Summer nights


Ah, le notti d'Estate!
"Decalogo" per superare indenni (o quasi) le notti insonni di questa pazza calda Estate.

Ah, the Summer nights!
"Decalogue" to overcome free (or almost) the sleepless nights of this crazy hot Summer.


.Lenzuola bianche, fresche, leggere e assolutamente stropicciate (no, non stiriamole!)
.Giusto due gocce di profumo (come Marylin ovviamente)...e non siate maliziosi...
.Un ventaglio, anche una vecchia cartolina può servire...a distrarci con ricordi di viaggi passati, bellissime vacanze e paesaggi indimenticati.
.Libri, libri e libri per tuffarsi ogni notte in nuove storie e avventure che fanno pensare e sognare.
.Ma se anche sfogliare le pagine diventa un'attività fisica troppo intensa
allora solo un po' di buona musica, quella giusta per accompagnarci fra le braccia di Morfeo.
.Non dimenticate una brocca d'acqua con ghiaccioli alla menta super rinfrescanti e se contando le pecore doveste accorgervi che cominciano ad essere troppe aggiungete qualche fiore di camomilla (può servire).



.White linens, fresh, soft and absolutely wrinkled (no, do not stretch them!).
. Just two drops of perfume (as Marylin of course)...and do not be malicious!
.A fan, also an old postcard may suffice...to distract us with memories of past trips, beautiful holidays and unforgetted landscapes.
.Books, books and books to dive every night into new stories and adventures that make us think and dream.
. But even if turn the pages become a too intense physical activity...then just a bit of music, the right one to accompany us into the arms of Morpheus.
.Do not forget a jug of water with mint icecubes, super refreshing, and if counting sheeps, you'll notice they're getting to many...add some chamomile flowers (can help).


E poi lasciamoci andare, l'Estate passa una volta sola e se il sonno non arriva tanto vale guardare le stelle e aspettare la magia del sole che sorge e l'inizio di un nuovo giorno magari tenendosi per mano...la brezza arriverà.
Buona notte, e non dimenticate di sognare (con gli occhi chiusi e anche aperti).

Ah...e se cade una stella?

And then take it easy, Summer passes only once and if sleep does not come might as well look at the stars and wait for the rising sun and the beginning of a new day maybe holding hands...the breeze will come.
Good night, and don't forget to dream (with closed eyes and opened too).

P.S. Fare i ghiaccioli alla menta (o alle erbe aromatiche/fiori eduli che preferite) è semplicissimo e sono un'idea carina anche per cene, cocktails e feste...
Lavare le erbe aromatiche e i fiori, disporli nel contenitore per cubetti di ghiaccio e versare l'acqua. Conservare in freezer per almeno 3 ore o finche ben ghiacciati. Servire con acqua o drink.


 P.S. Make icecubes with mint (or with the aromatic herbs/edible flowers you prefer) is so easy and they are a lovely idea also for dinners, cocktails and parties...
Clean the aromatic herbs and flowers, place them in the icecube box and pour the water. Keep them in freezer at least for 3 hours or until well iced. Serve them with water or drinks.

Croissants al pesto / Pesto croissants "Fast & Gorgeus"


Nella lista della spesa non dovremmo mai dimenticare di aggiungere la pasta sfoglia...si possono fare tante cose e, essendo già pronta, ci permette di risparmiare molto tempo. Il caldo di questi giorni sembra avere dato un po' di tregua perciò cosa ne dite di preriscaldare il forno per una ricetta davvero facile e stuzzicante? Croissants ripieni di profumatissimo pesto, provateli...vi stupiranno!

In the shopping list we should never forget to add the puff pastry...you can make many things and, being it readymade, saves us a lot of time. The heat of these days seems to have given a respite so, what do you think about preheating the oven for a really easy and tasty recipe? Savory croissants stuffed with a fragrant pesto, try them...they will amaze you!


