Crostatine integrali con crema mascarpone e fragole / Wholemeal tarts with mascarpone cream and strawberries
Ancora fragole...è la loro stagione e sono una vera tentazione!
Questa ricetta prevede una base di pasta frolla integrale, crema mascarpone e fragole, facile, profumata e come al solito golosa!
Strawberries again...yet is their season and are a real treat!
This recipe provides a base of wholemeal pastry, mascarpone cream and strawberries, easy, fragrant and as uasually delicious!
Ingredienti per la frolla (per circa 8 del diam. di 9 cm)
400gr farina integrale
120gr burro
90gr zucchero
2 tuorli
un pizzico di sale
Mescolare i tuorli con lo zucchero, aggiungere la farina, il sale e il burro freddo a pezzetti e impastare fino ad ottenere un panetto liscio e compatto (se non amate la farina integrale potete sostituirla con quella di farro o la classica 00). Avvolgere l'impasto nella pellicola e lasciare riposare in frigorifero almeno 30 minuti. Stendere l'impasto con il mattarello e posizionarlo nelle teglie per crostatine (noi bagniamo la cartaforno, la strizziamo bene e la stendiamo nelle teglie, sarà più facile rimuovere le tortine una volta cotte). Mettere qualcosa sopra l'impasto (durante la cottura) perché faccia da peso e mantenga la forma della frolla (noi stendiamo cartaforno per proteggere l'impasto e un po' di pasta come peso) e cuocere a 180°C in forno preriscaldato (statico sopra e sotto) per 20/25 minuti circa o finche ben dorate. Sfornare e lasciare raffreddare. Questo impasto è perfetto anche per fare i biscotti.
Ingredients for the pastry (about 8 tarts with diam. 9cm)
400gr wholewheat flour
120gr butter
90gr sugar
2 egg yolks
a pinch of salt
Mix the egg yolks with sugar, add flour, sugar and cold butter (in small pieces) and knead until obtaining a smooth and compact dough (if you don't like wholewheat flour you can replace it with the spelt or 00 one). Wrap the dough in the film and let stand in refrigerator at least 30 minutes. Roll out the pastry with a rolling pin and place it in the tarts pan (we bath the ovenpaper, sqeeze it well and settle in the pans so that it will be easier to remove the tarts once cooked). Put something on the dough (while cooking) as a weight just to keep the shape of the pastry (we place ovenpaper to protect the dough and some pasta as weight)and bake at 180°C in preheated oven (static top and bottom) for 20/25 minutes or until Golden Brown. Remove from oven and let cool. This dough is perfect to make cookies too.
Ingredienti per la crema mascarpone
250gr mascarpone
1 cucchiaio di zucchero
1 tuorlo
1 albume
qualche goccia di liquore
un pizzico di sale
Mescolare il mascarpone con lo zucchero, aggiungere il tuorlo e qualche goccia di liquore (quello che preferite, noi abbiamo usato qualche goccia di cognac Courvoisier) e mescolare con le fruste elettriche (se aumentate le dosi per avere più crema ricordate di aggiungere un tuorlo alla volta). A parte montare a neve ferma l'albume con un pizzico di sale e amalgamare bene al mascarpone con una spatola mescolando delicatamente dal basso verso l'alto. Lasciare riposare in frigorifero almeno 30 minuti. Questa crema è perfetta per il tiramisù o da servire in coppa con frutta di stagione.
Ingredients for the mascarpone cream
250gr mascarpone
1 tablespoon sugar
1 White egg
1 yolk egg
few drops of liquor
a pinch of salt
Mix the masarpone with sugar, add the egg yolk and frew drops of liquor (the one you prefer, we chose the cognac Courvoisier) and whisk well (if you increase the doses to have more cream remeber to add one yolk at a time). Whip the egg White until stiff with a pinch of salt and mix well to mascarpone stirring stirring gently with a spatula from the bottom up. Let rest in the refrigerator for at least 30 minutes. This cream is perfect for tiramisù or to be served in bowl with seasonal fruit.

Lavare le fragole, condirle con succo di limone e zucchero e lasciarle riposare qualche minuto...potete lasciarle intere o tagliarle a fette e decorare come preferite. Potete sostituire le fragole con fette sottili di mango o ananas e una spruzzata di limone per un gusto tropicale (in questo caso vi suggeriamo qualche goccia di rum nella crema mascarpone)!

