Risotto d'Autunno (light) con finferli e nero di seppia/Powered by Exquisa

E poi arriva l'Autunno. Le luci si fanno più soffuse, l'aria più frizzante e i colori caldi e accoglienti. Finalmente la stagione delle zucche, delle zuppe per cena, del camino acceso e del tè caldo con i biscotti, dei maglioni di lana lavorati e di frolle e marmellate profumate.
E mentre le foglie cominciano a cadere creando palette di colore meravigliose noi ci coccoliamo con un piatto di risotto caldo e cremoso, uno dei nostri comfort food preferiti (sarà forse perché abitiamo vicino a una zona di risaie) oggi proposto in una versione light perché mantecato con Exquisa Fitline uno spalmabile con solo lo 0,2% di grassi (così pensiamo anche alla linea senza dimenticarci del sapore), i funghi finferli che sono un must di stagione per noi, il loro colore è così irresistibile,



(visti al mercato e presi immediatamente, il fungo ha qualcosa di magico, sarà per la sua forma, o perché cresce nei boschi o forse perché sembra uscito da un libro di storie per bambini), e il tocco deciso del nero di seppia, come un piccolo ricordo d'Estate, una pennellata di intenso in un piatto bello, facile e gustoso, con pochi grassi ma tanto sapore. 
E con la spesa di oggi profumiamo la casa d'Autunno: funghi, riso e il tocco delicato di Exquisa Fitline.


Ingredienti (per 4 persone circa)

per il brodo
acqua
sedano
carota
cipolla bianca
prezzemolo
sale grosso
funghi secchi

300g riso carnaroli
olio evo
1 bicchiere divino bianco per sfumare
175g Exquisa Fitline
pepe e sale

funghi finferli freschi q.b.
olio evo
vino bianco per sfumare
sale pepe

a piacere
nero di seppia
fiori di erba pepe
prezzemolo tritato
pistilli di peperoncino

Preparare un brodo vegetale classico con sedano, carota e cipolla, prezzemolo e sale (per conferire più sapore aggiungere qualche fungo secco). Tostare il riso in poco olio extravergine d'oliva mescolando con un cucchiaio di legno (noi usiamo il carnaroli che ha un chicco perfetto per i risotti),



sfumare con un buon vino bianco e quando la parte alcolica sarà evaporata coprire con il brodo (che deve essere sempre in ebollizione per non fermare la cottura del riso). Mescolare e continuare ad aggiungere il brodo poco alla volta (lasciandolo assorbire) finche il riso sarà cotto. Mentre il risotto sta cuocendo dedicatevi ai funghi, abbiamo scelto i finferli che hanno un sapore delicato e un bellissimo colore dorato, ma potete usare quelli che più preferite, è la loro stagione e anche se l'Estate è stata davvero torrida sui banchi del mercato se ne trovano di bellissimi e buonissimi. Affettate i funghi (precedentemente puliti con spelucchino e pennello, non lavateli con acqua, i funghi sono come  spugne e perderebbero tutto il sapore) e saltateli in padella con un filo di olio evo, aglio se vi piace, sale, pepe, una sfumata di vino bianco, cuoceteli a fuoco medio alto per qualche minuto e aggiungete un po' di brodo se necessario (noi li amiamo un po' croccanti e non troppo cotti), una volta tolti dal fuoco aggiungete un goccio di brodo al loro fondo di cottura e fate ridurre la salsa a fiamma alta.


E' un modo semplicissimo ma molto gustoso di prepararli perfetto anche come contorno. Togliere il riso dal fuoco quando avrà raggiunto la giusta cottura e mantecare con Exquisa Fitline mescolando velocemente ottenendo una mantecatura leggera ma molto cremosa, salare se necessario e se piace aggiungere un po' di pepe nero macinato fresco (se preferite potete aggiungere poco formaggio grana grattugiato che è sempre utile per insaporire). Quindi impiattare il risotto, battere il fondo del piatto perché il riso possa adagiarsi delicatamente, aggiungere i funghi saltati in padella, un po' di fondo di cottura, qualche goccia di nero di seppia(precedentemente scaldato in padella con una goccia di brodo per stemperarlo leggermente) e finire il piatto con prezzemolo fresco tritato e qualche fiore di erba pepe (se lo avete) o pistilli di peperoncino...



E' un piatto che merita un assaggio: il risotto cremoso, la dolcezza dei funghi, la freschezza del prezzemolo, l'intensità del nero di seppia e l'aroma di questi fiori che profumano di montagna, o dei pistilli di peperoncino che danno una nota piccante, una ricetta che racconta di ricordi di vacanze e nuovi inizi, un piatto che sa come scaldare il cuore. Semplice, gustoso, molto bello e soprattutto light e i vostri ospiti non se ne accorgeranno nemmeno.





L'idea in più: con gli stessi ingredienti potete creare mille varianti, molto appetitose e soprattutto veloci...una delle nostre preferite è il crostone di pane caldo (che è un Fall/Winter absolutely to make...potremmo scrivere un poema sul pane caldo e il suo inebriante profumo), con un po' di spalmabile Exquisa e i funghi profumati e fumanti appena saltati in padella, un modo semplicissimo e golosissimo di godersi i sapori autunnali. Aggiungete un uovo in camicia e un pizzico di paprika piccante per stamparvi il sorriso sulle labbra per tutta la giornata e divertitevi a creare tavolozze d'Autunno con qualche ricordo d'Estate da condividere magari in compagnia del camino acceso. Sweet little things of (Autumn) life.

