Cioccolato bianco con frutti di bosco, noci, mandorle e fiori / White chocolates with berries, nuts, almonds and flowers



L'Autunno è arrivato, l'aria è un po' più fredda, il cielo un po' più grigio, le foglie cominciano a cadere...ci vuole un po' di cioccolato magari con i frutti di bosco (ma quanto ci piacciono?! Promesso, è l'ultimo post con mirtilli e more...per ora!), noci brasiliane e mandorle tostate (con lo zucchero a velo alla vaniglia...buonissime) e i fiori di erba pepe, profumatissimi (ci ricordano i profumi di montagna).
P.S.Sono andati a ruba...ma la stagione è solo all'inizio!

Autumn is here, the air is a bit cooler, the sky is a little more grey, the Leaves begin to fall...you need a bit of chocolate maybe with berries (how we love them?! Promised, is the last post with blueberries and blackberries...for the moment!), brazilian nuts and almonds (toasted with vanilla icing sugar...gorgeus) and pepper herb flowers, so fragrant (they remember us the scents of mountain).
P.S. They went like hot cakes...but the season is just beginning!


Ingredienti
500g cioccolato bianco
180g mirtilli e more circa
180g frutta secca circa
fiori eduli
zucchero a velo alla vaniglia
sale in scaglie

Tagliare il cioccolato in piccoli pezzi e fonderlo a bagno-maria  con un pizzico di sale in scaglie (perfetto per esaltare il sapore del cioccolato).
(Ciò che rende il cioccolato lucido è il temperaggio che solitamente si fa fondendo il cioccolato a 40°C, lavorandolo con una spatola su un piano di marmo per portare la temperatura a 26/27°C e riportando la temperatura a 30°C circa. Se questa operazione non viene fatta correttamente il burro cacao tende ad affiorare creando una patina bianca in superficie. Per semplificare il procedimento vi suggeriamo di scogliere il cioccolato senza superare i 40°C, di versarlo subito  negli stampi e di consumarlo entro 2/3 giorni dalla preparazione).


Versare il cioccolato fuso (senza grumi) in stampi di silicone per ottenere una forma ben definita ( o rivestite gli stampi con pellicola per una forma più mossa come in foto), battere leggermente gli stampi sul piano di lavoro per evitare bolle d'aria e decorare a piacere. Noi abbiamo scelto more e mirtilli per un'esplosione di sapore, noci brasiliane e mandorle tostate in padella finche ben dorate con un cucchiaio circa di zucchero a velo alla vaniglia (buonissime anche come snack!), per un tocco croccante e i fiori di erba pepe, profumatissimi (adoriamo il loro profumo!) e perfetti con il cioccolato bianco.
Lasciate riposare per 15/20 minuti a temperatura ambiente e almeno 30/40 minuti in frigorifero (o fino al momento di servire).



Da fare e rifare con il cioccolato che più preferite e con ciò che più vi ispira, per esempio: cioccolato al latte con arachidi tostate e salsa al caramello salato (buonissimo).
Sono perfetti da mangiare da soli o in compagnia, magari per una serata con amici, dopo il caffè con un goccio di grappa o cognac (se piace)...sarà sicuramente un dolce Autunno. Enjoy...


Ingredients
500g White chocolate
180g blueberries and blackberries (about)
180g nuts (about)
edible flowers
vanilla icing sugar
salt flakes

Cut the chocolate into small pieces and melt it in a bain-marie with a pinch of salt flakes (perfect to enhance the chocolate flavor).
(What makes the chocolate shiny is the tempering that is usually made by melting the chocolate at 40°C, working it with a spatula on a Marble surface to lower the temperature at about 26/27°C and to take it to 30°C. If this operation is not done correctly the cocoa butter will surface, creating a White coating. To simplify the process we suggest you to melt the chocolate without exciding the 40°C, to pour immediately into the molds and to consume it within 2/3 days from the preparation).


Pour the melted chocolate (without lumps) into silicone molds to obtain a well defined shape (or sleeve the molds with film to get a moved shape like in photos), beat gently the molds on the work surface to avoid any air bubbles and decorate as desired. We used brazilian nuts and almonds that we have toasted in a pan with about a tbspoon of vanilla icing sugar until Golden brown (so good as a snack too), for a crunchy touch, berries for a burst of flavor and flowers of pepper herb, so fragrant (we love their flavor!) and perfect with White chocolate. Let stand for about 15/20 minutes at room temperature and at least 30/40 minutes in the refrigerator (or until ready to serve).


