Christmas Cookies!


Only in the darkness you can see the light of the stars.

Trovare le parole, soprattutto quelle giuste non è facile. La vita non va sempre come vorremmo ma deve andare avanti, nel modo migliore possibile, con tutti quei piccoli semplici momenti che rimarranno sempre (e per sempre) nel cuore.
C'è amore nel preparare i biscotti con qualcuno o per qualcuno, c'è gioia nel condividerli con la famiglia e gli amici.
Oggi vi proponiamo i nostri biscotti di Natale buonissimi (e profumatissimi) e perfetti da usare come decorazioni perché un po' di atmosfera al momento ci sembra come una calda coperta sotto la quale niente può succedere.

There is love in preparing cookies with someone or for someone and there is joy in sharing them with family and friends.
Today we suggest you our Christmas Cookies, delicious (and really fragrant)and perfect to be used as decorations because a bit of atmosphere at the moment it seems like a warm blanket under which anything can happen.


Ingredienti (per circa 30 stelle)
225g farina per dolci
125g burro
70g zucchero alla vaniglia
3 cucchiaini di cacao in polvere
1 pizzico di sale
1 pizzico di pepe nero
1 pizzico di noce moscata
2 cucchiaini di cannella in polvere
1/2 cucchiaino di chiodi di garofano in polvere
1 cucchiaino di zenzero in polvere

Preparare questi biscotti è semplicissimo: setacciare la farina e il cacao, aggiungere le spezie (quelle che preferite), lo zucchero, il sale e mescolare bene. Aggiungere il burro freddo a pezzetti e impastare fino ad ottenere un impasto liscio e compatto. Il cacao conferirà uno splendido colore intenso.
Avvolgere l'impasto nella pellicola e lasciare riposare in frigorifero circa 30 minuti.


Stendere la frolla con il mattarello su un piano di lavoro infarinato fino ad uno spessore di pochi millimetri (se pensate di appenderli non fateli troppo sottili). Tagliare i biscotti con lo stampo o gli stampi che preferite (noi usiamo ancora la stella, la nostra preferita) e se avete lo stampo con le lettere divertitevi a scrivere parole e messaggi, noi abbiamo scelto "love", non poteva essere altrimenti. Se pensate di appenderli fate un foro su ogni biscotto con uno stecco in legno.



Cuocere i biscotti in forno preriscaldato a 180°C statico sopra e sotto per 15 minuti circa (ogni forno lavora in modo diverso perciò tenete sotto controllo la cottura). Sfornare e lasciare raffreddare. Potete decorare con cioccolato fuso o con la glassa e servirli con un te o una cioccolata calda o se preferite usarli come decorazioni basta essere creativi: un filo colorato, una corda, pigne o bacche...da usare in mille modi, non solo da appendere ma anche come una bellissima idea regalo fatta in casa. Perfetti se volete coinvolgere anche i bambini, perché soprattutto loro meritano di vivere il bello e il buono del Natale. Enjoy...the sweet little things of life.

Ingredients (for about 30 stars)
225g cake flour
125g butter
70g vanilla sugar
a pinch of salt
a pinch of black pepper
a pinch of nutmeg
3 teaspoons of cocoa powder
2 teaspoons of cinnamon powder
1/2 teaspoon of cloves powder
1 teaspoon of ginger powder

To prepare these cookies is very simple: sift the flour with cocoa, add the spices (the spices you like), sugar, salt and mix well. Add the cold butter into small pieces amd knead to a smooth and compact dough. The cocoa will give a beautuful intense color. Wrap the dough in the film and let stand in the fridge for about 30 minutes.




 Roll out the dough with the rolling pin on a floured work surface until a few millimetres thick (if you plan to hang them do not make them to thin). Cut out the cookies with the mold or molds you prefer (we use the star again, our favorite) and if you have the mold with letters have fun to write words and messages...we chose "love", could not be otherwise. If you plan to hang them make a hole on each cooky with a wood stick.


Bake the cookies in preheated oven at 180°C static top and bottom for about 15 minutes (every oven works differently so check them out while cooking). Remove from the oven and let cool, you can decorate with melted chocolate or icing and serve them with a warm tea or hot cocoa or if you prefer to use them as decorations...just be creative: a colored thread, a rope, pinecones or berries...and you can use them in many ways, not just to hang on but also as a wonderful homemade gift idea. Perfect if you want to ehgage your children because they deserve to live the beauty and goodness of Christmas. Enjoy... the sweet little things of life.

Insalata d'Autunno con pere caramellate e raspadura / Autumn salad with caramelized pears and raspadura



E dopo le Sinful Chocolate Bars (avete dato un'occhiata alla ricetta? Sono golosissime!) qualcosa di più leggero: un antipasto che ci piace tantissimo e che profuma d'autunno con pere caramellate, raspadura, erbe aromatiche e una vinegrette al miele e aceto balsamico. Di lei (la raspadura) vi avevamo già parlato tempo fa, è un prodotto tipico della nostra zona, il Lodigiano ed è buonissima. Sfoglie di formaggio grana (il Tipico Lodigiano, prodotto solo nella provincia di Lodi) ottenute dalla raspatura delle forme giovani di questo formaggio. Soffici, sottili e gustose sono perfette da servire in coni di carta per l'aperitivo (da mangiare assolutamente con le mani), per arricchire risotti e zuppe e per creare piatti stuzzicanti come questo.


