Vanilla French Toast con burro salato e sciroppo al limone / Vanilla French Toast with salted butter and lemon syrup


Rieccoci, con una ricetta semplice ma davvero golosa, perfetta per una ricca colazione o un brunch...per cominciare il weekend con il sorriso e un invitante profumo di burro, limone e vaniglia che invade la casa. Un modo dolcissimo per dare il buongiorno!

Here we are again, with a simple but very tasty recipe, perfect for a hearty breakfast or a brunch...to start the weekend with a smile and an inviting aroma of butter, lemon and vanilla that invades the house. A sweet way to say good morning!


Ingredienti
100ml succo di limone
50g zucchero

6 fette pan brioche
2 uova grandi
latte
2 cucchiai di zucchero (rasi)
1/2 bacca di vaniglia

burro salato
olio alle nocciole (o d'oliva)

zucchero a velo

Preparare lo sciroppo è davvero semplice: versare il succo di limone e lo zucchero (50g) in una padella antiaderente e cuocere a fuoco medio per qualche minuto, lo zucchero deve sciogliersi completamente. Lo sciroppo è pronto quando comincia a schiumare, versare in una salsiera e lasciare raffreddare.



Mescolare con una frusta le uova, lo zucchero (2 cucchiai), un goccio di latte e i semi di mezza bacca di vaniglia finche ben amalgamati. Passare le fette di pan brioche nel composto su ogni lato (senza impregnare troppo il pane) e farle dorare per qualche minuto su ogni lato in una padella antiaderente nella quale avrete precedentemente fatto sciogliere una noce di burro salato con due gocce di olio di nocciole (il burro salato aggiunge sapore e l'olio serve a non far bruciare il burro, l'olio alle nocciole è molto delicato, aromatico e perfetto con il dolce, se preferite potete usare un olio d'oliva delicato).



Un consiglio: se i vostri French Toast risulteranno soffici ma non croccanti all'esterno passateli qualche minuto in forno a 220/250°C circa con funzione grill appena prima di servire (controllateli durante la cottura).
Serviteli caldi con sciroppo di limone e un po' di zucchero a velo, buonissimi anche con un po' di yogurt o di formaggio cremoso. Provateli anche con sciroppo d'acero, cannella o crema di cioccolato!

Ingredients

100ml lemon syrup
50g sugar

6 slices of sweet bread
2 eggs (big)
milk
2 tbspoons sugar (not full)
1/2 vanilla pod

salted butter
hazelnut oil (or olive oil)

icing sugar

Prepare the lemon syrup is really easy: pour the lemon juice and the sugar (50g) in a nonstick pan and cook over medium heat for a few minutes, the sugar has to dissolve completely. The syrup is ready when it starts to foam. Pour the syrup into a bowl and let cool.



Mix with a whisk the eggs, sugar (2tbspoons), a bit of milk and the seeds of half a vanilla bean until well blended. Move the slices into the mixture on each side (bread has not to absorb too much egg) and brown them on each side for a few minutes over medium heat in a nonstickpan where you had previously melted a knob of salted butter with two drops of hazelnut oil (the salted butter give flavour to the recipe, the oil serve not to burn the butter, the hazelnut oil is very delicate, aromatic and goes well with dessert but if you prefer you can replace it with a delicate olive oil).



A tip: if your French Toast are fluffy but not crunchy outside, put them in the oven at about 220/250°C with function grill for a few minutes just before serving (check them during cooking!).
Serve hot with lemon syrup and a bit of powdered sugar, they are delicious even with yogurt or cream cheese. Try them also with maple syrup, cinnamon or chocolate cream.
