Salsa al caramello salato / Salted Caramel Sauce



Salsa al caramello salato

Anche oggi una ricetta facile e deliziosa da provare con i dolci al cucchiaio (budini, panna cotta, bavaresi...), come top per il gelato, con cioccolata calda e panna montata o con lo yogurt bianco per una merenda fresca e golosa(potete conservarla in frigorifero per diversi giorni).

Salted caramel sauce

Even today, a easy and delicious recipe to taste with desserts (puddings, panna cotta, Bavarians...) as ice-cream top, with hot chocolate and whipped cream or with plain yogurt for a fresh and gorgeus snack.(You can store in the refrigerator for several days).


Ingredienti 
200ml panna fresca
220 gr zucchero
una presa di sale

Ingredients
200ml fresh cream
220 gr sugar
a handful of salt



Scaldare la panna a fuoco basso (non bollire), nel frattempo sciogliere metà dello zucchero ( a fuoco basso. Quando lo zucchero comincia a caramellare aggiungere poco alla volta il rimanente zucchero fin che non sarà ben caramellato (di colore ambrato e trasparente, attenzione a non farlo scurire troppo). Aggiungere la panna a filo e una presa di sale, continuando a mescolare fin che il caramello non sarà completamente sciolto e amalgamato. Versare in una salsiera o in un vasetto (se conserverete in frigorifero), lasciare raffreddare e gustare come più preferite!
P.S. Attenzione: non assaggiate la salsa durante la preparazione, la tentazione è forte ma è davvero bollente!!!



Heat over low heat the cream (Not boil), in the meantime melt half of the sugar (low heat). When the sugar begins to caramelize add the remaining sugar little by little until it will be well caramelized (amber colored and transparent, careful not to darken too). Add in the cream slowly, and a pinch of salt stirring constantly until the sugar is completely melted and blended. Pour into a gravy boat or in a jar (if you will keep in the refrigerator), let cool and enjoy as you wish!
P.S. Warning: do not taste the sauce during the preparation, the temptation is strong but it is very very hot!!!

Smoothie di mela / Apple smoothie


Smoothie
Lo smoothie è un centrifugato di frutta o verdura fresco e energizzante, ideale anche per la merenda dei più piccoli. Potete abbinare più frutti (o verdure) e aggiungere latte per renderlo più liquido, yogurt per renderlo più denso o gelato per renderlo più goloso, spezie e miele per renderlo più aromatico.

The smoothie is a fruit or vegetable centrifuged fresh snd energizing, ideal also for children snack. You can combine several fruits (or vegetables) and add milk to make it more liquid, yogurt to make it more dense, or ice-cream to make it more delicious, spices or honey to make itmore fragrant.



Vi proponiamo uno smoothie di mela (abbiamo scelto una Granny Smith: succosa, acidula, poco zuccherina e aromatica), zenzero fresco (ha proprietà antinfiammatorie, antiossidanti e stimolanti della digestione) e latte di mandorla (fatto con mandorle mediterranee tostate e acqua di sorgente, è ricco di vitamine, calcio, dall'effetto antiossidante, povero di grassi, delicatamente aromatico e senza lattosio).

We propose a smoothie with apple (we chose a Granny Smith: juicy, tart, slightly sweet and aromatic), fresh ginger (it has anti-inflammatory, antioxidant and stimulant of digestion properties), and Almond milk (made with toasted Mediterranean almonds and spring water, it it rich in vitamins, calcium, has antioxidant effect, low in fat, delicately aromatic and without lactose).




Pelare e tagliare le mele a pezzetti (una mela per smoothie) e frullare aggiungendo poco alla volta il latte ( o quello che preferite)fino ad ottenere la consistenza che più vi piace (non dovrebbe essere né troppo denso né troppo liquido). Aggiungere un po' di zenzero fresco grattugiato , se volete un po' di miele, mescolare e gustare fresco!

