Schiacciata / "Smash"



A volte basta davvero poco per creare in cucina.

Ingredienti
150 gr farina 00
1 cucchiaio di olio e.v.o.
1 tazzina da caffè di acqua calda
una presa di sale
un goccio di latte
semi (sesamo, papavero, girasole)
sale in grani



Sometimes it takes "very little" to create in the Kitchen.

Ingredients
150 gr flour 00
1 tablespoon oil e.v.o.
1 coffecup of hot water
a handful of salt
seeds (sesame, poppy, sunflower)
a drop of milk
salt in grains



Setacciare la farina, unire il sale e mescolare. Formare la "fontana" al centro e aggiungere un cucchiaio d'olio e l'acqua calda, amalgamare con una forchetta e continuare impastando con le mani fino ad ottenere un panetto liscio e morbido al tatto ( se l'impasto risulta appiccicoso aggiungere farina, se risulta "duro" aggiungere acqua poco alla volta). Prendere parte dell'impasto e stendere bene (su carta forno) con un mattarello, deve diventare sottile come un foglio di carta. Spennellare la superficie con un filo di latte e cospargere di semi (quelli che preferite) e sale in grani e premere bene perché aderiscano alla schiacciata. Ripetere l'operazione con il resto dell'impasto. Infornare a 180°C (preriscaldato statico sopra e sotto) per circa 18/20 minuti o finche ben dorata. Sfornare, lasciare raffreddare e servire con salumi e salse per un aperitivo informale (perfetta se servita spezzata in sacchetti di carta del pane!), con zuppe e vellutate, come snack sfizioso e, se vi piace il dolce e salato, con formaggi, miele e marmellate. Enjoy!

  

Sift the flour, add a handful of salt and mix. Forme the "fontaine" in the centre of the flour and add a tablespoon of oil and hot water, start to mix with a fork and continue kneading with your hands to obtain a dough smooth and soft to the touch ( add more flour if the dough is sticky or water little at a time if it's "hard").
Take part of the dough and roll out well (on parchment paper) with a rolling pin, it must become as thin as a sheet of paper. Apply with a brush a little milk on the surface and sprinkle with seeds (your favourite) and salt in grains and press so they can adere well to the schiacciata (smash). Bake at 180°C (preheated static top and bottom) for about 18/20 minutes or until Golden brown. Remove from oven, let it cool and serve with good ham and sauces for an informal drink or appetizer (perfect served broken in paper bread bag!), with soups, as a tasty snack or, if you like sweet and savory, with cheese honey and marmelades. Enjoy!

Tortine al limone con mandorle / Lemon Pies with almonds



Anche oggi piove e la giornata è davvero grigia, proviamo a illuminarla almeno un po' con questa ricetta che per noi è una certezza: ci fa fare sempre bella figura! Tortine al limone con mandorle...il limone non manca mai a casa nostra e torneremo a parlare di lui (scegliete dei buoni limoni non trattati).

Per la frolla
500 gr farina per dolci
3 tuorli
120 gr zucchero alla vaniglia
250 gr burro freddo
2 cucchiaini di lievito per dolci

Mescolare con le fruste i tuorli e lo zucchero fino ad ottenere un composto denso e spumoso. Setacciare farina e lievito " a fontana" e mettere al centro i tuorli con lo zucchero e il burro freddo a pezzetti e impastare fino ad ottenere un panetto liscio e compatto. Avvolgere la pasta nella pellicola trasparente e lasciare riposare in frigorifero almeno 30 minuti. Nel frattempo preparare il ripieno al limone.

For the pastry
500 gr cake flour
3 egg yolks
120 gr vanilla sugar
250 gr butter (cold)
2 teaspoons baking powder

Mix the sugar and the yolks with an electric whisk until mixture is puffy and fluffy. Sift flour and baking powder making a "fontain", put inside yolks, sugar and cold butter in pieces and knead until your pastry is smooth and compact. Wrap the pastry in plastic wrap and let rest in refrigerator for at least 30 minutes. Meanwhile prepare the filling with lemon.



Per il ripieno al limone
100 gr di burro fuso
4 uova grandi o 5 uova piccole
50 gr di mandorle a filetti
la scorza di 2 limoni
succo di 1 limone se le preferite più dolci o di 2 limoni se le preferite più aspre
180 gr zucchero

Fondere il burro, aggiungerlo a uova, zucchero, scorza e succo di limone e sbattere con le fruste elettriche per qualche minuto finche tutto è ben amalgamato.