To make and remake with the chocolate you like best and with all that inspires you more, for example: milk chocolate, toasted peanuts and salted caramel sauce (love it).
They are perfect to be enjoyed alone or in good company, maybe for an evening with friends, after coffee accompanied by a shot of cognac or grappa (if you like). It will definetly be...a sweet Autumn. Enjoy...

Bavarese di gelato alla vaniglia con salsa alle more e balsamico / Bavarian vanilla ice-cream with blackberries and balsamic sauce


Arriva il weekend e ci vuole qualcosa di dolce, meglio se facile da preparare! Cosa ne dite di una bavarese di gelato alla vaniglia (golosissima) con salsa di more e aceto balsamico?

Here comes the weekend and we want something sweet, preferably easy to make! What do you think about a bavarian vanilla ice-cream (luscious) with blackberries and balsamic vinegar sauce?


Ingredienti
250g gelato alla vaniglia
250ml panna fresca
9g colla di pesce (fogli di gelatina)

salsa di more (ricetta)

(1 bicchiere di latte per una bavarese più compatta)

La preparazione è davvero semplice: far ammorbidire il gelato lasciandolo fuori dal frigor finche avrà raggiunto la temperatura ambiente. Mettere i fogli di gelatina in acqua fredda per qualche minuto o finche morbidi. Scaldare 1/3 di panna (non portare a bollore) e montare la rimanente (non aggiungiamo zucchero perché il gelato è già dolce). Amalgamare bene la panna montata e il gelato, strizzare la colla di pesce e dissolverla nella panna calda. Versare immediatamente nel mix di gelato e panna montata e amalgamare bene mescolando dal basso verso l'alto (il composto di panna(gelato non deve essere assolutamente freddo per evitare che si formino grumi).
Versare il composto in uno stampo da budino o in stampi mono porzione e riporre in frigorifero per almeno 5/6 ore.


Con questo procedimento otterrete una bavarese piuttosto cremosa, per una bavarese più compatta (come quella in foto, simile alla panna cotta) scaldare a fuoco basso il gelato e la panna senza portare a bollore, a parte scaldare un bicchiere circa di latte senza portare a bollore e sciogliervi i fogli di gelatina (precedentemente ammorbiditi in acqua fredda e strizzati). Amalgamare i due composti mescolando dal basso verso l'alto, versare nello stampo da budino, lasciare riposare e una volta raffreddato riporre in frigorifero per almeno 5/6 ore.


Servire con salsa alle more (profumatissima) ...ma anche con salsa al caramello salato o cioccolato fuso e ovviamente potete prepararla con il gusto di gelato che più preferite e creare diverse combinazioni. Fresco, profumato e goloso...un dessert perfetto per l'inizio d'Autunno quando il sole è ancora caldo e l'Estate non sembra poi così lontana. Enjoy...

Un consiglio: potete preparare il gelato fatto in casa (ricetta) o usarne uno artigianale, se non trovate quello alla vaniglia optate per un gusto classico e aggiungete i semi di una bacca di vaniglia alla panna.


Ingredients
250g vanilla ice-cream
250ml fresh cream
9g fish glue (gelatin sheets)

blackberries sauce (recipe)

(a glass of milk for a more compact bavarian)

The preparation is very simple: soften the ice-cream leaving it out of the freezer until it reaches the room temperature. Put the gelatin sheets in cold water for a few minutes or until soft. Warm 1/3 of cream (not boil) and whisk the remaining cream (we do not add sugar because the ice-cream is very sweet). Mix well the whipped cream to ice-cream, squeeze the fish glue and dissolve in the warm cream. Immediately pour the cream into the ice-cream mixture and stir from bottom up mixing well (the ice-cream should not be cold to avoid lumps).
Pour the mixture into a pudding mold or portions molds and refrigerate for at least 5/6 hours.


With this process you will get a bavarian rather creamy, if you prefer a more compact bavarian (like the one in the pictures, like a panna cotta) cook over low heat the cream with the ice-cream without taking to boil, separate heat a glass of milk (not boil) and melt the gelatin sheets into it (previously soften in cold water and squized). Mix the two compounds stirring from the bottom up, pour into the mold and let stand bringing to room temperature. Refrigerate for at least 5/6 hours.



Serve it with blackberries sauce (so scented)...but also with salted caramel sauce or melted chocolate...and of course you can prepare it with the ice-cream flavor you prefer creating different combinations. Fresh, fragrant and really delicious... a perfect dessert for the early Autumn when the sun is still warm and Summer does not seem so far away. Enjoy...