Peel and cut the apples into small pieces (one apple for one smoothie), blend adding gradually the milk ( or whatever you have choosen) until you get the consistency you prefer (it has to be neither too liquid nor too thick). Add a bit of grated fresh ginger, if you want a little honey, stir and enjoy it fresh!

Croccante


Croccante di nocciole e rhum con semi di finocchietto selvatico

La ricetta giusta per noi in una giornata grigia e piovosa!

Ingredienti
100gr nocciole spellate e tostate
100gr zucchero
1 pizzico di sale
1 bicchierino di rhum
1 manciata di semi di finocchietto selvatico
1/2 limone

Crunchy hazelnuts and rhum with wild fennel seeds

The right recipe for us in a grey rainy day!

Ingredients
100gr peeled and toasted hazelnuts
100 gr sugar
a pinch of salt
a little glass of rhum
a handful of wild fennel seeds
1/2 lemon



Bagnare le nocciole con il rhum e lasciarle riposare per circa due ore  rigirandole di tanto in tanto. Prima di cominciare il procedimento preparare della carta forno su una teglia o su un piano che non si rovini con il calore. Mettere in una padella le nocciole (tritate grossolanamente) con lo zucchero e il sale e cuocere a fuoco medio basso continuando a mescolare con un cucchiaio di legno (ci vuole un po' di pazienza!). Quando lo zucchero comincia a caramellare aggiungete una manciata di semi di finocchietto selvatico, che cominceranno a scoppiettare rilasciando tutto il loro aroma. Quando il caramello sarà dorato brunito versatelo sulla carta forno e stendetelo premendo leggermente con il mezzo limone. Lasciare raffreddare e rompere il croccante in pezzi: si conserva a lungo perciò è perfetto se avete ospiti a sorpresa, potete servirlo con un bicchierino di rhum, con dolci al cucchiaio (ottimo con il gelato!) o, se vi piace l'idea, con un formaggio di capra tiepido. Ovviamente potete usare qualsiasi tipo di frutta secca e divertirvi con i vostri abbinamenti preferiti. Enjoy your croccante!


Wet hazelnuts with rhum and let them rest about 2 hours, turning occasionally. Before beginning the process prepare the oven paper on a baking sheet or on a plan that does not come off with heat.
Put in a pan hazelnuts (coarsely chopped)sugar and salt and cook over medium low heat, stirring constantly with a wooden spoon (it takes a little patience!)When the sugar begins to caramelize you can add a handful of wild fennel seeds that chugs will release all their flavor. When the caramel becomes Golden browned pour it on the oven paper and spread lightly with half a lemmon. Allow to cool and break into pieces. The Croccante (crisp) will keep for several days, so it's perfect if you have sourprise guests, you can serve it with a little glass of rhum, with desserts (great with ice-cream) or, if you like the idea, with a warm goat cheese. Of course you can use any type of dried fruit and have fun with your favourite combinations! Enjoy your croccante!

Salt & Vanilla Cookies


SALT & VANILLA COOKIES

Dato che il weekend non è poi così lontano, vi suggeriamo la ricetta di questi biscotti (vero comfort food per noi!) che sono davvero deliziosi con una buona tazza di tè!

Since the weekend is not that far away, we suggest the recipe for these cookies (true comfort food for us!) that are really delicious with a good cup of tea!


Ingredienti
200 gr farina per dolci (o 00)
80 gr zucchero alla vaniglia
100 gr burro
2 tuorli (uova bio grandi)
1/2 cucchiaino di lievito per dolci
una presa di sale grigio di Bretagna

A piacere: scorza di mandarino, panna acida o formaggio cremoso

Ingredients
200 gr cake flour ( or 00)
80 gr vanilla sugar
100 gr butter
2 yolks (big bio eggs)
1/2 teaspoon of baking powder
a pinch of Bretagne Grey salt

To taste: tangerine zest, sour cream or cream cheese


Lavorare i tuorli e lo zucchero con le fruste, aggiungere la farina setacciata con lievito, il sale ( abbiamo scelto il sale grigio di Bretagna, che non viene raffinato, è ricco di sali minerali, povero di sodio e molto profumato, ma voi potete scegliere il vostro preferito o quello che avete in casa, ricoradate però di passarlo con un pestello se è in grani), mescolare bene. Infine aggiungere il burro a tocchetti (deve essere freddo, è più difficile da lavorare ma sarà poi più facile stendere la frolla) e impastare con le mani fino ad ottenere un impasto liscio e compatto. Avvolgetelo nella pellicola e fate riposare in frigorifero per circa 30 minuti.