Wash the strawberries, season with lemon and sugar and let stand for few minutes...you can leave them Whole or cut into slices and decorate as you wish.You can replace strawberries with thin slices of mango or ananas and a splash of lemon for a tropical taste(in this case we suggest you few drops of rum in the mascarpone cream)!
Preparare le crostatine riempiendole di crema mascarpone e decorandole con la frutta e qualche goccia del loro succo. Servitele subito per mantenere tutta la croccantezza della frolla o preparatele in anticipo e conservatele in frigorifero (tirandole fuori qualche minuto prima di servire) lasciando che la pasta assorba il succo e il profumo delle fragole o della frutta che avete scelto. Sono perfette come dessert e davvero carine per un party con buffet!
Prepare the tarts filling with the mascarpone cream and decorating with fruit and few drops of their juice. Serve at the time retaining all the crispness of the pastry or prepare them in advance and store in the refrigerator (pull them out few minutes before serving) allowing the pastry to absorb the juice and the smell of the strawberries or the fruit you have chosen. They are perfect as dessert and really pretty for a party buffet! Enjoy!

Salsa alle fragole / Strawberries sauce
Anche oggi una ricetta facilissima e veloce che potrà tornarvi utile per accompagnare diverse preparazioni!
Also today a quick and easy recipe that will come in handy to accompany different preparations.
Ingredienti
400gr fragole
succo di 1 limone
2 cucchiai di zucchero a velo
Lavare, tagliare le fragole a pezzetti (perfette quelle molto mature)e cuocere a fuoco basso con il succo di limone e lo zucchero a velo (le dosi che abbiamo dato variano in base al sapore delle fragole, assaggiate e aggiustate bilanciando acidità e dolcezza secondo i vostri gusti aggiungendo più succo o più zucchero). Avrete uno splendido profumo in casa! Togliere dal fuoco quando le fragole sono morbide e frullare bene con il mixer. Passare al setaccio la salsa per eliminare i semi, mettere sul fuoco(medio/basso) e portare a bollore. Togliere dal fuoco e lasciare raffreddare. Conservare in frigorifero fino al momento di servire (potete gustarla anche calda). Perfetta per accompagnare il gelato, con la crema mascarpone (anche per fare il tiramisù alla fragola), come top per il cheesecake o con un po' di yogurt per una merenda fresca e profumata! Wash, chop the strawberries (perfect those very ripe) and cook over low heat with lemon juice and icing sugar (the doses we have given vary depending the strawberries flavour, taste and adjust balancing sweetness and acidity according to your taste adding more lemon juice or more sugar). You will have a wonderful parfume in the house! Remove from heat when strawberries are soft and blend well with the mixer. Pass through a sieve to remove the seeds, put on the fire (medium/low) and bring to a boil. Remove from heat and let cool. Store in the refrigerator until ready to serve (you can also enjoy it hot). Perfect to accompany ice-cream, with mascarpone cream (good to make strawberry tiramisù), as a top for the cheesecake or with a bit of yogurt for a fresh snack. Enjoy...and happy weekend!

Eton Mess
Oggi Vi proponiamo un dolce inglese che prende il nome dal College di Eton, pensiamo sia una ricetta "intelligente" poiché facile, golosa ed elegante e vi farà fare bella figura senza spendere molto per l'acquisto degli ingredienti!
Today we suggest you an English sweet which take its name from the Eton College, we think it is a "smart" recipe as easy, delicious and elegant and you will make a good impression without spending too much for the ingredients!
Ci sono diverse versioni, ma la ricetta originale prevede panna montata, fragole e meringa.
La meringa é facile da fare ma ha tempi di cottura un po' lunghi...provatela perché l'attesa sarà ricompensata da grande soddisfazione: belle e buone!
Ingredienti
4 albumi (uova medie)
180gr zucchero
qualche goccia di limone
un pizzico di sale
zucchero a velo q.b.
Montare gli albumi a neve ben ferma con un pizzico di sale e qualche goccia di limone, aggiungere lo zucchero poco alla volta continuando a montare con le fruste fino ad ottenere un composto lucido. Mettere il composto nel sac-à-poche con bocchetta dentata, creare le meringhe (su teglia con carta forno) e cospargere di zucchero a velo. Cuocere in forno ventilato preriscaldato a 90°C per 2 ore e 30 minuti circa. Spegnere il forno e lasciare raffreddare prima di sfornare. La dose è un po' abbondante ma saranno perfette servite con il caffè anche il giorno dopo!