Ingredienti
1 rotolo di pasta sfoglia (rotondo)
pesto
(basilico, olio evo, pinoli, sale, formaggio grana, aglio se piace)

Srotolare un rotolo di pasta sfoglia (rotondo), tagliarlo in spicchi regolari (6 o 8 ) e fare un taglio di circa 1cm nel centro di ogni spicchio lungo il bordo esterno (come in foto), aiuterà ad arrotolare e arrotondare la pasta ottenendo la classica forma del croissants. Disporre il pesto (uno o due cucchiaini) nel centro di ogni spicchio (vicino al taglio) e ripiegare la pasta cominciando ad arrotolare dal bordo esterno verso la punta. Sigillare le punte premendo leggermente e disporli ben distanti su placca con carta forno avvicinando le estremità di ogni croissants per ottenere la classica forma arrotondata. Li cuociamo senza spennellare con l'uovo per avere un aspetto più rustico.

 
Potete usare un pesto già pronto o prepararlo pestando foglie fresche di basilico con pinoli, formaggio grana grattugiato, sale in grani, olio extravergine d'oliva (buono) da aggiungere a filo e se vi piace un po' di aglio. Potete prepararlo con pestello e mortaio come vuole la tradizione o con un mixer ad immersione per un procedimento più veloce.
Cuocere in forno preriscaldato statico sopra e sotto a 200°C per 15 minuti circa o finche ben dorati. Sfornateli e lasciateli raffreddare. Potete ovviamente farcirli a piacere, magari con una composta di verdure di stagione o dargli la forma che preferite. Sono perfetti per un aperitivo o un brunch: semplici, profumano d'Estate e sono golosissimi...peccato che i nostri siano già finiti! Enjoy...

E se vi avanza il pesto...  sarà perfetto con spaghetti o con le classiche trofie... Comfortfood!


Ingredients
1 roll puff pastry (round)
pesto
(fresh basil Leaves, salt, pinuts, extravergin olive oil, parmesan cheese, garlic if you like)

Unroll a roll of puff pastry (round) and cut it into regular wedges (6 or 8) and make a cut of about 1cm in the center of each wedges along the outer edge (as in the photo) this will help you to roll up and round the dough to get the classic croissants shape. Place the pesto (1 or 2 teaspoons) on each slice (near the cut), fold them starting from the outer edge to the tip and seal the ends by pressing slightly. Place them well distant on a baking pan with oven paper and approach the tips of each croissants giving them the classic round form. We bake them without brush the egg to give a more rustic look.


You can use the readymade pesto or prepare it by yourself pressing fresh basil Leaves with salt in grains, pinuts, grated Parmesan cheese, extravergin olive oil (good) to add little at a time and a little bit of garlic if you like it. You can make it with pestle and mortar according to tradition or with a blender for a faster preparation.
Bake in preheated oven static top and bottom at 200°C for about 15 minutes or until Golden brown. Take out from the oven, let them cool and serve. You can of course stuff them according to your taste, maybe with a seasonal veggies jam or give them the shape you prefer. They will be perfect for an aperitif or a brunch: simply, Summer scented and really gorgeus, shame that our are already finished! Enjoy!

And if you have some pesto left it will be perfect with spaghetti (or "trofie" typical Italian pasta)...comfortfood!

Grissini di sfoglia alle erbe aromatiche / Puff pastry sticks with aromatic herbs "Fast & Gorgeus"


La pasta sfoglia già pronta è un piccolo trucco per fare preparazioni facili e golose...e mentre cuoce in forno ci si può rilassare magari godendosi un bellissimo tramonto in compagnia di amici (o della vostra dolce metà!).
Oggi prepariamo i grissini con erbe aromatiche, in Estate sprigionano profumi e sapori pieni di ricordi!

The readymade puff pastry is a little trick to make easy and gorgeus preparations...and while it is cooking in the oven you can have some relax maybe enjoying a beautiful sunset with friends (or your sweet half!).
Today we prepare puff pastry sticks with aromatic herbs, during Summer they emit scents and flavors full of memories!


