è la loro stagione...perché non approfittarne?!
Vi suggeriamo una ricetta golosissima con pane caldo, tostato e profumato, formaggio che fonde (il formaggio che fonde ha sempre un certo fascino, non trovate?), fichi dolcissimi e qualche altro dettaglio per rendere la ricetta davvero stuzzicante (ma anche veloce).

If the previous recipe smelled of Woods, this one smells of countryside. In our area there are a lot of fig trees in the gardens, this is their season, why not take advantage?!
We suggest a luscious recipe with warm bread, toasted and fragrant, melting cheese (melting cheese has always its own charm, don't you think?), so sweet figs and a few more details to make the recipe really gorgeus (and fast too).


Ingredienti
pane in cassetta
robiola di capra
miele
fichi
a piacere
foglie di tatsoi
fiori e foglie di origano
composta di fichi e limoni
aceto balsamico o di lamponi

I toast sono sempre così invitanti...almeno per noi!
Tagliare le fette di pane a metà ottenendo dei triangoli(potete usare il pane che preferite, noi abbiamo usato quello in cassetta e non abbiamo tolto la crosta, ci piace) e farcire con robiola di capra senza la crosta (è un formaggio di latte caprino leggermente stagionato, morbido all'interno e dal sapore intenso, noi adoriamo il formaggio di capra ma potete sostituirlo con un formaggio di latte vaccino se preferite).
Giusto un consiglio: per aggiungere sapore spalmate le fette di pane con composta di fichi e limoni.


Lavare i fichi e tagliarli in due, o in quattro se sono grandi e caramellarli in una padella su fuoco medio con un po' di miele rigirandoli su ogni lato. Aggiungere ai fichi (a piacere) qualche goccia di aceto balsamico, o aceto di lamponi per dare un tocco di dolce/agro.
E mentre i fichi caramellano disporre i toast in una padella ben calda, su una griglia o in forno (con funzione grill) e tostare su ogni lato finche ben dorati e il formaggio comincerà a fondere.
 Disporre i toast su un piatto, se vi piace fate come noi, due toast fermati da uno stecco in legno, decorati con i fichi caldi, abbiamo aggiunto qualche foglia di tatsoi (insalata giapponese), fiori e foglie di origano per aggiungere profumo e freschezza.


Sono pronti e davvero buoni...serviteli caldi!
Perfetti per un pranzo veloce o uno spuntino goloso...un mix di dolce e salato da provare. Assolutamente da rifare anche in Autunno con pere o mele! Enjoy...

Nota: I fichi non sono facili da trovare perché si deteriorano velocemente, se potete fate un giro nelle campagne della vostra zona, saranno sicuramente più facili da reperire!

The toasts are Always very inviting...at least for us!
Cut the toast bread in half getting triangles (you can use the bread you prefer, we used the classic one for toast and we have not removed the crust, we like it) and stuff with goat robiola without its crust (a cheese made with goat milk, slightly seasoned, soft inside with an intense flavor, we love goat cheese but if you prefer you can use a cow milk one),
Just an advice: to add flavor spread the slices of bread with a bit of fig and lemon jam.


Wash the figs and cut in two, or four parts if they are large and caramel them in a hot pan with a bit of honey, over medium heat turning them on each side. Add to the figs a few drops (to taste) of balsamic or raspberry vinegar to give a deliscious touch of bittersweet.
And meanwhile the figs caramelize arrange the toasts in a hot pan, on a gridle or in the oven (with function grill) and toast them on each side until Golden brown and the cheese begins to melt.
Arrange the toasts in a dish, if you like do as us, two toasts "stopped" with a wooden stick and decorated with so sweet hot figs...we added some tatsoi leaves (japanese salad), flowers and Leaves of origano to give perfume and freshness.


They are ready and really good, serve them hot!
Perfect for a quick lunch or a gorgeus snack...a mix of sweet and salty to try!
To remake in Autumn with apples or pears, absolutly! Enjoy...

Note: The figs are not easy to find because they deteriorate quickly, if you can, take a ride in the countryside near your area, surely they will be easier to find!

