Bon Ton COFFEE... with Belle De Sucre Paris
Secondo Bacone, il caffè porta conforto alla testa e al cuore. Che sia un momento di conversazione, la degna fine di un pranzo o una pausa rilassante, il caffè è per molti un piacere irrinunciabile. Se volete servirlo a casa, il bon-ton enuncia una serie di regole scritte e non scritte, "aspettazione di comportamento sociale che identifica la buona educazione", (la parola bon-ton o etichetta, deriva da "galateo", tratto dal titolo di uno scritto "Galateo overo dè Costumi" risalente al 1558 del Monsignor Giovanni della Casa ispirato dal vescovo Galeazzo Florimonte -galateo è la forma latina di Galeazzo-)...(qualche cenno storico non fa mai male!).
Ecco alcune regole per servire un caffè...bon ton:
-la caffettiera deve essere già usata...e concordiamo, altrimenti il caffè avrebbe un sapore metallico;
-il caffè deve essere servito dalla padrona di casa... ...ma sempre le donne??
-Il caffè deve essere servito bollente e direttamente dalla caffettiera, che ovviamente non deve essere rovinata ma presentabile, con latte e zucchero a parte (se lo zucchero è in zollette ci deve essere una pinza per servirsi)...;
-qualcuno afferma che il caffè andrebbe servito solo in salotto...un bel problema per chi non ne ha uno;
-non colpire i bordi della tazzina mentre si mescola e non fare strani rumori mentre si beve...ma c'è qualcuno che lo fa?;
-mai, mai il mignolo alzato mentre si sorseggia!!! ;
E queste sono solo alcune...ma se il caffè è un piacere non rischia di diventare un piacere un po' "costretto"?
Abbiamo ovviamente affrontato l'argomento con un po' di ironia perché...sinceramente...le regole non ci sono mai piaciute...ci sono già tanti "deve e dovrebbe" nella vita di tutti i giorni che affrontiamo il resto (i piaceri) con una filosofia più easy: lo diciamo spesso, le cose semplici sono le migliori, con un po' di eleganza e di inaspettato si possono creare momenti davvero speciali! Il caffè per esempio lo serviamo bollente, già in tazza e magari con tazzine, piattini etc spaiati (ma ben accostati!), zucchero e latte a parte e aggiungiamo sempre qualcosa dedicato ai nostri ospiti: cialdine, zuccheri aromatizzati, dolcetti o cioccolatini... E, visto che questa Estate è davvero uggiosa (almeno qui da noi!) ci siamo divertiti a fare qualche scatto...più o meno bon ton, con gli zuccherini di Belle De Sucre Paris...colorati(con coloranti naturali) e dalle forme diverse (cuori, farfalle, stelle, fiori...), perfetti per dare un tocco di eleganza! Da usare ovviamente anche con tè, latte, cioccolata calda...piacciono tanto anche ai più piccoli e sono un'idea regalo davvero carina! Concludiamo il post con una bellissima frase "rubata" a Belle De sucre : "Parce que la crèativitè est le chemin le plus court vers la joie de vivre"...
P.S. Mai, mai il mignolo alzato...a meno che non abbiate una prescrizione del medico!...ma non ha un fascino un pò vintage??

According to Bacon the coffee brings comfort to the head and heart. Wether it's a time for conversation, a fitting end to a lunch or a relaxing break, coffee is a pleasure for many irrinunciable. If you want to serve it at home, the bon ton sets out a number of rules written and unwritten, "expactation of social behavior that identifies good education" (the word bon ton, or etiquette, comes from "galateo" , "Galateo overo dè Costumi" the title of a writing dating back 1558 of Monsignor Giovanni della Casa, inspired by the Bishop Galeazzo Florimonte -galateo is the latin form of Galeazzo-)...(some historical informations never hurts!)
Here are some rules to serve a bon ton coffee:
-the moka must be already used...we agree, otherwise coffee would have a metallic taste;
-the coffee must be serve by the "wife"...but, always women?:
-the coffee must be served piping hot, straight from the moka (that has to be presentable )with sugar and milk separately (if sugar is in cubes there must be a clamp for use);
-someone says that coffee should be served only in the living room...a nice problem for the ones who doesn't have it;
-not collide the edgs of the cup while stirring and no strange noises while drinking...but there is someone who does?;
-never, never the little thinger up while sipping;
And these are only few of the rules...but if coffee is a pleasure won't it become a bit "forced"? We have obviously treated the issue with a bit of irony...because...sincerely...we don't like rules so much, there are so many "must and should be" in everyday life that we live the rest (pleasures!), with a more easy philosophy: we say it often, simple things are the best, with a bit of elegance and unexpected you can create special moments. For exaple, we serve the coffee really hot, already in cups and we use saucers, cups etc even unpaired (but well matched!), with sugar and milk separately and we Always add something dedicated to the guests like wafers, flavoured sugars, sweeties, chocolates... And, cause this Summer is really dull (here!) we had fun to make some photos...more or less bon ton, with Belle De Sucre Paris sugars...colored (with plant-based colors) and with different shapes (flowers, butterflies, stars, Hearst...) perfect to give a touch of elegance! You can use them also with tea, milk, hot chocolate and they are a really lovely gift idea! We end this post with this beutiful quote "stolen" by Belle De Sucre: "Perce que la crèativitè est le chemin le plus court vers la joie de vivre".
P.S. Never, never the little thinger up...unless you have a doctor's prescription...but has it or not a vintage charm??