Ingredienti
1 rotolo di pasta sfoglia rettangolare
erbe aromatiche a piacere
olio extravergine d'oliva
sale

Srotolare il rotolo di pasta sfoglia, spennellare metà della superficie con un filo di olio extravergine d'oliva cospargere con le erbe aromatiche tritate e un pizzico di sale (abbiamo usato: basilico, mentuccia e erba pepe, un mix che adoriamo ma potete provare diverse combinazioni usando le vostre erbe preferite).
Ripiegare la pasta facendo combaciare la parte spennellata con quella non spennellata e premere con un mattarello.
Tagliare rettangoli della stessa dimensione, arrotolarli su stessi a elica e disporli ben distanziati su una placca ricoperta di carta forno. Lasciare riposare i grissini in frigorifero per almeno 20 minuti (aiuterà a mantenere la forma in cottura).


 Cuocere in forno preriscaldato statico sopra e sotto a 200°C per circa 15 minuti o finche ben dorati. Lasciare raffreddare e servire, perfetti per un aperitivo, uno stuzzichino o se siete rimasti con poco pane.
Potete farcirli a piacere...con olive o pomodorini secchi tritati o magari con un po' di profumatissimo pesto. Enjoy...

aromatic herbs to taste
extravergin olive oil
salt


Unroll the puff pastry, brush half of the surface with a little bit of extravergin olive oil, sprinkle the chopped fresh aromatic herbs and a pinch of salt (we used: basil, littlemint and pepperherb, a mix that we love but you can try different combinations using your favorite ones).
Fold the dough by matching the half brushed side with the not brushed and press with a rolling pin. Cut rectangles of the same size, roll up each pastrysticks on itself as a prop and place them well distant on a baking sheet covered with oven paper. Let them rest in the freedge for at least 20 minutes (this will help them mantain the shape during cooking).


Bake in preheated oven static top and bottom at 200°C for about 15 minutes or until Golden brown. Let cool and serve, perfect for an aperitif, a snack or if you have not so much bread (in Italy we usually have meal with bread).
You can stuff them as you like...with chopped olives, sundried tomatoes or with a so scented pesto too. Enjoy...

Tarte Tatin alle ciliegie e salvia (con gelato) / Tarte Tatin with cherries sage (and ice-cream) "Fast & Gorgeus"


La pasta sfoglia è una di quelle cose che dovremmo sempre avere nel frigorifero (o nel congelatore se usate quella surgelata) è davvero comoda perché permette di fare preparazioni dolci e salate e di usare tutta la creatività per fare diversi abbinamenti e creare nuove forme!
La Tarte Tatin con la pasta sfoglia è veloce da preparare e il risultato è davvero goloso! Sì, fa piuttosto caldo e molti non accenderebbero il forno nemmeno sotto tortura...ma per questo dolce ne vale la pena! (Altrimenti segnatevi la ricetta, potrebbe tornarvi utile quando avrete poco tempo o ospiti a sorpresa).

Puff pastry is one of those things we should have Always in the freedge (or in the freezer if you use the frozen one) it's really usefull 'cause you can make sweet as salty preparations and you can use all your creativity to make various combinations and to create new shapes!
The Tarte Tatin with puff pastry is very fast to make and the result is really greedy! Yes, the hot days are back and many of you won't use the oven even under torture, but for this dessert it's Worth it! (Or you can write down the recipe, it should be useful when you'll have not so much time or you will have sourprise guests).


Ingredienti
1 rotolo di pasta sfoglia
zucchero a velo
300g circa di ciliegie
zucchero alla vaniglia
succo di limone
burro
(salvia)
per servire
gelato

Preriscaldare il forno a 200°C statico solo sopra e posizionare la griglia d'appoggio nella parte centrale del forno.
Lavare le ciliegie, tagliarle a metà e privarle del nocciolo. Condire le ciliegie con uno o due cucchiai circa di zucchero alla vaniglia (dipende dalla dolcezza delle ciliegie e dal vostro gusto) un po' di succo di limone (circa 1/2 limone) o se preferite dare un tocco più deciso alla ricetta potete aggiungere un goccio di liquore alla ciliegia. Mescolare e lasciare riposare.
Stendere il rotolo di pasta sfoglia, appoggiarvi la teglia che userete per la cottura ( o le tegliette se farete delle monoporzioni) e tagliare un disco più largo rispetto alla teglia (circa 2 cm in più). Fate alcuni tagli lungo il bordo di 2 cm (questo vi aiuterà a ripiegare il bordo nella teglia...è più facile a farsi che a dirsi). Infarinare entrambi i lati della sfoglia con lo zucchero a velo per ottenere una bellissima sfoglia croccante e dorata.