The meringue it's easy to make but it takes a bit long cooking times...try it, the wait will be rewarded with great satisfaction: good and so nice!
Ingredients
4 egg whites (medium)
180gr sugar
few drops of lemon
a pinch of salt
icing sugar (as enough)
Beat the egg whites until well stiff with a few drops of lemon and a pinch of salt, add sugar a little at a time while continuing to Mount with whisks until the mixture is glossy. Put the mixture into a sac-à-poche with serrated nozzle, make the meringues (on baking sheet with oven paper) and sprinkle with icing sugar. Bake in a convention oven preheated at 90°C for about 2 hours and 30 minutes. Turn off the oven and leave the meringues to cool before turning out. You will have many meringues but they will be perfect served with coffee even the next day!
Per il dolce /
Ingredienti (per 4 coppe)
250ml panna
400gr fragole
meringa q.b.
1 cucchiaio di zucchero a velo
succo di limone o aceto balsamico q.b.
zucchero q.b.
Lavare, affettare e condire le fragole, noi facciamo in due modi: con zucchero e succo di limone o per dare un tocco italiano aceto balsamico di Modena e zucchero (non vi diamo le dosi perché dipende dalle fragole, cercate di bilanciare dolcezza e acidità). Lasciare riposare qualche minuto, nel frattempo montare la panna (ben fredda)con un cucchiaio di zucchero a velo. Sbriciolare le meringhe (tenetene qualcuna per la decorazione), mescolarle alla panna, aggiungere le fragole e mescolare delicatamente. Versare il mix, noi abbiamo scelto delle coppe vintage (di famiglia) e decorate con le meringhe, fragole o come preferite. Conservate in frigor sino al momento di servire (non lasciatele a lungo in frigorifero perché si perderà la croccantezza della meringa)...Un fine pasto davvero elegante!

P.S. Un'idea in più: aggiungete qualche goccia di Pimm's (liquore inglese) per dare un tocco alcolico!

Ingredients (for 4 cups)
250ml cream
400gr strawberries
meringues as enough
1 tablespoon icing sugar
lemon juice or balsamic vinegar as enough
sugar as enough
Wash, chop and season the strawberries, we do it in two ways: with sugar and lemon juice or with balsamic vinegar of Modena and sugar for an Italian touch (we don't give you the doses because it depends on your strawberries, make sure that sweetness and acidity are balanced). Let stand a few minutes, in the meantime whip the cream (very cold) with a tablespoon of icing sugar. Crumble the meringues (keep some for the decoration), stir in the cream, add the seasoned strawberries and stir gently. Pour the mix, we have choosen these vintage cups (family) and decorate with meringues, strawberries or as you prefer. Store in the fridge until ready to serve (don't leave them long in the fridge because you loose the crunchiness of the meringues)...A truly elegant end of the meal! Enjoy!
P.S. One more idea: add few drops of Pimm's (an English liquor) to give an alcoholic touch!