Se non avete le pinze per gli zuccherini (il bon ton le vuole!) ecco un'idea semplicissima: bastano dei waribashi (i chopsticks cinesi o giapponesi), una molla (prendetela dalle mollette per stendere i panni), un po' di colla e di colore se vi piace (passate del fissativo trasparente sul colore così potrete lavarle).
If you have not clamps for sugar (bon ton need it!) here is a so easy idea, you need just a pair waribashi ( Chinese or Japanese chopsticks) a spring (take it from the pegs for hanging clothes), some glue and a bit of color if you like (cover the colored part with a transparent fixative so you can wash them).

Spiedini di ananas caramellato / Pineapple caramelized spitfuls
Oggi portiamo un po' di colore in questa uggiosa Estate (ci proviamo!) con una ricetta facilissima, perfetta per una serata in compagnia.
Today we bring a little bit of color in this dreary Summer (we try!) with a really simple recipe, perfect for a night with friends.
Ingredienti
1 ananas maturo (1.7kg circa per 8 spiedini)
succo di 1 limone
1 bacca di poivre long
2 cucchiai di zucchero di canna
+ zucchero di canna per caramellare
Pulire e tagliare a pezzetti un ananas maturo, spruzzare subito con il succo di limone (è antiossidante ed eviterà che l'ananas diventi scuro), aggiungere lo zucchero di canna, una bacca di poivre long (questo pepe cresce ai piedi dell'Himalaya, ha un sapore caldo e piccante come quello del pepe nero, ma meno forte e con un retrogusto di cannella) e se vi piace un goccio di rum . Lasciare riposare mescolando di tanto in tanto. Preparare gli spiedini in legno infilando l'ananas e coprendo l'impugnatura con alluminio. Grigliare gli spiedini su tutti i lati sul BBQ o in forno alla massima potenza con funzione grill (su teglia con cartaforno) tenendoli sempre sotto controllo per non farli bruciare. Durante la cottura (quando la superficie della frutta è asciutta) cospargere con altro zucchero di canna (tutti i lati). Quando saranno ben caramellati lasciare intiepidire, eliminare l'alluminio e servire con gelato, con un cocktail ghiacciato o come preferite voi. Noi abbiamo decorato con foglie e fiori di mentuccia e avvolto gli stecchi con cartaforno. Sono perfetti per una serata in compagnia...enjoy!
Ingredients
1 ripe pinepple (about 1.7kg for 8 spitfuls)
juice of 1 lemon
1 poivre long berry
2 tablespoons cane sugar
+ cane sugar for caramel
Clean and cut into small pieces a ripe pineapple, immediately sprinkle with the lemon juice (it's antioxidant so the ananas won't get dark) add cane sugar, a poivre long berry (this pepper grows in the Himalayan foothills, has a warm and spicy flavour, just like black pepper but less strong and with a hint of cinnamon) and a drop of rhum if you like. Let stand for at least 20 minutes stirring occasionaly. Prepare the wooden spitfuls by inserting pineapple pieces and covering the handle with aluminium foils. Grill them on all sides on the BBQ or in the oven at the maximum temperature with the grill function (on a bakingsheet covered with oven paper) keeping them Always under control not to make them burn. During cooking (when pineapple surface will be dry) sprinkle a little bit more of cane sugar (all sides). When they are well caramelized let cool, remove the aluminium and serve with ice-cream, a frozen cocktail or as you prefer. We have decorated with littlemint flowers and Leaves and wrapped up the sticks with oven paper. They are perfect for a night with friends...enjoy!

