Live in the sunshine (Aperitivo di in inizio Estate)/Powered by Exquisa

Si dice che dedicare del tempo a noi stessi sia essenziale per renderci più felici o quantomeno più appagati, bisogna ridere, fare ciò che più ci piace (senza sensi di colpa e varie ed eventuali), liberare la mente, il corpo e l'anima per lasciare spazio e sentirsi più leggeri (ripetendo ooohm), vivere nuove avventure o rilassarsi all'ombra di una palma (quando possibile). Così quando arriva il weekend ci prendiamo il tempo per goderci un aperitivo in compagnia, mentre il sole inizia a nascondersi dietro le piante del giardino e le luci si fanno romantiche e soffuse, i gelsomini incominciano a diffondere nell'aria il loro profumo e i ritmi si fanno più lenti e rilassati. Quando arriva l'Estate. Quando le serate si riempiono di profumi che arrivano dall'orto, di vino bianco fresco, di candele e ricordi di vacanze, di onde e di sole sulla pelle, di vento che è volato via veloce e momenti semplici che restano nel cuore.  
Oggi vi raccontiamo di un aperitivo fresco, leggero, pieno di colori, sapori e profumi ma soprattutto facile da preparare...e lo facciamo insieme a NOA (creme spalmabili fatte con verdure, legumi, spezie ed erbe aromatiche, vegane, senza glutine e senza aromi, fresche e saporite)...
Aperitivo di inizio Estate con uova fritte e tuorlo fondente.
E nella borsa della spesa di oggi colori, profumi d'Estate e tanto sapore con NOA.



Ingredienti (a piacere)
uova
pane in cassetta
farina00
burro/olio di semi
gomasio
crema lenticchie curry NOA
crema hummus di ceci NOA
crema peperoni e fagioli NOA
crema hummus di ceci e erbe NOA
pomodori
sedano
mozzarella di bufala campana
olive
cipolla rossa di Tropea
limone
olio evo (Pugliese)
erbe aromatiche
sale (Maldon)/sale al limone

Preparare l'aperitivo è molto semplice e potete naturalmente variare secondo i vostri gusti o i prodotti di stagione che più preferite.
Portare a bollore l'acqua e cuocere le uova per 6 minuti, farle raffreddare in acqua e giaccio, nel frattempo stendere con il mattarello le fette di pane in cassetta (meglio se fatto in casa, noi abbiamo usato un pane ai semi misti) e tagliare dei dischi con un taglia pasta. Non buttate gli scarti del pane, eliminate la crosta, frullate la mollica e tenete da parte.



Cuocere i dischi di pane in forno a 220°C grill per pochi minuti su entrambi i lati finche ben tostati (potete usare delle schiacciate, dei crostini o pane tostato se preferite). Spellare le uova e passarle prima nella farina, poi nell'uovo sbattuto e infine nel pane frullato (il pane crea una panatura croccante e dorata) e friggerlo in olio di semi o d'oliva ben caldo con un una noce di burro finche ben dorati (per la frittura ci sono diversi metodi, noi abbiamo fritto le uova in olio di sesamo -circa 1/2 cm in padella- con una noce di burro per non farlo bruciare e rigirato le uova per farle dorare su tutta la superficie).



Disporre le uova croccanti su foglie di sedano (molto belle per decorare) e servire con le salse NOA, le olive, i pomodorini con il basilico, il sedano tagliato a bastoncini, la mozzarella di bufala campana, il limone, l'olio evo, la cipolla di Tropea affettata finemente, i crostini di pane, le erbe aromatiche che preferite (noi abbiamo usato: basilico, basilico viola, finocchietto selvatico, menta del Marocco, santoreggia ed erba cipollina), sale Maldon e sale al limone (ma potete usare il sale che preferite, il sale al limone l'abbiamo preparato semplicemente aggiungendo della scorza di limone al sale che deve riposare in un contenitore ben chiuso).