Cialdine con grana Padano, nocciole e fiori di rosmarino / "Crisps" with Parmesan cheese, hazelnuts and rosemary flowers
Cominciamo la settimana con un suggerimento profumato al rosmarino...facilissimo e da rifare in mille modi!
We start the week with a Rosemary scented suggestion...so easy and to be redone in a thousand ways!
Ingredienti (circa 10 cialdine)
200gr Grana Padano (grattugiato)
80gr nocciole tostate (tritate)
fiori di rosmarino
Mescolare il grana e le nocciole (noi abbiamo usato il grana Padano, ma voi potete usare il vostro preferito). Disporre il mix su teglia ricoperta di cartaforno e pressare leggermente con il dorso di un cucchiaio (date la forma che volete con l'aiuto di un coppa pasta o un taglia biscotti). Infornate a 180°C (ventilato/preriscaldato) per circa 4/5 minuti o finche il formaggio è ben sciolto (ogni forno lavora in modo diverso perciò tenetele sotto controllo!). Sfornare, cospargere di fiori di rosmarino (hanno profumo e aroma leggermente meno intenso rispetto alle Foglie) e lasciare raffreddare. Il grana si abbina bene a molti sapori e aromi, perciò potete creare diverse combinazioni, magari con semi, erbe aromatiche, frutta secca... Queste cialdine sono perfette per un aperitivo o per accompagnare zuppe, vellutate e risotti.
Un'idea in più: prima di cuocere posizionate uno stecco di legno al centro del disco di formaggio, cuocete, sfornate e avrete dei Chupa Chups davvero carini per un aperitivo o un buffet. Queste cialdine sono anche facili da modellare, se vi va, sfornatele, lasciatele riposare qualche minuto e dategli la forma desiderata (arrotolata, a cestino...) lasciatele raffreddare e usatele per decorare i vostri piatti! Enjoy!

200gr Parmesan cheese (grated)
80gr toasted hazelnuts (chopped)
Rosemary flowers
Mix cheese and hazelnuts (we used Padano cheese but you can use your favourite one!), place the mixture on a baking sheet covered with ovenpaper and press lightly with the back of a spoon (take the shape you want with the aid of a pastry cutter or a cookies cutter). Bake at 180°C (convention/preheated) for about 4/5 minutes or as soon as the cheese is melted (every oven works in a different ways so take them under control!). Take out from the oven and sprinkle with Rosemary flowers (they smell and taste a little bit less than Rosemary Leaves). Leave them cool. Parmesan cheese goes well with so many flavours and aromas, so you can make many combinations, maybe with seeds, herbs, dried fruit...These crisps are perfect for an aperitif or to accompany soups, vegetables creames or risottos.
One more idea: before cooking, place a wooden stick in the center of your cheese rounds, cook, take out from the oven and you'll have cheese chupa chups perfect for an aperitif or a buffet.
These crisps are also easy to model, so if you like take out from the oven, let stand for a few minutes and give them the shape (rolled up, like a basket...) and use them to decorate your dishes. Enjoy!

Frollini farro & Olive / Biscuits spelt & olives
Oggi ricetta salata... e buon weekend!
Today a savory recipe... and good weekend!
Ingredienti
120gr farina di farro
40gr farina 00
40gr formaggio grana (grattugiato)
2 tuorli
80gr burro salato
100gr olive verdi (tritate)
Mescolare con una frusta i tuorli, aggiungere le farine setacciate e mescolare.Aggiungere il burro a pezzi (freddo), il grana e le olive tritate e impastare con le mani fino ad ottenere un panetto morbido e compatto (se non avete il burro salato potete usare quello normale e aggiungere una presa di sale). Avvolgere l'impasto nella pellicola trasparente e lasciarlo riposare in frigorifero per almeno 30 minuti. Stendere l'impasto con il mattarello e tagliare i biscotti. Cuocere in forno preriscaldato (statico sopra e sotto) a 180°C per circa 15/20 minuti o finche ben dorati. Sfornare e lasciare raffreddare, gustare da soli, con formaggio fresco (magari di capra), salumi...Sono davvero carini per uno snack, un pranzo veloce, un aperitivo o un pic-nic! Enjoy!
P.S. L'impasto è ideale anche per una frolla salata!

120gr spelt flour
40gr flour 00
40gr parmesan cheese (grated)

100gr green olives (chopped)
Mix with a whisk the egg yolks, add the sifted flours and stir. Add the butter (cold), the chopped olives and a grated good Parmesan cheese and knead until obtaining a soft and smooth dough (if you have not salted butter use the normal one and add a handful of salt). Wrap the dough in plastic wrap and let stand in refrigerator for at least 30 minutes. Roll out the dough with the rolling pin and cut out cookies. Cook in preheated oven (static top and bottom) at 180°C for about 15/20 minutes or until Golden brown. Remove from oven let them cool and enjoy with fresh cheese (maybe goat cheese), with Parma ham...They are really nice for a snack, a quick lunch, an aperitif or for a pic-nic! Enjoy!
P.S. The dough can also be ideal for a salted pie!