Imburrare la teglia e cospargerla di zucchero alla vaniglia (rimuovere l'eccesso di zucchero) disporre le ciliegie nella teglia (senza il loro succo, potete tenerlo da parte da aggiungere quando servirete la tarte) cospargere con una foglia circa di salvia a  pezzetti (solo se vi piace) e coprire con il disco di pasta sfoglia. Premete delicatamente le ciliegie all'interno della pasta e ripiegate il bordo di 2 cm verso l'alto. Cuocere in forno per circa 15 minuti o finche ben dorata, questo tipo di cottura (statico solo sopra) vi permetterà di ottenere ciliegie morbide ma compatte e una pasta sfoglia ben cotta e crispy.


Sfornare, appoggiare un piatto alla teglia e girare (attenzione a non scottarvi e al succo di cottura che potrebbe uscire mentre capovolgete la teglia). Lasciare intiepidire, o raffreddare se preferite ed è pronta da servire magari con un po' di gelato rinfrescante.
E' davvero facile e veloce da preparare, e mentre cuoce nel forno potrete pensare ad altro, rilassarvi o godervi la compagnia dei vostri ospiti mentre il profumo di ciliegie, vaniglia e salvia invade la cucina. Bella, profumata e golosa!
Perfetta da provare con la frutta di stagione che preferite...pesche, frutti di bosco, fichi, o mele e pere per quando arriverà l'Autunno. E ovviamente da provare anche in versione salata, con dolcissimi pomodorini pachino e basilico o zucchine e menta...Enjoy Summer!


Cucchiaio "The Spoon Flower" (Australia)


Ingredients
1 roll puff pastry
icing sugar
 about 300g cherries
vanilla sugar
lemon juice
butter
(sage)
to serve
ice-cream

Preheat the oven at 200°C static only on top and place the shelf in the middle space of the oven.
Clean cherries, cut them in half and remove the stones. Season with one or two tablespoons vanilla sugar (it depends on the sweetness of your cherries and to your taste) and a bit of lemon juice (about 1/2 lemon) or a drop of cherry liqueur to give a strong touch to the recipe. Stir and let stand.
Roll out the pastry, place the pan ( or the mini pans) you will use for cooking the tarte on it and cut a disc larger than the pan (about 2 cm more). Make some cuts along the edge of 2cm (this will aid you to refold the edge in the pan, it is easier to do than to say). Flour with icing sugar both surface of the pastry to have a beautiful crunchy and Golden brown tarte.


Butter the baking pan, sprinkle with vanilla sugar (remove the excess) pour the cherries (without their cooking juice, keep aside to be added when you serve the tarte tatin) and sprinkle with a chopped leave of sage (just if you like!) and cover with the disc of puff pastry pressing gently all the cherries inside the pastry and fold the edge of 2 cm upward.
Bake for about 15 minuts or until Golden brown, this kind of cooking (static only top) leave the cherries soft but compact and the pastry will be well cooked and crispy.
Remove from the oven, put a dish on the pan and turn (be careful to not burn and to the cooking juice that could come out as you turn the pan!).


Let it warm or cool if you prefer and it's ready to be served maybe with a bit of refresging ice-cream. It's really easy and fast, and as it bakes you can do something else, relax or enjoy the company of your guests, while the smell of cherries, vanilla and sage goes around your kitchen.Lovely, scented and delicious!
Perfect to remake with the seasonal fruit you prefer...peaches, berries, figs or apples and pears when the Autumn comes. And of course to try in savory version with sweet cherry tomatoes and basil, zucchini and mint...Enjoy Summer!
