Focaccine al farro e profumi d'Estate/Powered by Exquisa

Se ci dovessimo trasferire e lasciare l'Italia siamo certi che una delle cose che ci mancherebbe di più sarebbe entrare in una panetteria che profuma di pane caldo e cose buone e comprare un pezzo di focaccia soffice, non troppo alta, leggermente unta di olio in superficie, un buon olio aromatico che insieme al sale croccante crea una combinazione di sapori semplicissima ma unica. Per cui non potevamo non buttarci con le mani in pasta (e lievito) per trovare la nostra ricetta della focaccia fatta in casa, che prepariamo da anni ormai e che è uno dei nostri comfort food preferiti. Oggi vi raccontiamo di focaccine soffici al farro con i profumi e i sapori del nostro orto: zucchine, pesto ai tre tipi di basilico e il tocco leggero e cremoso di Exquisa light.
Per preparare le focaccine ci vuole solo un po' di pazienza per la lievitazione (che da sempre grandi soddisfazioni) e richiede pochi minuti di cottura in forno, ma se siete fra quelli che il forno lo riaccenderanno solo ai primi segni d'Autunno, abbiamo pensato anche a voi con tante idee facili e leggere pronte in cinque minuti (anche meno...continuate a leggere per scoprirne di più).
E nella spesa di oggi il tocco leggero di Exquisa light e un giro nell'orto per raccogliere  profumi e  sapori d'Estate.



Ingredienti (per 6 focaccine circa)
200g farina di farro
100g farina tipo1
150ml acqua frizzante
4g lievito madre secco
2g malto diastasico
2 cucchiaini rasi di sale
1 cucchiaino raso di zucchero
175g Exquisa light
pesto q.b.
2 zucchine circa
olio evo q.b.
sale Maldon



Setacciare le due farine, unire il lievito e il malto diastasico e mescolare bene, aggiungere il sale e lo zucchero e amalgamare. Aggiungere l'acqua frizzante tiepida a filo lavorando l'impasto con il gancio per circa 10 minuti o finche inizierà ad incordare (se non avete l'impastatrice lavoratelo velocemente con i palmi delle mani per evitare che si scaldi troppo, altrimenti risulterà pesante dopo la cottura). Disponete l'impasto (che deve essere liscio e molto morbido) in una terrina nella quale possa raddoppiare di volume coperto con pellicola (non a contatto) e lasciatelo lievitare in forno spento per almeno due ore. Riprendete l'impasto e lavoratelo di nuovo su un piano infarinato con i palmi delle mani velocemente, stendetelo a rettangolo e ripiegatelo su se stesso. Rimettetelo a lievitare come in precedenza per 2/3 ore circa. Stendete l'impasto su un ripiano infarinato creando una base di circa 1,5cm  di spessore e con un coppa pasta rotondo infarinato formate le focaccine. Disponetele su placca precedentemente rivestita di carta forno (spennellata di olio) ben distanziate e lasciatele lievitare per un'ora circa. 



Nel frattempo affettate le zucchine molto sottili (con mandolina o sbuccia patate), create una cavità al centro delle focaccine, versate un cucchiaino di pesto (noi lo prepariamo con il basilico comune, il basilico riccio e il basilico viola, olio extravergine d'oliva, grana e pecorino grattugiato, pinoli e un pizzico di sale al pestello, ma se preferite usare il mixer ad immersione aggiungete dei cubetti di ghiaccio per evitare che il basilico si ossidi) e un cucchiaio di Exquisa light, create una rosa di zucchine avvolgendo le fette sottili su se stesse e premetele sulle focaccine nascondendo il ripieno all'interno, sarà una piacevole sorpresa.



Infornate per circa 8/10 minuti o finche ben dorate (la cottura dipende dal forno), sfornate e lasciate intiepidire o raffreddare se preferite e prima di servire spennellatele con olio evo e aggiungete un pizzico di sale (noi abbiamo usato il sale in scaglie Maldon). Sono perfette per mille occasioni: un pranzo veloce, un brunch domenicale, un pic-nic in campagna o dopo una passeggiata in montagna, o da portare con voi in spiaggia. Sono davvero soffici, ben lievitate e saporite e il ripieno fresco, leggero e cremoso di Exquisa light, pesto e zucchine profuma di Estate e buoni pensieri, di vacanze, di ricordi, di sole e giornate che vorresti non finissero mai. Ovviamente potete provarle (e riprovarle) in mille modi e in tutte le stagioni.








Ancora un'idea se vi avanzano zucchine (o non volete usare il forno) mescolate Exquisa light con del basilico, menta e fiori di zucchina (se li avete) tritati grossolanamente, sale, curcuma e pepe nero e un filo di olio evo, affettate le zucchine creando delle strisce sottili, disponetele una sull'altra (circa 4) e spalmatele con il formaggio cremoso, arrotolatele su se stesse e create dei mini roll (potete aggiungere gli ingredienti che più preferite) magari da servire con le bacchette in legno da gustare crudi o passati in padella per pochi minuti.


 
Oppure mescolate Exquisa light con basilico e fiori di zucchina tritati, grana grattugiato, sale e pepe e preparate i mini roll come sopra infilateli su stecchi di legno e avrete degli ottimi spiedini che potrebbero piacere molto anche ai più piccoli, cospargeteli di grana grattugiato e aggiungete un filo di olio evo e passateli pochi minuti in forno con la funzione grill (o sul barbeque se preferite), provati...buonissimi, sono finiti in un attimo.