Work the egg yolks with whisk, add the sifted flour and baking powder, a pinch of salt (we chose the Bretagne Grey salt that is not refined,rich in minerals, low in sodium and very fragrant, you can choose what you preferor what you have at home, remembering to wipe it with a pestle if It's beans) and stir.Finally add the diced butter (must be cold, it is more difficult to mix but it will be easier to work the pastry) and Knead with your hands until you get a smooth and compact dough. Wrap it in plasticwrap and place in refrigerator for about 30 minutes.


Stendere la pasta con un mattarello (non troppo sottile), appoggiare un centrino (o qualsiasi cosa si possa imprimere per creare un disegno, l'importante è che sia ben pulito!)e passare più volte sull'impasto sempre con il mattarello, togliete il centrino e date la forma desiderata (noi abbiamo usato le tazze da tè).
Un'idea in più: fate con uno stecco un buco al centro del biscotto dal quale potete far uscire la cordina della bustina da tè.

Roll out your pastry with a rolling pin (not too thin) support the doily ( or whatever you can impress on the dough, the important thing is that it is clean!) and impress upon the dough Always with the rolling pin. Remove the doily and give the desidered shape ( we use the teacups).
One more idea: make a hole with a stick in the center of the biscuit, you'll can bring out the wireframe of the tea bag.



Disporre i biscotti ( potete farne anche uno grande da tagliare a fette) su placca da forno ricoperta di cartaforno e cuocere a 180° C (forno preriscaldato, statico sopra e sotto) per circa 15 minuti o finchè ben dorati, vi consigliamo di controllarli dopo i primi 10 minuti di cottura. Appena sfornati cospargeteli di zucchero e scorza di mandarino (o dell'agrume che preferite), lasciateli raffreddare e servite con una buona tazza di tè , panna acida o formaggio cremoso.

Arrange your cookies (you can also made one big to cut in slaces)on a baking sheet covered with oven paper and bake at 180° C (preheated oven, static top and bottom) for about 15 minutes or until Golden brown, you should check them after 10 minutes of cooking. Freshly baked sprinkle them with sugar and tangerine zest (or other Citrus you prefer), let cool to serve with good tea, sour cream or cream cheese. Chai Tea Latte


CHAI TEA LATTE

Restiamo in tema di spezie con la nostra versione del Chai Tea Latte! Una bevanda a base di tè, latte e spezie che ultimamente va molto di moda, solitamente realizzata con tè nero e un mix di spezie, che possono variare in base ai vostri gusti.
Versate in una pentola tante tazze di acqua quante ne dovete servire, aggiungete le spezie. Per due tazze noi abbiamo scelto mezzo bacello di vaniglia, due chiodi di garofano, due stecche piccole di cannella e una bacca di pepe lungo (non è molto facile da trovare, ma è molto profumato...torneremo a parlare di lui!). Portate a ebollizione e lasciate cuocere per circa 10/12 minuti a fuoco basso.

We stay on the theme of spices with our own version of Chai Tea Latte! A drink made with tea, milk and spices that is very fashionable lately. Usually made with black tea and a mix of spices, which vary according to your tastes. Pour into a pan many cups of water than you need to serve, add the spices, we (for two cups) chose half vanilla pod, two cloves, two small sticks of cinnamon and a berry of long pepper (not easy to find but very fragrant...we will talk about it again!). Bring to a boil and continue cooking for about 10/12 minutes, on low heat.



