Mini Christmas cakes with a salted butter hug|Powered by Fratelli Brazzale

I believe.
Forno acceso a 200 °C statico e cominciamo a cucinare.
Ssshhhh... Buone Feste!
Per Babbo Natale...
English v: Dear Santa Claus, this year I would love a table full of white china with golden paint edges and the dear ones who are still with us and those who aren't anymore. I would love to fix them all in a shot, those one in which someone is enchanted by the lights and someone else is impressed with closed eyes, those photos beautiful for real, those ones you stare at with a smile and the emotions falling down from your eyes. I would love the house full of traditions scents, those ones soft, sweet and buttery, and the creak of the Christmas gifts to open up. I would love to find some little thoughts, those ones by who really knows your true desires. I would love the beauty of a starry night closed in my heart to stir with the butter whipping down under a sugar and vanilla snowfall. So I switch on the oven and I write you down as each year I use to, I don't need anything or maybe something that I know for sure...you'll can hear between the cheering glasses and the silence of the sparkling candles. I believe...and I let my spatula turning round slowly, I butter out my molds and I stare at the ingredients in the oven making their magic. I Always use to think they will be perfect my Feasts desserts and that they will slide down in the plates in the silence of the spoons that sink in light. So, mini Christmas cakes with tangerine zest, dates and the touch of butter, the Superior Butter Fratelli Brazzale (salted with wild fennel). Poetry. (I was thinking that there has to be a hidden room in which an army of elves add salt and scents to the Superior Butter Brazzale to make the perfect rolls 'cause the notes of salt and wild fennel come out like magic).
Ingredients: 120g Superior Butter Fratelli Brazzale (salted with wild fennel), 2 yolks, 2 egg whites, 70g flour00, 70g frumine, 100g zucchero, 1/2 tbspoon vanilla extract, 8g baking powder. 15ml water, 8/10 dates.
Let's start buttering the molds, I used the ones for canéles and I got 8. Switch on the oven at 200 °C and let's cook. Work the butter with the electric whisks (this butter is so perfect to get soft and fluffy cakes thanks to its high quality), add the vanilla extract and go on working (I tasted out this butter cream, wild fennel with vanilla go gloriously together they are my new never without on toasted bread and smoked Scottish salmon. Love it). Add tangerine zest and sugar little at a time working again (make it with patience, this step needs time, the butter needs air to make it happens in an amazing way). Now add flour, frumine and the baking powder (sifted) little at a time, mix and pour the water and mix again. Whip the egg whites and add a 1/4 to the mix stirring with a spatula, then the leftover and mix well. Pour the mix in the molds (for 3/4 to get a panettone shape or 4/4 to get a mushroom shape) and bake for about 20/30 mins at 180 °C. Let cool down and place them in your Christmas dishes, pour some melted white chocolate, plus some curls of chocolate and tangerine zest, we also gave a sprinkle of golden powder (for food) to make them so special and the taste is oh too good (they will be our Christmas dessert, definetly).
But you can also serve them with some Mascarpone cream and cocoa, with icing sugar and dark chocolate curls for a tea with friends...and of course you can prepare them to your taste, maybe with orange zest and ginger, this butter will make its great work for sure. And Santa there's a little butter roll for you too for your breakfast after the Christmas night sleigh runs: bread, butter and jam. That's perfect, isn't it?! (This butter will be our Feasts must have!).
Tips: if there are no babies to eat the dessert you can also let the dates rest for a while in a drop of white rum. Sssshhh... For Santa...
Happy Holidays!