For the filling with lemon
100 gr melted butter
4 big eggs or 5 small eggs
50 gr Almond in strips
zest of two lemons
juice of 1 lemon if you prefer sweeter or 2 lemons if you prefer more sour
180 gr sugar

Melt the butter, add it to the eggs, sugar, zest and lemon juice and beat with an electric whisk for a few minutes until everything is well blended.



Stendere la frolla (non troppo spessa) e metterla nei pirottini per tortini ( o nella teglia da torta se preferite) foderati di carta forno, fare dei buchi sulla base con una forchetta, versare il ripieno al limone e cospargere con le mandorle a filetti. Cuocere a 200° C in forno preriscaldato (statico sopra e sotto) per circa 20/25 minuti o finche ben dorata (ogni forno cuoce in modo diverso perciò la prima volta controllate la cottura di tanto in tanto e se vi sembra che il ripieno scurisca troppo e la pasta non sia ancora cotta continuate la cottura con statico solo sotto). Sfornare, lasciare raffreddare, cospargere con un velo di zucchero a velo se vi piace e servire! EnJoy!

Roll out the pastry (not too thick) and place in the pans for pies (or in a cake pan if you prefer) lined with oven paper, make some holes on the base of the pastry with a fork, pour the lemon mixture and sparkle with almonds. Bake in preheated oven at 200° C (static top and bottom) for about 20/25 minutes or until Golden brown (every oven cooks differently so for the first time check from time to time and if it seems that the filling is too dark and the dough not well cooked continue cooking with static just under.) Remove from oven, allow to cool and sprinkle with a little icing sugar if you like and serve. EnJoy!

Potete scegliere la forma che più preferite, all'interno troverete una morbida crema profumata al limone...

You can choose the shape you prefer, you will find a soft cream flavored with lemon inside...


P.S. Se vi avanza dell'impasto potete surgelarlo e usarlo all'occorrenza o fare dei biscotti per la colazione.

If you have left over pastry you can frozen and use it when necessary or do some cookies for breakfast.

P.P.S. Non è buona e genuina come quella fatta in casa...ma se siete di corsa e proprio non avete tempo potete sostituire la frolla con quella surgelata e seguire lo stesso procedimento di cottura...ma se proprio non avete tempo!!!

It is not good and genuine as the homemade pastry...but if you're just running and you do not really have time you can replace it with the frozen one and follow the same cooking process..but if you really have not time!!!

Zabaione al Calvados / Zabaione with Calvados



Qualche anno fa siamo stati in Normandia e Bretagna, dove abbiamo visitato indimenticabili località e scoperto e assaggiato molti prodotti tipici come il Calvados (Appellation d'Origin Controllèe):
un distillato di sidro di mele (realizzato nell'omonimo dipartimento della bassa Normandia), invecchiato in botti di quercia, molto profumato e dal colore dorato. Il suo aroma è, per noi, ideale per aromatizzare lo zabaione: una densa e fragrante crema, una vecchia ricetta che si presta a molte reinterpretazioni.

A few years ago we had been in Normandie et Bretagne, where we visited unforgettable places and discovered and tasted many local products as Calvados (Appellation d'Origin Controllée) : a distilled apple cider (made in the homonimous department of lower Normandy) aged in oak barrels, very fragrant and Golden in color. Its aroma is, for us, ideal to spice up the zabaione (eggnog) :a thick and fragrant cream, an old recipe that lends itself to many interpretations.


Ingredienti
6 tuorli
3 cucchiai di zucchero alla vaniglia
2 cucchiai di Calvados
Mescolare con le fruste elettriche i tuorli con lo zucchero  fino ad ottenere un composto gonfio e spumoso. Cuocere a bagno-maria (l'acqua non deve essere troppo calda), aggiungere il Calvados poco alla volta ( se non lo avete potete sostituirlo con il Marsala o ciò che più preferite) e continuare a mescolare con le fruste. Lo zabaione è pronto quando è denso e la crema "vela" il cucchiaio. Servitelo caldo con cialde o biscotti o magari accompagnatelo ad un semifreddo. Enjoy!
P.S. Posteremo la ricetta di uno zabaione salato...seguiteci!

6 egg yolks
3 spoons vanilla sugar
2 spoons Calvados
Mix with an electric whisk the egg yolks and sugar until the mixture is puffy and fluffy. Cook in a bain-marie ( water shouldn't be too hot), add Calvados little by little (of course if you have not, you can replace it with Marsala or whatever you prefer) and stirring constantly with the whisk. The zabaione (eggnog) is ready when it is thick and cream "veil" the spoon. Serve warm with wafers or biscuits or perhaps to accompany a parfait. Enjoy!