Spegnete il fuoco e aggiungete le foglie di tè, o se preferite le bustine, e lasciate in infusione per 2/3 minuti (più a lungo lasciate in infusione più il tè sarà amaro). Versate in tazze o bicchieri(utilizzando un passino) e aggiungete il latte (non freddo) zucchero o miele e se vi piace un po' di panna montata. Potete gustarlo anche freddo lasciandolo raffreddare e aggiungendo qualche cubetto di ghiaccio.

Turn off the heat and add the tea Leaves, or bags if you prefer, and let steep for 2/3 minutes (longer Leaves or bags stay in water, over the tea becomes bitter).Pour into cups or glasses (using a sive), add milk (not cold) sugar or honey, and if you like a little bit of whipped cream. You can taste it cold letting it to cool and adding ice cubes.

Per questa preparazione abbiamo usato Tè Nero Darjeeling ma potete usare il vostro preferito...vogliamo consigliarvi di provare i tè di Dammann Frères, davvero ottimi! Li potete trovare nei negozi specializzati o nell'e-shop sul loro sito.

For this recipe we used Black Darjeeling Tea but you can use your favourite one...we just would suggest you to try Dammann Frères teas, really great! You can find them in specialized shops or on their e-shop site.

Zucchero speziato / Spiced Sugar


ZUCCERO SPEZIATO / SPICED SUGAR

Oggi proponiamo un'idea davvero semplice per addolcire questi giorni di Inverno: lo zucchero speziato.
Il procedimento è davvero più che facile: basta procurarsi dello zucchero bianco tradizionale (semolato), le spezie in polvere che più preferite e dei vasetti da conserva ben puliti e asciutti.

Today we propose a simple idea to sweeten these Winter days: spiced sugar.
The process is so simple: just get the traditional White sugar, powdered spices you prefer and jars thoroughly clean and dry.


Zucchero alla Vaniglia: prelevate i semi di mezzo bacello di vaniglia e mescolateli con circa 200 gr di zucchero, riponete il tutto con il bacello privato dei semi nel vasetto e chiudete bene (se usate la vaniglia per fare i vostri dolci ricordate di non buttare mai il bacello senza semi, ma aggiungetelo allo zucchero, ne accentuerà l'aroma!). Questo zucchero è perfetto per gli impasti di frolle e biscotti o anche spolverizzato su una macedonia di frutta.

Vanilla Sugar: take the seeds of half a vanilla pod and mix with about 200 gr sugar, put the sugar and the pod in the jar and close well (if you use vanilla to make your sweets, don't throw the pod away but Always putting it in your sugar to accentuate the aroma!). This sugar is perfect in shortpastries and cookies mixtures or sprinkled over a fruit salad.


Zucchero alla cannella: mescolate due cucchiaini di cannella in polvere con circa 200 gr di zucchero, mettete tutto nel vasetto e chiudete bene. E' davvero delizioso nel latte caldo, nella cioccolata o spolverizzato su pane tostato.

Cinnamon Sugar: mix two teaspoons of cinnamon powder with about 200 gr sugar, put in the jar and close well. It is great with warm milk or chocolate, or sprinkled on toasted bread.


 Zucchero alle 5 Spezie Cinesi (anice stellato, zenzero, chiodi di garofano, cannella, finocchio) : mescolate 2 cucchiaini delle 5 spezie in polvere con circa 200 gr di zucchero, mettete tutto nel vasetto e chiudete bene. E' ottimo per aromatizzare tè o caffè, per dolci e biscotti...noi l'abbiamo usato anche per fare il gelato!

Sugar at 5 Chinese Epices (ginger, star anise, fennel, cloves, cinnamon): mix two teaspoons of your powdered spices with about 200 gr sugar, put in the jar and close well. It is excellent for flavouring tea or coffe, sweets and cookies...we also use to make ice-cream!

 

Assaggiate i vostri zuccheri e aggiungete più spezie se li preferite più aromatizzati e divertitevi a provare le vostre combinazioni!
