Lemon curd


Lemon curd
Vi avevamo promesso che avremmo parlato ancora di limoni (non potremmo immaginare il mondo senza!) così vi suggeriamo una ricetta facile e veloce che potrete usare in mille modi!


We promised that we would talk about lemons again (we could not imagine the world without them!) so we suggest an easy and quick recipe that you can use in many ways!


Ingredienti
2 uova medie
70 gr zucchero
succo di 2 limoni (non trattati)
1 cucchiaio di zucchero a velo (non vanigliato)
50 gr burro fuso

Il lemon curd è una crema inglese che si può preparare in diversi modi, noi la facciamo così: mescolare con le fruste elettriche tutti gli ingredienti per circa 2/3 minuti e cuocere il composto a bagno-maria mescolando continuamente con un cucchiaio di legno. La crema è pronta quando vela il cucchiaio e comincia ad addensarsi. Togliere subito dal fuoco e lasciare raffreddare in un contenitore di ceramica o vetro (vasetti da conserva). Quando la crema è fredda riporre in frigorifero (si può conservare per qualche giorno). Perfetta da servire con un buon tè e toasts o biscotti (magari scones!), per farcire i vostri dolci (come tartellette di pasta frolla o sfoglia...), con una macedonia, e visto che Pasqua non è lontana, da servire con una fetta di Colomba artigianale...o come preferite voi! 2 medium eggs
70 gr sugar
lemon juice of 2 lemons (not treated)
1 tablespoon of icing sugar (not vanilla flavoured)
50 gr melted butter

The lemon curd is an English cream, there are different ways to prepare it, we do like this: mix with and electric whisk all the ingredients for about 2/3 minutes and cook the mixture in a baine-marie stirring constantly with a wooden spoon. The cream is ready when coats the spoon and begins to thicken. Immediately remove from the heat and let cool in a ceramic bowl or glass (preserve jars). When the cream is cold store it in the refrigerator (you can keep it for a few days). Perfect to serve with good tea and toast or cookies (maybe scones!), to stuff your sweets (like puff or short pastry tarts...), with a fruit salad and, since Easter is not so far, to be served with a slice of Colomba (typical Italian sweet eaten during Easter days)...or whatever you like! Enjoy!