Gelatina di frutti rossi al Porto con gelato alla vaniglia / Red Fruits jelly with Porto and Vanilla ice-cream
La gelatina...c'è chi la odia e c'è chi la ama, noi vi suggeriamo questa ricetta che ci piace molto con fragole, ciliegie e lamponi: una versione profumata, golosa, un po' vintage e molto romantica!
The Jelly...there are those who hate it and those who love it, we suggest you this recipe that we like so much with strawberries, cherries and raspberries: a tasty fragrant, a bit vintage and very romantic version!
Ingredienti (per 6)
125g lamponi
250g fragole
350g ciliegie
4 cucchiai di zucchero
6 fogli di gelatina (20g)
succo di 1 limone grande
200 ml acqua
1 bicchierino vino Porto
Ricetta del gelato alla vaniglia
Lavare e tagliare a pezzetti i frutti rossi maturi (togliere il nocciolo alle ciliegie) e cuocerli a fiamma bassa con lo zucchero e il succo di limone. Quando i frutti cominciano ad ammorbidirsi alzare la fiamma, aggiungere il vino Porto (darà una piacevole nota aromatica),cuocere per qualche minuto e passare con il frullatore ad immersione. Mettere i fogli di gelatina in acqua fredda, nel frattempo passare al setaccio la frutta frullata per eliminare i semini. Scaldare 200ml di acqua (non deve essere bollente), strizzare bene i fogli di gelatina e scioglierli nell'acqua calda. Aggiungere l'acqua con gelatina alla frutta frullata e mescolare bene. Versare il composto nello stampo da budino, negli stampini monoporzione o nei bicchieri e lasciare riposare in frigorifero per almeno 6/7 ore. Servire con gelato alla vaniglia o se vi piace l'idea con cream-cheese (basta mescolare del formaggio fresco cremoso con un po' di panna montata, zucchero a velo e magari qualche seme di vaniglia). Decorare a piacere, noi abbiamo usato qualche ciliegia e fiori di menta e mentuccia. Servitelo come fresco fine pasto, perfetto anche per un party estivo. Ovviamente potete provarlo con la frutta che preferite e creare abbinamenti inaspettati che stupiranno i vostri ospiti...enjoy!
P.S. Se non avete voglia di dedicarvi a due preparazioni vi consigliamo di comprare del gelato artigianale, oppure l'Haagen-dazs, uno dei migliori in commercio per noi!

125g raspberries
250g strawberries
350g cherries
4 tablespoons sugar
6 gelatin sheets (20g)
the juice of 1 big lemon
200ml water
a drop of Porto wine
Vanilla ice-cream recipe
Wash and chop the ripe red fruits (cherries without stones of course), cook over low heat with the lemon juice and sugar, when they begin to soften raise the heat and add a drop of Porto wine (it will give a lovely aromatic note) and cook for a few minutes. Pass the fruits with the immersion blender. Put the gelatin sheets in cold water, in the meantime sift the fruit mash to remove seeds. Heat 200ml water (it should not be boiling), wring the gelatin sheets and dissolve them in warm water. Add the water with the gelatin into the blended fruit and mix well. Pour the mixture into the pudding mold, small molds or glasses and let stand in the refrigerator for about 6/7 hours. Serve with vanilla ice-cream or if you like the idea with cream-cheese (you just have to mix some fresh and creamy cheese with a little bit of whipped cream, icing sugar and maybe some vanilla seeds). Decorate as you wish: we used cherries and mint and "littlemint" flowers. Serve as a fresh dessert, perfect for a Summer party. Of course you can try it with the fruit you prefer and create unexpected combinations that will impress your guests...enjoy!
P.S. Ifyou don't want to make two preparations we suggest you to buy the ice-cream in good ice-cream shops or to buy the Haagen-Dazs, for us one of the best on the market!