Table Decor


Table Decor
Ecco un'idea semplicissima per l'allestimento della tavola.
Se avete ospiti, non avete caraffe o decanter e non volete apparecchiare con bottiglie di plastica (o brutte bottiglie!) ecco la nostra soluzione: tenete qualche bottiglia di vetro vuota di vino o birra (nei negozi ce ne sono di tantissime forme, alcune davvero carine!) togliete l'etichetta e lavatele bene (si prestano a mille utilizzi). Vi suggeriamo di creare delle etichette con del cartoncino e di personalizzare con frasi e pensieri. Potete anche utilizzarle come porta candele o vasi di fiori (ma di questo ne parleremo più avanti)...e come al solito divertitevi a crearne per l'acqua, il vino (e molto altro) e per ogni occasione! Enjoy!


Here is a so simple idea for the preparation of the table.
If you have guests, you don't have carafes or decanters and you don't want to set with plastic bottles (or ugly bottles!) here is our solution: keep few empty bottles of wine or beer (in shops there are so many shapes, some really cute!), remove the label and wash them well (lend themselves to many uses). We suggest you to create labels with card and to personalize them with phrases and thoughts.
You can also use them as candle holders or vases of flowers (but we'll talk about that later!). As usual have fun creating your bottles for wine, water (and much more!) and for every occasions!

Cuori di Cioccolato / Chocolate Hearts


Cuori di cioccolato
E' lunedì e fuori piove (da qualche parte nevica!) : facciamo i cuori di cioccolato!

Sciogliere circa 150 gr di cioccolato a bagno-maria ( quello che preferite: fondente, al latte o bianco) con un pizzico di sale. Nel frattempo preparare la carta forno su un piano che non si rovini con il calore. Quando il cioccolato è ben fuso prelevatene un po' con un cucchiaino e create i cuori (o la forma che volete)lasciando scivolare il cioccolato sulla carta muovendo continuamente il cucchiaino (potete anche creare delle scritte). Se volete fare dei chupa chups di cioccolato preparare alcuni stecchi di legno (ricordando di tagliare la punta!) ben distanziati sulla carta forno e fare lo stesso procedimento coprendo bene con il cioccolato un'estremità dello stecco. E ora divertitevi a decorarli: con frutta secca (nocciole, mandorle, pistacchi...) con briciole di meringa, biscotto o torta, frutta disidratata e molto altro! Noi abbiamo scelto cioccolato fondente con: mirtilli rossi, mandorle tostate, meringa rosa e briciole di torta al cioccolato...potete anche usare cioccolato bianco e fondente insieme per creare giochi di colore.
Lasciateli raffreddare...sono un'idea carina da servire con il caffè, come decorazione per i vostri dolci, come regalo (bellissimi per S.Valentino!) e divertenti per i più piccoli da sciogliere nel latte. Enjoy your chocolate hearts!


Chocolate Hearts
It' Monday and it's raining (somewhere snowing!): we do chocolate hearts!

Melt about 150 gr chocolate in a bain-marie (the one you prefer: dark, milk, White) with a pinch of salt. Meanwhile prepare the parchment paper on a plan that does not come off with heat. When the chocolate is well melted pick a little bit with a teaspoon and create your hearts (or the shape you want) dropping the chocolate gently on the paper moving the teaspoon continuosly (you can also create written). If you want to make chocolate chupa chups prepare some wooden sticks (rember to cut off the tip!) well-spaced on the oven paper and do the same procedure but covering well with chocolate one end of the stick. And now have fun decorating them: with nuts (hazelnuts, almonds, pisatchios...) with crumbled meringue, cookies or cake, dried fruits and much more!We chose dark chocolate with: cranberries, toasted almonds, crumbled rose meringue and chocolate cake...you can also use White and dark chocolate together to create games of color. Let them cool...they are a nice idea to serve with coffee, as a decoration of your sweets, as a gift (beautiful for Valentine's Day!) and very funny for children to dissolve in milk. Enjoy your chocolate hearts!




 

 






Ciò che rende il cioccolato liscio e lucido è il temperaggio che si fa sciogliendo il cioccolato a 40° C, lo si stende con una spatola su un piano di marmo per abbassare la temperatura a 26/27°C e la si riporta a 30°C...se non siete esperti usate il nostro procedimento il giorno stesso o il giorno prima perché se il cioccolato non è fuso alla giusta temperatura con il tempo tende ad opacizzarsi.

What makes the chocolate shiny and smooth i tempering that is made by melting chocolate at 40° C, then poured on a Marble plan and applied with a spatula to low the heat to 26/27° C and then bring to 30°C...if you are not experienced follow our procedure the same day or the day before you have to use the hearts beacause chocolate can become opaque if it is not melted at the right temperature.