Lasciate che i vostri ospiti si divertano abbinando profumi e sapori: il tuorlo fondente, il contrasto della panatura croccante, il sapore deciso delle salse NOA, il profumo delle erbe, un filo di olio e un pizzico di sale creano insieme un mix di consistenze e sapori davvero buono, fresco e molto estivo...da provare assolutamente, magari con un bicchiere di vino bianco fresco. 



L'idea in più: preparate della piadine (noi amiamo farle in casa come queste nella foto) e servitele calde da farcire a piacere per creare un pranzo veloce o una cena easy da condividere, semplice e leggera (perfetta con il caldo di questi giorni) mozzarella, pomodori, basilico... e le salse NOA ad aggiungere quel tocco aromatico in più.



Le salse NOA sono ricche di sapore, pronte all'uso e davvero versatili, ecco alcuni consigli per arricchire le ricette estive:
.NOA lenticchie e curry è un mix di dolce e piccante davvero intrigante, perfetto per mantecare e aggiungere un tocco speziato a una zuppa estiva
.NOA hummus di ceci ed erbe è molto aromatico, perfetto per creare dei piccoli falafel (aggiungendo ceci tritati, scorza di limone e pane grattugiato)
.NOA hummus di ceci è delicato ma gustoso, emulsionato con olio, succo di limone, pepe e sale diventa l'ingrediente perfetto per creare un dressing per le insalate estive
.NOA peperoni e fagioli ha un sapore deciso, perfetto per arricchire veggies burger preparati con le verdure di stagione, erbe aromatiche, scorza di limone e racchiusi in soffici panini caldi.



Ma provatele anche con verdure crude in pinzimonio, per arricchire il couscous o da servire con carne e verdure grigliate.



Note
.Disponete le uova nell'acqua con delicatezza per evitare di rompere il guscio.
.Una volta messe a bollire rigiratele su se stesse per un minuto circa.
.Aggiungete il gomasio (insaporitore a base di semi di sesamo) al pane frullato per dare più gusto alla panatura.
.Fate una doppia panatura per un effetto ancora più croccante ripassandole due volte nell'uovo e nel pane frullato.
.Preparate gli ingredienti poco prima di servire per mantenerne la freschezza.
.Rilassatevi e godetevi la serata.

It is said that devoting time to ourselves is essentiel to make us happier or at least more comfortable, we must laugh, do more of what we like (without senses of guilt and various and possibly), free the mind, the body and the soul to leave space and feel lighter (repeting ooohm), live new adventures or relax in the shade of a palm (when possible). So is when the weekend comes that we love to take some time to enjoy an aperitif ,pheraps in company, while the sun begins to hide behind the garden plants and the lights become more romantic and soft, the jasmins begin to spread their perfume in the air and the rhythms become slower and relaxed. When Summer comes. When the evenings are filled with scents coming from the garden, fresh White wine, candles and Holiday memories, waves and Sunshine on the skin, the wind that flies fast and simple moments that stay in the heart. Today we talk about an aperitif fresh, light, full of colors, flavors and scents, but above all easy to prepare...and we do it with Noa (spreads made with veggies, legumes, spices and herbs, vegan, gluten-free and without aromas, light, fresh and tasty).
Early Summer Aperitif with fried eggs  and fondant yolk. And in today's shopping list colors, Summer perfumes and so much taste with NOA.


Ingredients (to taste)

Prepare the aperitif is very simple and you can naturally vary according to your taste or favorite season products. Bring the water to a boil and cook the eggs for 6 minutes, cool them in water with ice in the meantime roll the slices of bread (better if homemade bread, we used a bread with mixed seeds) and cut disks with a round cutter. Do not throw away the bread waste, remove the crust, mix with the blender  and keep aside. Bake the bread disks in the oven at 220°C grill for a few minutes on both sides until they are well toasted (you can also use creackers, croutons or toasts if you prefer).