A tip: you can prepare homemade ice-cream (recipe) or use an artisan one, if you don't find vanilla flavor opt for a classic taste and add the seeds of one vanilla pod to the cream.

Macedonia di fine Estate con salsa alle more, aceto balsamico e vaniglia / Late Summer fruit salad, with blackberries, vanilla and balsamic vinegar sauce


L'Estate sta finendo...e anche quest'anno è volata, ma c'è ancora tempo per ritrovare i suoi sapori e profumi in ricette...veloci e golose come questa, suggerita dalla FROLLA dello scorso post: una macedonia di pesche e more, con robiola fresca ( o ricotta, ma anche gelato alla vaniglia per un tocco più goloso), fiori di erba pepe (ne adoriamo il profumo...e li ritroverete ancora, con il cioccolato bianco!) e una salsa di more con vaniglia e aceto balsamico. Assolutamente fresca, leggera e profumata...l'Estate in una ciotola!

The Summer is ending...and it flew away so fast this year too, but threre is still time to find its scents and flavors in some recipes...fast and gorgeus, like this one, suggested by the PIE of the last post: a fruit salad with peaches, blackberries, fresh robiola (or ricotta, or vanilla ice-cream for a more delicious touch), herb pepper flowers (we love their scent...and you will find them again, with White chocolate!) and a blackberries sauce with vanilla and balsamic vinegar. Absolutely fresh, light and perfumed...Summer in a bowl!



Ingredienti
pesche
more
robiola fresca (o ricotta)
fiori eduli
per la salsa
250g more
1 cucchiaio di zucchero a velo
1/2 bacca di vaniglia
un goccio di aceto balsamico
qualche goccia di limone

Prepararla è semplicissimo!
Lavare 250g di more per la salsa, cuocerle in padella a fuoco basso con un cucchiaio di zucchero a velo (la dose dipende dalla maturazione delle more, una volta aggiunti tutti gli ingredienti assaggiate e se necessario aggiustate la dolcezza aggiungendo più zucchero), i semi e mezza bacca di vaniglia (da rimuovere prima di passare al mixer), un goccio di aceto balsamico e poche gocce di limone. Quando la salsa comincia ad addensarsi, versare tutto in un bicchiere ad immersione e frullare. Passare al setaccio per eliminare i semi e lasciare riposare (si può servire calda o fredda ed è perfetta per tante preparazioni...anche con lo yogurt, il gelato, biscotti e torte di frolla ecc.).


Il resto è tutto in discesa!
Lavare la frutta, affettare le pesche e disporle in una ciotola con le more, qualche fiore edule e piccole palline di robiola fresca (ricotta, o gelato per un dessert leggero). Aggiungere la salsa (calda o fredda) al momento di servire. Ovviamente potete usare la frutta che più preferite e aggiungere ciò che più vi ispira...noci, crumble di frolla, cereali...ecc.!
Perfetta da mangiare alle calde luci di Settembre, meno chiassose e più romantiche (magari con un cucchiaio in legno che profuma di bosco) ma anche come portata di passaggio tra il secondo e il dolce (se come noi userete il formaggio).

blackberries
fresh robiola (or ricotta)
edible flowers
for the sauce
250g blackberries
1 tbspoon icing sugar
1/2 vanilla pod
a drop of balsamic vinegar
few drops of lemmon

Prepare it is so easy!
Wash the berries (250g) for the sauce, cook in a pan over low heat with a tbpoon of icing sugar (the dose depends on the ripening of the berries, once you had add all the ingredients for the sauce just taste and if necessary adjust the sweetness adding more sugar), the seeds and half a pod of vanilla (the pod must be removed before mixing) a dash of balsamic vinegar and few drops of lemmon. When the sauce begin to thicken, pour into an immersion glass and blend.
Pass the sauce through a sieve to remove all seeds and let stand (you can use it warm or cold for several preparations...also delicious with yoghurt, ice-cream, cookies, tarts...and more).


The rest is downhill.
Just wash the fruit, slice the peaches and place them with berries in bowls adding some edible flowers, little balls of fresh robiola (a creamy and velvet fresh cheese, you can use also ricotta or vanilla ice-cream for a light dessert). Add the sauce (warm or cold) when you will serve it. Of course you can use the fruit you prefer and add all that inspires you more...nuts, cookies crumble, cereals and more!
Perfect to eat in the warm lights of September, less noisy and more romantic (maybe with a wooden spoon that smells of Woods)...but also as a passage between the main course and the dessert (adding fresh cheese of course).