E ancora...frullate con il mixer ad immersione Exquisa light con zucchina (non troppa perché è acquosa), pesto, pepe, peperoncino fresco se piace e un po' di scorza di limone...servite con un filo di olio evo e qualche crostino di pane come aperitivo o usate la crema per saltare la pasta in padella con qualche dadino di zucchina e potrete servire un piatto fresco e appetitoso. Con gli stessi ingredienti tante idee facili facili e molto gustose per un'Estate leggera, fresca ma davvero golosa.



Note
.Se avete intolleranze potete usare la farina senza glutine o Exquisa senza lattosio.
.Potete creare giochi di colore e sapore aggiungendo altre verdure estive come le melanzane e i peperoni.
.L'olio ligure è leggero e profumato, perfetto per la focaccia.
.Se preferite potete cuocere le focacce nello stampo da muffin, conferendo così una forma lievitata verso l'alto.
.Aggiungete un buon vino bianco fresco e buona Estate a tutti!

Aperitivo estivo / Summer aperitif

If we were to move and leave Italy we are certain that one of the things we would miss most would be to enter a bakery that smells of warm bread and good things and buy a piece of soft focaccia , which smells of good evo oil with a bit of crisp salt on the surface, a combination of simple yet unique flavors. So we had to "put" our hands in dough (and yeast)to find our homemade recipe that we have been preparing for years and that is one of our favorite comfort food of ever. Today we tell of spelled mini focaccia with scents and flavors from our veggies garden: pesto with three types of basil, zucchini and the fresh and creamy touch of Exquisa light. Prepare the focaccia id very simple, it takes a bit of patience for the leavening, but a well rised dough gives Always great satisfaction and it takes not so much time for the baking...but if you're among those that will use the oven only at the first hints of Autumn, well you can also find three delicious recipes with just the same ingredients.
And in Today's shopping list the fresh touch of Exquisa light and a ride in the garden to pick up Summer flavors and scents.


 

Ingredients for about 6 foccaccias
200g spelled flour
100g flour1
150ml sparkling water
4g dry mother yeast
2g diastatic malt
2 teaspoons of salt
1 teaspoon of sugar
175g Exquisa light
pesto as enough
about 2 zucchini
extravergin olive oil
Maldon salt

Sift the two flours, add yeast and diastatic malt and mix well, add salt and sugar and mix well again. Add warm sparkling water little at a time while working the dough with the hook for about 10 minutes or until it starts to twist (if you don't have the kneader, work it fast with your palms to prevent it getting too hot otherwise it will be heavy after cooking). Place the dough (that needs to be smooth and very soft) in a bowl where it can double the volume covered with film (not in contact) and let it rise in the oven (off) for at least 2 hours). Then take the dough  and work it quickly with the palms on a floured floor, give it a rectangle shape and fold it on it. Let it rise as above for another 2/3 hours. Then place the dough on a floured tle creating a base of 1,5cm thick and with a floured round past cutter make your focaccias. Place them well spaced on a oven plate (covered with oven paper brushed with oil) and let them rise for about an hour.



In the meantime slice the zucchini (with mandolin or potatoes peeler), then create a basin in the center of the foccaccias and add a teaspoon of pesto (we prepare it with common basil, curly basil and purple basil, evo oil, pine nuts, pecorino and parmesan cheese and a pinch of salt with the pestle, but if you prefer to prepare it with the mixer add some ice cubes to not oxidize the basil) and a spoon of Exquisa light, create a rose of zucchini wrapping the slices on themselves and position them on the focaccias slightly pressing and hiding the filling inside, it will be a pleasant surprise. Bake at 200°C (ventilated/grill) for about 8/10 mins or until well Golden brown, let them warm or cool down if you prefer and brush the surface with a good evo oil and and sprinkle with a pinch of big salt (we used Maldon salt flakes) just before serving. They are perfect for a thousand occasions: a quick lunch, a Sunday brunch, a pic-nic in the countryside or after a long walk in the Mountains, or even on the beach. They are really fluffy, well leavened and absolutely tasty with the fresh, light and creamy filling of Exquisa and pesto fragrance that smellsof Summer and good thoughts, of Holidays, memories, sun and days you would never end. Obviously you can try (and re-try)the recipe in a thousands ways and in all Seasons.



One more idea: if you have some zucchini left or if you are looking for a five minutes (even less) recipe just mix Exquisa light with coarse chopped basil, mint and zucchini flowers (if you have), salt, curcuma and black pepper and a drop of evo oil. Place the zucchini one on top of the other (4 slices), spread the creamy cheese mix and roll over to make zucchini mini rolls, maybe to serve with wood chips raw or just panfried for a few mins.
Or mix Exquisa light with chopped basil and zucchini flowers, grated Parmesan cheese, salt and black pepper, make mini rolls as above and stuff them over a steak, sprinkle with Parmesan cheese and a bit of evo oil just before baking (with grill function) for about 5 mins (or on the bbq if you prefer) and you'll get super tasty skewers...we tried and they ended up in a moment (and they also like to the little ones).
And once again mix Exquisa light with the mixer with zucchini (not too much because they are watery), pesto, pepper. fresh chili if you like and a bit of lemon zests and serve with toasted bread and a bit of evo oil for an aperitif or use the cream to season fresh pasta with some panfried zucchini cubes and you'll get a fresh and light maincourse. With the same ingredients a lot of easy easy ideas very tasty for a fresh, light but very gorgeus Summer.

.If you have intolerance problems you can use gluten-free flour or Exquisa without lactose.
.You can create colors and flavors games by adding other Summer veggies as eggplants or peppers.
.Ligurian oil is fragrant and light, perfect for the focaccia.
.If you prefer you can bake the focaccia in the muffin molds, giving them a leaved vertical shape.