Peel the eggs, flour them, whip in the mixed egg and then into the squeezed bread (you'll get a crisp and Golden brown panure) and fry them in olive oil or seeds oil with a nut of butter until Golden (there are several methods of frying, we have used sesame oil, about 1/2cm in the pan with the butter to prevent it burning and roll the eggs to make them Golden all over the surface).



Place the eggs on celery Leaves (very nice to decorate) and serve with the NOA creams, olives, cherry tomatoes with basil, chopped selery sticks, buffalo mozzarella, lemon, evo oil, finely sliced Tropea onion, toasted bread, aromatic herbs (we use basil, purple basil, Moroccan mint, wild fennel, chestnut and chives), Maldon salt and lemon salt (or what you prefer, we simply prepared lemon salt adding lemon zests and let it rest in a close container).



Let your guests enjoy combining scents and flavors, soft yolk, crunchy panure, the deep taste of the NOA cream, the herbs, a drop of oil and a pinch and all together will create a mix of tastes and flavors really good, fresh and summery...absolutely to taste, maybe with a glass of cold White wine.
One more idea: serve hot "piadinas" (we love to make homemade like these in the picture) they will be perfect for a quick lunch or an easy dinner to share, mozzarella, tomatoes, basil and the NOA creams to add an extra aromatic note.




The NOA spreads are rich in flavor, ready to use and really versatile and here are some tips to enrich the Summer recipes:
.NOA lentils and curry is a mix of sweet and spicy very tasty, perfect to add a spicy note to the Summer soups
.NOA chickpeas and herbs hummus is very aromatic, perfect to make small falafel (adding chopped chickpeas, lemon zests and grated bread)
.NOA chickpeas hummus is delicate but tasty,  emulsified with evo oil, lemon juice , salt and pepper becomes the perfect touch to create a dressing for Summer salads
.NOA peppers and beans has a deep flavor, perfect for enriching veggies burgers prepared with seasonal vegetables, aromatic herbs, lemon zests wrapped in a fluffy warm loaf.
But also try them with raw veggies, to enrich the couscous or serve with grilled meat and veggies.



Note:
.Put the eggs gently into the water to not break the egg shells.
.Once in water mix contantly to move the eggs for just a minute.
.Add some gomashio (a sesame seed flavor) to give more taste to the panure.
.Make a double panure to get a more crunchy result just rolling twice the eggs in the mixed egg and in to bread.
.Prepare the ingrendients just before serving to keep them fresh.
.Relax and have a good time.

RamenAmen



For ramen lovers...

Metti una domenica di Maggio, di sole e aria fresca con il cielo terso senza neanche una nuvola, direzione Milano, fuori con gli amici foodlovers e bloggers, per pranzo ramen (per chi non lo sapesse è un piatto tipico della cucina giapponese a base di tagliatelle - noodles - servito con brodo, uova marinate, alghe, carne o pesce e insaporito con miso, salsa di soia e molto altro, esistono diversi tipi di ramen in base agli ingredienti usati e alla zona geografica dalla quale provengono e vengono solitamente divisi in quattro categorie: il ramen shio con brodo chiaro e leggero, il tonkotsu con color bianco nuvola, fatto con ossa di maiale, il shoyu, con salsa di soia che rende il piatto saporito ma leggero al palato e il miso dal sapore robusto e intenso).  
E ramen sia, dopo le nostre  mille prove casalinghe di miso, soia, aceto di riso, noodles, zenzero, pollo caramellato e uova marinate (con una spruzzata di lime che ci piace tanto) abbiamo provato Zazà ramen (uno dei migliori ramen di Milano secondo Gualtiero Marchesi, e se lo dice lui noi ci crediamo): zona centrale con balconi e terrazze in fiore ovunque, il locale è molto rilassante e il servizio cordiale (i Giapponesi hanno una simpatia e una gentilezza innata), il menu propone stuzzichini, ramen, dolci e una scelta di birre giapponesi, pasta  servita nel brodo fatta in casa con farina macinata a pietra e tre condimenti per insaporire: miso (a base di salsa di soia fermentata), shoyu (con salsa di soia e katsuobushi) e shio (con alghe konbu). Abbiamo ordinato un kani ramen (con polpa di granchio, uovo morbido marinato, mini mais, verdure asiatiche, alghe nori, pasta fresca e brodo di pesce con pesto di zenzero fresco) insaporito con shoyu, buonissimo...ingredienti freschi e di qualità, il brodo profumato e saporito, leggermente piccante e aromatico