Christmas Truffles (Superior Salted Butter Edition)|Powered by Fratelli Brazzale

Ingredienti: 250g cioccolato fondente, 50g Burro Superiore Fratelli Brazzale Salato , 60g panna liquida, 50g zucchero a velo
The Christmas crown is on the door, as each year since we are Together (a little tradition of our ones), I lit up the candles that invade our window sills of lights all Christmas time long (and I hope they will bring warmth to those stepping down our street), the fireplace shelf is already full of heart pieces of old Christmas days and finally there is also the tree to fill the house. I want absolutely to create thousands moments, all those we can spend together with the Christmas playlist to sing out softly while chocolate melts down and the butter makes its magic. I want to hang my stars wrapped by my warmest sweaters hugs and the sound of memories simmering in the pan, the creack of the butter paper that preannounces wonders while spatulas and spoons moves light.
Truffles then with dark chocolate with that salted butter note (the Superior Butter by Fratelli Brazzale Salted, the one with the perfect touch of salt to us) which takes you where it's good to stay even if just for a while. Moments so, the ones that stay imprinted into the memories albums. So...butter, chocolate and a bit of stardust.
Ingredients: 250g dark chocolate, 50g Superior Butter Fratelli Brazzale Salted, 60g fresh cream, 50g powdered sugar.
Put the fresh cream over medium heat and take to a boil, melt down chocolate (previously chopped) in a bainmarie. When the chocolate is completely melted down add hot cream and mix until well blended, then add butter and powdered sugar little at a time and stir gently until you get a smooth mix. Pour it in a bowl, let rest and cool down and keep in the fridge for about two hours or until compact. Make balls and roll them into powdered sugar or cocoa, or coconut powder or you can even create your Christmas mix like cocoa and cinnamon, or sichuan pepper, hazelnuts and orange zests, ginger and so on...we chose some caramel glitter to give a bit of light. Keep them in the fridge and take off a few mins before serving and happy Holidays. They are too good and perfect during the coffee time with your guests or as after dinner sweet treat, you know that blanket plus Christmas movie feeling?! (There is no Christmas without "A Christmas Carol" for me but never without "Home Alone" or "Harry Potter" either with its amazing atmospheres. P.S.You can also make them with the little ones, the ingredients know how to create moments to spend with the family, Always.
Tips: choose an high quality chocolate and of course the Superior Butter Fratelli Brazzale to make the perfect combination of flavors and scents, like in a Christmas gospel choir.
(For the caramel glitter: just melt down sugar in a pan without stirring, when amber colored pour down on oven paper, you'll get a piece to cut down with the knife for the glitter or drops that look like amber gems, so beautiful to decorate your feast desserts. Waiting for you on our socials for your perfect white butter Christmas moments to share and find out more about the Brazzale group's world at the links.

White (butter) Christmas Cookies|Powered by Fratelli Brazzale

English v. I think that one of the best thing about Christmas is the waiting and everything lighting up our gaze during these days. I want to spend these moments just this way then inebriating myself of sparkling lights into the eyes, of hot chocolate steaming cups, of hands finding warmth, of old and new decorations to hang on while "Rockin' around the Christmas tree" fills home with hugs and twirls. Of lighted up candles and letters to Santa. And I want the time to stop and stare at the wonder in the eyes and to feel good even about anythyng, anything more but the essential, anything more than what I really need. Just us, cookies in the oven, the kitchen coziness, the hands smelling of butter, the flour pouring like the snow I would love to see while the fire cracks and memories and new traditions slide down through my fingers. So Christmas cookies as good as sincere hugs and thoughts that fly into your heart. Cookies then with bergamot zest and butter, our favorite one, the Superior Butter Fratelli Brazzale.
Ingredients: 150g all purpose flour, 150g potato starch, 150g sugar, a pinch of salt, 180g Superior Butter Fratelli Brazzale, 3 egg yolks, half a bergamot zest. Sift flour and potato starch and mix well with sugar and bergamot zest (you can choose the citrus you prefer, maybe the ones that remind you of your past Holidays, those one in which you were a child, I think that during this time of the year scents and flavors take us, more than ever, to the the most beautiful moments we had...to be savored with eyes closed and that good thoughts of those nights spent counting the stars while waiting for presents). Add cold butter pieces (the high quality of this butter makes it soft even just out of the fridge, the perfect one for the perfect pastry) and the egg yolk and knead until you get a smooth and compact dough. Wrap in paper and let it rest in the fridge for about one h. Make balls with your hands and place them on a baking sheet covered with ovenpaper. Bake at 200 °C for about 10/15 mins or until golden. Take out and let cool down before placing them in a plate or in boxes as a gift. They are too good, buttery and so scented even better the day after, this recipe deserves a lot so promise us to make it, they are perfect to be shared or gifted. Our ones will be ready for S. Lucia and Santa too, can't wait...and falalala. With this recipe we are glad to introduce you our super special "White butter Christmas" that will be with us all December long with easy and gorgeus recipes perfect for the feasts with the right ingredient to make them magic...and Merry days. Waiting for you here and on our social pages and of course you can find out more about the Brazzale's world on their website corners.
P.S.Can we call them Brazzale Christmas cookies?! I mean, they will be so lovely packed in tin boxes well placed in the Christmas shop windows ready to be gifted or shared or dipped into hot cups of tea and slowly afternoons. Lights on then, stars, hearts and hands in flour and butter. Tips: you should not work for long your dough to get it perfect, Brazzale's Superior butter is the secret ingredient to get cookies to remember then (and to re-prepare for sure). Buone feste! Late Summer French Toast|Powered by Fratelli Brazzale