Un paio di Hunter boots (rubati allo stile Glastonbury), un abito leggero (ma anche shorts in denim e camicia!), due gocce di profumo (ai fichi! di Marc Jacobs) qualche dettaglio, fiori fra i capelli e siamo pronti per raccogliere i fichi...e fra poco anche le zucche (buone!)...magari per preparare golosissime marmellate (con i cucchiai di legno ovviamente...che adoriamo).

A pair of Hunter boots (stolen to the Glastonbury style), a fresh dress (but denim shirts and a shirt too!), two drops of perfume (figs scented! by Marc Jacobs), a few details, flowers in the air and we are ready to pick figs...but soon the pumkins (so good!) too...maybe to prepare luscious jams (with the wooden spoons of course...that we love).

Tomino al profumo di bosco / Scented woods tomino "Fast & Gorgeus"


Agosto...il mese di tramonti romantici, di sole e stelle cadenti...di vacanze, viaggi e fotografie (tantissime fotografie), di dolci ricordi e nuovi incontri...di fiori profumati, risate e frutti golosi.
Agosto è anche il mese dei frutti di bosco, davvero dolci e profumati...forse anche un po' magici...e oggi vi proponiamo un'idea proprio al profumo di bosco, un tomino golosissimo che fonde ricoperto di more, mirtilli, miele e frutta secca.

August...the month of romantic sunsets, sun and shooting stars...of holidays, travels and photographs (a lot of photographs), of sweet memories and new meetings...of fragrant flowers, laughter and delicious fruits.
August is the month of berries too, so sweet and scented...maybe even a little magic...and Today we suggest you an idea just own scented Woods...with a luscious tomino that blends covered with blackberries, blueberries, honey and dry fruits.

tomino stagionato

mirtilli

frutta secca mista

Scaldare il tomino (un formaggio italiano prodotto soprattutto in Piemonte, di latte vaccino oppure misto, può essere fresco o stagionato, quest'ultimo, che abbiamo usato per la ricetta ha un profumo penetrante e un gusto intenso) in una padella già calda qualche minuto per lato, è pronto quando comincia ad ammorbidirsi all'interno. Nel frattempo aggiungere un po' di miele (quello che preferite) alla frutta secca e mescolare (abbiamo usato diversi tipi di noci, mandorle e nocciole). Disporre il tomino caldo su un piatto (aiutandovi con una spatola) e cospargere con la frutta secca, i frutti di bosco che preferite, ancora un po' di miele e servire.


Il sapore di questo formaggio sta benissimo con la dolcezza del miele, il profumo dei frutti di bosco e il gusto pieno della frutta secca e quando si taglia il formaggio che comincia a fondere è una festa per gli occhi prima e per il palato poi! Potete ovviamente provarlo in mille modi, buonissimo anche con fichi caramellati al miele e prosciutto crudo.


Un piatto perfetto da servire come intermezzo tra il secondo e il dolce durante una cena con portate leggere, una sorpresa sempre molto gradita...ideale per un pranzo veloce o un brunch che profuma di montagna.
Fast, gorgeus e anche un po' romantico.

Heat the tomino (Italian cheese produced mainly in Piedmont, made with cow's or mixed milk, can be fresh or aged, the aged one, that we used for this recipe has a penetrating aroma and an intense flavor) in a hot pan for a few minutes on each side, it is ready when it begins to be fluffy inside. Meanwhile add a little bit of honey (the one you prefer) to the nuts and mix (we used different types of nuts, almonds and hazelnuts). Arrange the hot tomino (with the aid of a spatula) on a plate and cover with dried fruits, berries of your choice, a bit more of honey and serve.


The flavor of this cheese goes really well with the sweetness of honey, the scent of the berries and the full taste of dry fruits and just when you cut the cheese and it begins to melt is a real feast for eyes before and for the palate then!
Of course you can try the tomino in a thousand ways...also delicious with honey caramelled figs and Parma ham.


A perfect dish to serve between the main course and the dessert during a dinner with light courses, a very welcome surprise...also lovely for a quick lunch or a brunch that smells of mountain.