 e un ramen sette polpette (con polpette di manzo e maiale alle 7 spezie shichimi togarashi, uovo morbido marinato, insalata orientale, cipollotto rosso, pasta fresca e brodo di carne) insaporito con miso, intenso e corposo, a detta del mio partner in crimes le migliori polpette mangiate fino ad ora.



Nota di merito per l'uovo marinato...che buono è?! Morbidissimo, una consistenza difficile da descrivere, è da assaggiare assolutamente (niente a che fare con quello che prepariamo noi a casa...miglioreremo...Zazàramen...ci date la ricetta?). Abbiamo poi preso un matcha tiramisù, leggero e profumato e dal tocco occidentale. Il conto ci è sembrato giusto a fronte di ingredienti freschi e zona centrale.
L'unica nota dolente...ma quanto costano i parcheggi a Milano?! Troppo davvero, ogni volta troppo.
E adesso non ci resta che provare il menu estivo!

Nota per chi negli anni '80 si guardava un sacco di cartoni animati...ecco perché Giuliano era sempre da Marrabbio a leccarsi i baffi!

On a Sunday in May, with the sun and fresh air, and a clear sky wothout even a cloud, heading for Milan, out with foodlovers and bloggers friends, ramen for lunch (for those who didn't know it's a typical dish of the Japanese food served with broth, noodles, marinated eggs, algae, meet or fish and flavored with miso, soy and more, there are different types of ramen based on the ingredients and the geograohical area they come from and are usually divided into 4 categories: shio ramen with light and pale broth, the tonkotsu with White cloud colored broth made with pork bones, the shoyu with soy sauce that makes the dish tasty but light on the palate and miso with a strong and intense taste. And ramen we go, after our thousand homemade trials of rice miso, soy sauce, rice vinegar, noodles, ginger, caramelised chicken and marinated eggs (with a squeeze of lime that we love) we tried Zazàramen (one of the best ramen in Milan according to Gualtiero Marchesi, and if he says this, we believe it), central Milan with balconies and flowering terracies all around, a relaxing location and a corteus service (Japanese are innatly nice and kind), the menu proposes appetizers, ramen, dessert and a selection of Japanese beers, the pasta served with broth is homemade with ground flour and there are three seasonings to flavor: miso (with fermented soy sauce), shoyu (with soy sauce and Katsuobushi) and shio (with Kombu algae). We tasted a Kani ramen (with crab meat, marinated soft egg, mini maize, asian veggies, algae nori, fish broth with with  fresh ginger pesto) flavored with shoyu, delicious, made with fresh and quality ingredients, a scented and intense broth, slightly spicy and aromatic and a 7 meatballs ramen (with 7 meatballs of beef and pork with 7 spices shichimi togarashi, marinated soft egg, oriental salad, red onion, fresh pasta and meat broth) flavored with miso, intense and deep taste, according to my partner in crimes the best meatballs eaten so far. Merit note for the marinated egg, how good is it?! Very soft, a texture difficult to describe, absolutely to taste (nothing to do with wath we prepare at home, we'll do better...Zazàramen would you please give us the recipe?). And we tasted a matcha tiramisù, a dessert fresh and light with an occidental touch. The bill seemed right 'cause of the fresh ingredients and the central area.
There's  just a sore note...how much are the car parks in Milan??!! Too much, every time, too much.
And now we have to taste the Summer menu!