Anna e Mimmo.
English v: September and the golden sun, September and the aster flowers in the garden with the air that starts to smell of Autumn, of sweet sadness, of something ending up and much more restarting over again. I love this time, I love to get lost into its perfect moments of lukewarm sunsets and new thoughts. I love to rest and catch deep breaths of calmness and late Summer. We say good bye Summer this way...with a cozy plate of French toasts enriched by the superior salted butter Fratelli Brazzale (with wild fennel), caramelized peaches, our "raspadura" (thin and soft sheets of cheese) and pepper herb flowers. We say good bye with the elegance of butter that sizzles gently in the pan, with the scent of wild fennel, the last peaches of a Season that each year ends up Always in a while and "Strange" by Lp on repeat.
Ingredients (for one to share): three slices of panbrioche or toast bread (homemade or from the bakery, they have to be very soft), 1 medium egg, milk as enough, 2 teaspoons sugar, 1 teaspoon vanilla extract, a pinch of salt, superior salted butter with wild fennel Fratelli Brazzale > 1 peach, sugar to caramelize, raspadura (or cheese to taste), if loved even herb pepper flowers and fresh wild fennel.
Mix with a whisk the egg with sugar, salt, a bit of milk and the vanilla extract, dip the bread into the mix on both sides. Put the nonstick pan over medium heat and add a knob of butter (take off if too much), place your bread slices and panfry over medium heat (our trick to get a caramelled surface is to sprinkle some more sugar on both sides). Just before serving add a bit of butter and let them panfry until golden brown. While the bread is on the heat slice your peach, put some sugar in anonstick pan and let it cook for a while over medium heat, add your peach slices and caramelize on both sides. Serve your French toasts lukewarm, add your peach slices, place some raspadura or the cheese you love just close to them, add some herb pepper flowers if you have them, some fresh wild fennel and if you are a real butter lover like we are finish the plate with some salted superior butter Fratelli Brazzale. I mean, heavenly, the perfect hug that takes us directly to Autumn with this gorgeus butter, the vanilla note that goes perfect with peaches but even with raspadura and the aromatic twist of the herbs...absolutely to prepare. We are ready to (re) make it for the Sunday brunch and you? And what about a super easy but also very chic aperitif in the September golden hour? Peaches caramelized and panfried with the salted superior butter by Fratelli Brazzale (peaches and butter sounds perfect even just telling it) served with raspadura and a cold glass of white wine. Bye Summer bye. Notes: on Brazzale's dotcom you can find out interesting infos about the group, for example their involvement in carbon neutrality projects and their green revolution started in 2000 when anyone else was involved into environment care projects. This is how the revolutionary system of meat production in reforested pasture "Ouri Branco Silvi Pastoril" was born in Brazil, which provides for the reforestation of pastures and their transformation into green lungs thanks to 1.5 millions eucalyptus trees. Incredible and truly admirable. We take this opportunity to thank the company and the Brazzale family for letting us know their positive and inspiring reality that deserves to be absolutely told, for letting us taste their superior butter which is really an excellent product and for the opportunity to create and cook with an ingredient that always gives us amazing emotions. We also thank Giusy Maddalena, responsable for social media & web marketing of the group for her professionalism, willingness and kindness.