Note:
.Se i funghi sono molto sporchi aiutatevi pulendoli delicatamente con una panno umido pulito.
.Quando togliete dal fuoco il riso per mantecare aggiungete anche un mestolo di brodo, aiuterà a rendere ancora più cremoso il vostro risotto.
.Se amate gli impiattamenti più creativi potete passare il piatto con una pennellata di nero di seppia.
.Se avanzate del brodo sarà perfetto per preparare una zuppa o una vellutata da mantecare con Exquisa.
.Con gli stessi ingredienti potete servire anche un ottimo piatto di pasta mantecato con lo spalmabile Exquisa e saltato in padella con i funghi freschi (provato, buonissimo).
.Servite il piatto ben caldo con un calice di vino bianco fresco e buon appetito.

And then comes Fall. The lights are softer, the air is more sparkling, and colors are warm and welcoming. Finally the season of pumpkins, soups for dinner, fireplace and warm tea with cookies, of tricot wool sweaters and fragrant pastries and jams. And while the Leaves begin to fall, creating wonderful color palettes we serve a warm and creamy risotto, one of our favorite comfort food (maybe 'cause we live near an area of rice fields) suggested in a light version 'cause creamed with Exquisa Fitline a spread with only the 0,2% fat (so we also think to the line without forgetting the taste), fresh chanterelle mushrooms, that are a must for us, their color is so irresistible (found at the local market and immediately bought, mushrooms have something magical, perhaps because of their shape, or because they grow in the Woods, or maybe because they look like they're coming out from a book of children's stories), and the touch of squid ink, as a little reminder of Summer, a splash of intensity in a nice, easy and tasty dish, low in fat but with so much flavor. And with Todays' shopping we perfume home of Autumn: mushrooms, rice and the light touch of Exquisa Fitline.


Ingredients (for about 4 persons)

for the broth
water
celery
carrot
onion
parsley
dried mushrooms

300g Carnaroli rice
175g Exquisa Fitline
evo oil
1 glass of White wine to glaze
salt and black pepper

chanterelle mushrooms
evo oil
White wine to glaze
salt and black pepper

to taste
squid ink
frsh chopped parsley
flowers of herb pepper (aromatic herb)
chili pistils

Prepare a vegetable classic broth with celery, onion, carrot, parsley and salt (to give more flavor you can also add some dried mushrooms, just a few). Toast the rice in a pan with a bit of extravergin olive oil stirring with a wooden spoon (we use the Carnaroli rice which has a grain ideal for preparing risotto).



Deglaze with White wine and when the alcoholic part has evaporated cover with broth (which has Always to be on the boil for not stopping the cooking). Stir and continue to add the broth little at a time (as the rice absorb it) until it is cooked.  While the risotto is cooking go with the mushrooms, we choose the chanterelles which have a mild flavor and a beautiful Golden color, but you can use the ones you prefer, is their Season and althought Summer has been very hot on the market stalls there are beautiful and yummy ones. Slice the mushrooms (previously cleaned with paring knife and brush, don't use water because they're like a sponge and they will lose all their flavor) and fry in a pan with a bit of evo oil, a clove of garlic if you like, salt, black pepper, glaze with White wine, cook over medium high heat for a few minutes and add a little bit of broth if necessary (we love them  crunchy and not overcooked), once removed from the heat add a splash of broth to their cooking liquid and reduce the sauce over high heat. It's a very simple but really tasty way to prepare them even for a garnish. Remove the rice from the heat when it reaches the right cooking and stir quickly adding the Exquisa Fitline spread to get a light but very creamy risotto, if necessary add salt and ground black pepper if you like (you can also add just a pinch of grated Parmesan cheese to flavor and thicken).



Then serve immediately, pouring the rice on the plate, beat on the bottom of the dish to lay gently the creamy rice, add mushrooms, their cooking juice, a few drops of black squid ink (previoulsy heated in a pan with a drop of broth to dilute it) and finish the dish with chopped fresh parsley, and a few flowers of herb pepper (if you have them) or chili pistils...is a dish that deserve a taste: creamy risotto, the sweetness of mushrooms, the parsley freshness, the intensity of squid ink, the aroma of the flowers that smell of mountains, or the chili pistils who donate a spicy note, a recipe that tells of memories of holidays and new beginnings, a dish that knows how to warm the heart. Simple, very cute, tasty and above all low in fat and your guests won't even notice it.



One more idea: with the same ingredients you can create a thousand variations very yummy and especially fast, one of our fave is the warm toasted bread (which is a Fall/Winter absolutely to make, we could write a poem about bread and its heady scent) with some fragrant mushrooms and Exquisa Fitline, an easy way to enjoy the flavors of Autumn. Add a poached egg with a pinch of spicy paprika for print you a smile throughout the day and have fun creating Autumn palettes (with some Summer memories) to share maybe in the company of the fireplace. Note:
.If mushrooms are too dirty help you to clean them gently with a wet (clean) cloth
.When you remove the rice from the heat add a bit of broth, it will help to get a very creamy risotto.
.If you love to be creative you can brush the dish with the black squid ink.
.If you have some broth left you can use it to prepare soups or creams to velvet with Exquisa.
.With the same ingredients you can also serve an excellent pasta creamed with Exquisa and panfried with mushrooms.
.Serve the dish hot with a cool glass of wine and bon appetit.