And after the Sinful Chocolate bars (have you checked out the recipe? they are luscious!) something lighter: an appetizer that we like so much and smells of Autumn with caramelized pears, raspadura, aromatic herbs and a vinegrette made with honey and balsamic vinegar. We have already spoken about it (the raspadura) time ago: it is a typical product of the area where we live, the Lodigiano (Lombardy-Italy) and is really delicious! Sheets of cheese creating by the rasping of Young shape of Tipico Lodigiano cheese (produced only in the province of Lodi). Thin, soft and tasty and perfect to be served in paper cones with an aperitif (to eat absolutely with your hands), but also to enrich risottos and soups or to create tasty recipes like this one.

Lavare le pere e bollirle in acqua a fuoco medio (potete aromatizzare l'acqua con erbe aromatiche o spezie a piacere), il tempo di cottura dipende dalla maturazione e dal tipo di pere che userete, vi consigliamo di controllare la cottura con la punta di un coltello (le pere devono essere morbide ma non troppo cotte per evitare che si rompano quando verranno caramellate in padella). Noi abbiamo usato delle pere Abate non troppo panciute che abbiamo cotto per circa 10 minuti. Rimuovere le pere dall'acqua e lasciare riposare per qualche minuto (potete rimuovere la buccia oppure lasciarla)


Mentre le pere riposano preparare i piatti con un po' di raspadura, le foglie di insalata (quella che preferite, noi abbiamo usato la valeriana) e foglie fresche di origano, maggiorana e mentuccia (o delle erbe aromatiche che preferite).
Preparare in un vasetto ben pulito gli ingredienti per la vinegrette: olio extravergine d'oliva, aceto balsamico, miele (d'acacia), sale e un po' di senape per aggiungere una nota piccante e tenere da parte. (Le dosi dipendono da quanti piatti dovete realizzare e dal vostro gusto personale, assaggiate e fidatevi del vostro palato).


Mettere un po' di acqua in padella con il miele, un pizzico di sale e un po' di aceto balsamico (non troppo) e cuocere a fuoco medio fino ad ottenere una salsa densa e ambrata, aggiungere le pere (precedentemente tagliate a fette e private del torsolo) e caramellare per qualche minuto su ogni lato.
Disporre le pere nei piatti e cospargere (a piacere) con fiori di erba pepe (ci piacciono tantissimo perché profumano di montagna, questi sono gli ultimi per quest'anno perciò ne approfittiamo). Chiudere il vasetto con gli ingredienti per la vinegrette e shekerare fino ad ottenere una salsa per condire l'insalata giusto prima di servire.


Un antipasto (ma anche un pranzo veloce) dolce, salato e aromatizzato dalle erbe pronto da servire e da ripetere con tanti altri ingredienti come la frutta secca o le castagne. E visto che non è mai troppo presto per pensarci potrebbe essere un'idea anche per il menu di Natale, servito con qualche crostino caldo con patè de fois gras e con i prodotti di stagione, un piatto stuzzicante, elegante e facile e veloce da fare (ed è anche leggero, così i vostri ospiti potranno godersi tutte le portate del menu). Ah, non dimenticate di lasciare un po' di raspadura sulla tavola (non è mai abbastanza) e di tenerne da parte un po' per voi (vederla fondere su un risotto o una zuppa è un vero piacere!)

Ingredients

extravergin olive oil
salt

Wash and boil the pears over medium heat (you can add herbs or spices to your choice to flavor the water), the cooking time depends on the maturity and the type of pears you use, so we advise to check them during cooking with the tip of a knife  (they have to be soft but not overcooked to avoid breakage when they will be caramelized in the pan) We used the Abbot pears, pretty thin and we cooked them for about 10 minutes. Remove the pears from the water and let stand a few minutes, you can leave the peel or remove it.


 While the pears rest prepare the dishes with some raspadura, salad Leaves (we used the valerian) and fresh oregano, marjoram and little mint Leaves (or herbs of your choice). In a jar prepare the ingredients for the vinegrette: extravergin olive oil, balsamic vinegar, some acacia honey, salt and a bit of mustard to give a spicy note. The doses depends on how many dishes you have to dress, taste and trust in your palate.


Put a drop of water in a pan with a pinch of salt, honey and balsamic vinegar (just a few)and cook over medium heat to thicken, when you've got an amber sauce add the pears (cutted into slices and without the core) and let them flavor and caramelize on each side for a few minutes. Arrange the pears on the plates and sprinkle with pepper herb flowers (to taste), we like themo so much beacuse they smell of mountain, these are the last for this year and we take advantage.
Close the jar and shake the ingredients for the vinegrette until you get a sauce and pour it as a final seasoning just before serving.


A starter (but also a quick lunch) sweet, salty and flavored with herbs ready to be served and repeated with other ingredients such us dried fruits or chestnuts. And since it's never to early to think about it, it could be a lovely idea for the Christmas menu, serve it with warm toasts with patè de fois gras and seasonal products and you will have a tasty, elegant, and easy & fast dish to make (it is also light so will allow your guests to enjoy all the courses of the menu). Oh, and don't forget to leave some raspadura on the table (it is never enough!) and to keep some aside just for you (see it melting on top of a warm risotto or a soup is a real pleasure!).

P.S. We know that raspadura isn't easy to find abroad, you can replace it with Parmesan cheese scales.