Ice-Coffee
Oggi abbiamo preparato l'ice-coffee, un dessert fresco (uno dei nostri preferiti), dal sapore delicato e dalla preparazione davvero facile e veloce. Consigliatissimo...sembra gelato!
Today we have prepared the ice-coffee, a fresh dessert (one of our favourite), with a delicate flavor and a so fast and easy preparation. We higly recommend it...seems ice-cream!
Ingredienti (x circa 8 tazzine)
250ml panna da montare
2 egg whites
110g zucchero
1 tazzina di caffè
Mettere in freezer tazzine da caffè o coppette da gelato, nel frattempo preparare il caffè (ne serve una tazzina) e lasciarlo raffreddare. Montare la panna (ben fredda) con metà dello zucchero e montare gli albumi a neve con un pizzico di sale e l'altra metà dello zucchero. Incorporare la panna agli albumi mescolando con una spatola dal basso verso l'alto. Aggiungere infine il caffè freddo a filo continuando a mescolare con la spatola dal basso verso l'alto (cercate di essere veloci ma delicati) finche sarà ben amalgamato e il composto avrà un colore omogeneo. Versate nelle tazzine o coppette ghiacciate e lasciate riposare in freezer per almeno 3 ore. E' un dessert fresco e cremoso come il gelato, perfetto come leggero fine pasto, magari servito proprio al momento del caffè (e mentre il caffè riposa ci si rinfresca il palato)oppure potete servirlo affogato con il caffè e una spruzzata di panna. Fatene in più...c'è sempre qualcuno che chiede il bis! Un consiglio: preparatelo per il weekend, sarà perfetto per gli ospiti inaspettati! Enjoy...
Ingredients (for about 8 coffeecups)
250ml whipping cream
2 egg whites
110g sugar
1 little cup of coffee
Place in freezer coffee cups or ice-cream bowls, meanwhile make coffee and let it cool (you need just one coffecup). Whip the cream (really cold) with half the sugar and whip the egg whites with a pinch of salt and the other half of sugar. Stir in the cream to egg whites, stirring gently with a spatula from bottom up. Then add the coffee little at time stirring constantly with the spatula from bottom up again (try to be quick but gentle) until well blended and the mixture has a uniform color. Pour into iced cups or ice-cream bowls and leave in the freezer at least 3 hours. It's a cool and creamy dessert such as ice-cream, perfect as a light end meal, maybe served at the coffee moment (and while coffee rest you refresh the palate!), you can also serve it smothered with coffee with a splash of cream. Make it a few more, there's Always someone asking for an encore! A tip: prepare it for the weekend, it will be perfect for unespected guests! Enjoy...

Cremoso allo Yogurt con salsa alle fragole / Creamy with Yogurt and strawberries sauce
Come promesso ecco la ricetta per il Cremoso allo Yogurt con salsa alle fragole, che vi suggeriamo perché davvero facile da fare (come sempre!), golosa, fresca e versatile...lo yogurt bianco permette di creare mille combinazioni di profumi e sapori, perciò se non amate le fragole sostituitele con uno o più frutti di stagione. Noi lo facciamo spesso!
As promised here is the recipe of the Creamy with Yogurt and strawberries sauce, that we suggest you because it's really easy to make (as Always!), tasty, fresh and versatile...the White yogurt allow you to create thousands combinations of scents and flavours, so if you don't fancy strawberries you can replace them with one or more fruit of the season. We make it often!
Ingredienti
Yogurt bianco intero 500g
panna da montare 250ml
4 fogli di gelatina (12g)
scorza di 1 limone
2 cucchiai di zucchero
2 cucchiai di zucchero a velo
latte intero 150ml
salsa alle fragole (ricetta)
Ammorbidire i fogli di gelatina in acqua fredda. Scaldare il latte, nel frattempo mescolare lo yogurt con lo zucchero e montare la panna con lo zucchero a velo. Strizzare i fogli di gelatina, scioglierli nel latte caldo e aggiungervi lo yogurt, la scorza di limone e infine la panna, amalgamandola poco alla volta mescolando con una spatola dal basso verso l'alto. Versare il composto nello stampo da budino, negli stampi monoporzione o nei bicchieri e lasciare riposare in frigorifero per almeno 4 ore. Servitelo con salsa alle fragole (o con la frutta che più preferite) e decorate a piacere, noi abbiamo scelto i fiori di basilico che hanno un profumo delicato che secondo noi sta bene con il sapore delle fragole.
E' un dolce fresco e molto cremoso perfetto per mille occasioni...provatelo e fateci sapere! Enjoy!
P.S. Potete farlo anche con uno yogurt alla frutta!
Ingredients
Whole White yogurt 500g
whipping cream 250ml
4 gelatin sheets (12g)
1 lemon zest
2 tablespoons sugar
2 tablespoons icing sugar
Whole milk 150ml
strawberries sauce (recipe)
Soften the gelatin sheets in cold water. Heat the milk, in the meantime mix yogurt with sugar and whip the cream with the icing sugar. Wring out the gelatin sheets, dissolve them in warm milk and add yogurt, lemon zest and finally the whipped cream, combining it little at a time with a spatula stirring from the bottom up. Pour the mixture into the pudding mould, in small molds or glasses and let stand in the refrigerator for at least 4 hours. Serve it with strawberries sauce (or with the fruit you prefer)and decorate as you like, we chose basil flowers that have a delicate flavours that for us goes well with the strawberries sauce. It's a sweet fresh and really creamy perfect fo thousands occasions...try it and let us know! Enjoy!
P.S. You can replace the White yogurt with fruity yogurt too!
